5 ounces rice noodles
1/2 cup lime juice
1/4 cup sugar
2 tablespoons fish sauce
1/2 teaspoon chili paste
1 pound small shrimp, peeled and deveined
1/2 cup loosely packed cilantro leaves

Steps:

  • Prepare rice noodles according to package instructions.
  • Combine the lime juice, sugar, fish sauce and chili paste to make the Thai shrimp sauce. Pour Thai shrimp sauce into a 10-inch non-stick pan. Turn heat to medium high and bring to a boil. Add the shrimp, and reduce heat to medium low. Cook until shrimp is tender, about 3 to 4 minutes. Add cilantro to sauce. Taste and adjust seasonings, pour over noodles.

2/3 cup rice wine vinegar
1/2 cup tightly packed fresh mint leaves, chopped
1/3 cup (generous) low-fat milk
6 large garlic cloves, chopped
3 tablespoons minced lemongrass* or 1 1/2 teaspoons minced lime peel (green part only)
2 tablespoons honey
2 teaspoons fish sauce (nuoc mam, nam pla)*
2 teaspoons low-sodium soy sauce
1 teaspoon dried crushed red pepper
1/2 teaspoon imitation coconut extract
2 pounds uncooked medium to large shrimp, peeled, deveined
*Lemongrass, nuoc mam, and nam pla are available at Southeast Asian markets and specialty foods stores.

Steps:

  • Combine first 10 ingredients in large bowl. (Can be prepared up to 1 day ahead. Cover and refrigerate.)
  • Bring pot of water to boil. Add shrimp and cook 2 minutes until opaque. Drain. Refresh under cold water and drain. Add shrimp to sauce mixture and let stand 45 minutes. Chill in refrigerator 1 hour.(Can be prepared up to 4 hours ahead. Cover.)
  • Transfer shrimp to platter. Pour sauce into decorative bowl; place sauce in center of platter and serve.

2 tablespoons olive oil
4 large garlic cloves, minced
1 lemon, juice of
1/4 cup dry white wine
fresh parsley, chopped
salt and pepper

Steps:

  • Heat the butter and oil in a large skillet over medium-high heat.
  • Add the shrimp and saute until they begin to turn pink, tossing several times.
  • Add the garlic and saute an additional minute.
  • Add the lemon juice and white wine and reduce for one minute, then add the salt, pepper and parsley to taste.

3 garlic cloves, minced
2 teaspoons red curry paste
1 (14 ounce) can light coconut milk
1/2 cup low sodium chicken broth
2 tablespoons chili-garlic sauce
1 lb large shrimp, peeled and deveined
1/4 cup fresh cilantro leaves
2 tablespoons lime zest
3 tablespoons lime juice

Steps:

  • 1. Heat oil in large skillet over medium-high heat until shimmering. Add garlic and red curry paste and cook, about 30 seconds. Whisk in coconut milk, broth, and chili-garlic sauce and cook until slightly thickened, about 15 minutes. Reduce heat to medium, add shrimp, and simmer, covered, until shrimp are just cooked through, about 3 minutes. Off heat, stir in cilantro, lime zest, and lime juice.
  • 2. Toss sauce with cooked noodles. Serve.
