2 fat red chillies , plus extra for bottling
1l vodka

Steps:

  • Slice the chillies and mix with the vodka in a large bottle or jug. Leave for 4-5 hrs. Strain out the chillies and pour back into a bottle to store until needed. Just before giving away, decant into smaller glass bottles, pop a whole chilli in each and label.

  • Add 1 whole chili pepper to a bottle of vodka & let stand for a few days.
  • Blend cocktail ingredients thoroughly & pour into a Margarita glass rimmed with salt.
  • Garnish with a lime wheel.

After recently having my first taste of Midori I have been thinking of different ways to enjoy it and this was something I came up with tonight. I did see a few recipes for similar drinks, but none are quite like this one. Salt optional, but if you are a lover of salt like me I would go ahead and use it! And use as much or as little ice as you prefer to get your desired consistency. For me this is on the stronger side, but then again I am not a big drinker. Don't mind the silly name... my husband came up with it after a few of these lol.

2 ounces lime tequila (we used Jose Cuervo Lime)
2 ounces margarita mix
1 ounce coconut milk
ice
salt
lime juice (for rimming)

Steps:

  • Combine all but the salt and lime juice in a blender and blend to desired consistency.
  • Dip rim of glass in lime juice and then into salt.
  • ENJOY!

CHILI INFUSED VODKA

I saw a show on the food network where someone did coffee bean/orange infused vodka which turned out to be an amazing liqueur. After that I became addicted to infusing vodka. It's simple, tasty and easy to impress friends. I'd also say if you were to make these infused vodkas and give them as gifts you'd have a ton of new friends. Being a hot head, I made this chili infused vodka because it's vital for a good Caesar. In Canada we have Clamato, a tomato and clam juice, which when mixed with some vodka and hot sauce (and other ingredients of course) becomes like this spicy Bloody Mary. You can add whatever else you like; I find a little Worcestershire and salt with the Clamato works great.

750 ml vodka
3 -4 jalapenos
3 -4 red chilies
3 -4 green chilies
3 -4 habaneros (this is for the true hothead, adjust accordingly)
2 -3 tablespoons dried chipotle chiles (I buy them in flakes like red chili flakes which can be substituted if you can't find these)
1 lime
2 inches fresh horseradish, peeled
2 -3 tablespoons peppercorns

Steps:

  • Quarter all the fresh peppers and the horseradish. If you want to reduce the heat, seed and stem the peppers. You can really use any combination and quantity of peppers. I used the 4 of each and it produced a brilliant heat level with an amazing taste.
  • Take your lime and make about twenty slits in the peel all over the lime.
  • Put all the ingredients into a clean, sterilized wide mouthed jar. Using a wide mouthed jar (like a mason jar) just makes it easier to get everything in and out.
  • Put the vodka in a cool, dark place. Cover with a dish cloth if you like.
  • Every day, shake it.
  • Let the vodka sit at least one week then strain the vodka through cheesecloth and enjoy. I use 1 ½ oz of the vodka, about a tbsp of Worcestershire, a tsp of celery seeds, a little salt and top it off with Clamato (or tomato juice) for a nice fiery beverage.

I don't know who has all tried the Budweiser Lime-A-Rita's, but my step daughter drinks them. They are quite costly for those little- bitty cans. I was at the check-out line yesterday (grabbing beer for our trip to the cabin), and over heard the cashier describing a drink recipe that she tried that was posted on a bottle of tequila. I said "I have to try that", and when it was my turn at the counter, she already had it written down for me. So here it is. Please let me know if compares to the real thing. I made a batch as soon as I got home from the store. It was too sour for me, but hubby devoured it (and then went to sleep)! I can't wait to get DIL's (step daughter's) opinion when we get to the cabin this weekend and I make a batch. I hope you like them! Enjoy.

1 (12 ounce) can tequila (clear, but I only used 2/3 of the can)
1 (12 ounce) can water or 1 (12 ounce) can Sprite, for more bubbles
1 (12 ounce) bottle beer (I used Miller Lite)

Steps:

  • Dump the frozen Limeade into a medium sized pitcher with the can-fulls of the tequila and water (or sprite), stir, add the beer, stir again and serve! Easy peasy!
