FRIED VIDALIA ONION

1 Vidalia onion, skin removed
2 eggs
1 cup milk
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons cayenne pepper
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon ground cumin
Peanut oil, for frying
Creamy dill dipping sauce, recipe follows
3/4 cup buttermilk
1/4 cup mayonnaise
1 tablespoon freshly chopped dill leaves
1/2 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • Heat oil in a deep-fryer to 350 degrees F.
  • Whisk together the egg and the milk in a medium sized bowl.
  • In a separate bowl combine the flour, salt, peppers, oregano, thyme, and cumin.
  • Slice 1/2-an inch off the top of the onion and the bottom of the onion. Slice the onion in half, about 3/4-of the way down without slicing all the way through. Slice into quarters, then into 1/8s. Repeat this until you have cut the onion into 14 sections. Spread the "petals" of the onion apart and dip the onion in the milk mixture. Then coat it liberally with the dry ingredients. Separate the "petals" and sprinkle the dry coating between them.
  • Place the battered onion in the hot oil and fry until golden brown, about 10 minutes. Remove to a paper towel lined sheet tray and season with salt and pepper.
  • In a small bowl, combine ingredients and whisk together. Season with salt and pepper, to taste. Serve with Fried Vidalia Onion.

VIDALIA ONION RINGS WITH BEER MUSTARD

"I coat my onion rings in a tempura-style batter and fry them until they're golden and crunchy."

2 large Vidalia onions
2 cups buttermilk
3 cups all-purpose flour
1 cup rice flour
2 cups seltzer
1 12-ounce bottle beer
1 teaspoon honey
Kosher salt
Vegetable oil, for deep-frying
Chopped parsley and flaky salt, for topping

For the beer mustard:
1 cup aioli or good-quality store-bought mayonnaise
1/2 cup dijon mustard
2 tablespoons agave syrup
1 teaspoon ground cinnamon
1/2 teaspoon beer-extract powder (available at home-brew suppliers and some spice shops)
Pinch of cayenne pepper

Steps:

  • Slice the onions.
  • Cut each onion crosswise into 1/4-inch-thick slices. Separate the slices into individual rings; remove the 4 small center rings from each slice and reserve them for another use.
  • Soak the onions.
  • Put the separated onion rings into a large baking dish or shallow bowl and cover them with the buttermilk.
  • Make the beer mustard.
  • In a small bowl, whisk the aioli, dijon mustard, agave syrup, cinnamon, beer-extract powder and cayenne until combined. Set aside.
  • Make the batter.
  • In a large bowl, whisk 1 cup all-purpose flour, the rice flour, seltzer, beer and honey until smooth. Put the remaining 2 cups all-purpose flour in a separate large bowl or shallow pan and season it generously with kosher salt.
  • Fry the onion rings.
  • Fill a large heavy pot with at least 3 inches of vegetable oil. Attach a deep-fry thermometer to the side of the pot and heat the oil over medium-high heat to 350 degrees F.
  • Working in batches, lift the onion rings from the buttermilk and shake off the excess. Transfer them to the flour mixture and toss until coated, then dip one by one into the beer batter, shaking off the excess, and add to the hot oil.
  • Fry, turning the onions often with tongs, until golden brown, 3 to 4 minutes; adjust the heat as necessary to maintain the oil temperature.
  • Drain and serve.
  • Drain the onion rings on paper towels and sprinkle with parsley and flaky salt while still warm. Serve with the beer mustard.

The addition of cayenne pepper in this recipe makes these onion rings a little spicier than traditional ones. If you don't like spicy foods, eliminate the cayenne. Vidalia onions are the best, but you can also try other brands. Just as long as they say "sweet" on them. I wouldn't suggest just using any other kinds like yellow...

2/3 c water
1 Tbsp vegetable oil
1 tsp lemon juice
1 c all purpose flour
1 1/2 tsp baking powder

oil for deep-fat frying

Steps:

  • 1. Cut onions into 1/2" slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes.
  • 2. In a bowl, beat egg, water, oil and lemon juice. Combine flour, baking powder, salt and cayenne; stir into egg mixture until smooth.
  • 3. Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1" of oil to 375 degrees. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels.

Vegetable oil, for frying
1/2 cup cornstarch
2 teaspoons paprika
1 teaspoon cayenne
1 teaspoon finely grated lime zest
Kosher salt
1 1/2 cups milk
1 cup club soda
1 large egg

Steps:

  • Preheat the oven to 200 degrees F. Set a cooling rack over a baking sheet.
  • Separate the onions into rings and put in a large bowl. Toss with 1/2 cup of the flour. Arrange the floured rings on the cooling rack; let stand for 15 minutes.
  • Fill a large, wide pot with 2 inches of vegetable oil and heat to 365 degrees F over medium-high heat. In a large bowl, whisk the remaining 2 cups flour with the cornstarch, paprika, cayenne, lime zest and 1 1/2 teaspoons kosher salt. Add the milk, club soda and egg and whisk to combine.
  • Working in 3 or 4 batches, add a small amount of the onions to the batter and then immediately place into the hot oil. Fry until crisp and golden, turning once, 2 to 3 minutes. Allow the oil to come back to temperature between batches.
  • Season the onion rings with salt. Serve immediately with your condiment of choice, or transfer to a cooling rack and keep warm in the oven until ready to eat.

LEONARD'S BARBEQUE ONION RING BATTER

2 tablespoons onion powder
2 tablespoons salt
1 tablespoon sugar
2 heaping tablespoons white self-rising corn meal
1 egg
5 cups 2 percent milk
8 cups plain all-purpose flour
1 1/2 cups water
1 1/2 teaspoons yellow food color
4 jumbo yellow onions
Vegetable oil, for frying

Steps:

  • Using a large mixing bowl, mix all ingredients until no lumps remain. Use jumbo yellow onion rings and slice about 3/4-inch thick.
  • Coat the onion rings evenly in batter and deep fry at 350 degrees F in vegetable oil just until batter sticks to the rings. Remove the rings from the vegetable oil and drain well, then refrigerate the rings for 2 to 4 hours. You can keep refrigerated for 1 to 2 days loosely covered.
  • When ready to serve, drop the onion rings into 350 degrees F vegetable oil until golden brown.

DEEP-FRIED ONION RINGS

1 1/2 teaspoon baking soda

6 medium-large sweet onions, about 1/2 each (such as Vidalia, Walla Walla, Maui, Texas Sweet)
Oil, for deep-frying
4 cups flour

Steps:

  • In a large bowl combine buttermilk and baking soda; season well with salt and pepper. Peel onions and slice thinly, no thicker than 1/4-inch; a mandoline works well. Add to buttermilk mixture and stir well to submerge all onions. Set aside, unrefrigerated, for 2 hours.
  • In a deep-fryer or heavy, deep pot, heat at least 1 quart oil to 375 degrees F. Working in batches, place about 1/6 of flour in a large bowl. With your hands, remove about 1/6 of onions from buttermilk. Don't let the liquid run off. Add to flour and mix vigorously with your hands until onions are well-coated. Separate them by hand and lay them in a deep-fry basket. Lower into hot oil, maintaining temperature. Stir every 2 minutes. When onions are golden brown and crisp, about 6 minutes, drain on paper towels and sprinkle with salt. Keep warm in a 200 degree F oven while you finish the rest.
