THAI RIBEYE PORK CHOPS



Thai Ribeye Pork Chops image

A quick marinade of soy sauce, cilantro, garlic, brown sugar, and lime juice gives pork chops a tropical makeover. Serve this satisfying main dish with a simple peanut stir-fry. Recipe courtesy of the National Pork Board.

Number Of Ingredients 7

4 boneless ribeye (rib) pork chops, ¾ to 1 inch thick
¼ cup soy sauce
¼ cup cilantro, chopped or 1 tablespoon dried cilantro
3 cloves garlic, crushed (about 3 tablespoons)
3 tablespoon brown sugar
1 tablespoon vegetable oil
juice of 1 lime

Steps:

  • Whisk together the soy sauce, cilantro, garlic, brown sugar, vegetable oil, and lime juice in a bowl.
  • In a large baking dish, arrange the ribeye pork chops in an even layer. Pour the marinade over the pork chops, reserving about 1/4 cup of the marinade in the refrigerator for later use.
  • Marinate the pork chops for 20 to 30 minutes.
  • Heat an indoor grill pan or outdoor grill to medium-high heat. Remove pork chops from the marinade, discarding the excess marinade. Place pork chops on the hot grill for 4 minutes on each side, flipping once until the internal temperature of the pork measures between 145 degrees F. (medium rare) and 160 degrees F. (medium) on a meat thermometer.
  • Transfer the grilled pork chops to a cutting board and let rest for 3 minutes before slicing against the grain.
  • Pour the reserved marinade over the sliced pork before serving.

Another recipe from Cooking Pleasures that I am putting here for safe keeping. Serve these with some jasmine rice and green beans for a lovely meal. Feel free to adjust the amount of jalapenos you use ot suit your taste.

1 tablespoon vegetable oil
4 center-cut pork rib chops, 1/2-inch thick
2 jalapeno peppers, seeded and chopped
2 garlic cloves, minced
1/4 cup fish sauce
4 teaspoons sugar
1/4 cup fresh cilantro, chopped
1/4 cup dry roasted peanuts, chopped

Steps:

  • Heat the oil in a large nonstick skillet over medium high heat until hot.
  • Add the pork chops and cook for 10 min, turning once or until it is no longer pink in the center.
  • Remove to a plate and cover with foil while you prepare the sauce.
  • Reduce the heat to medium and add the jalapeno peppers and garlic to the skillet. If you need to add a little more oil to the skillet, do so now.
  • Cook for 1-2 min or until softened, stirring occasionally.
  • Stir in the fish sauce and sugar.
  • Bring to a boil and boil for 1 minute.
  • Pour the sauce over the pork chops and sprinkle with the chopped cilantro and peanuts.

Trouble thinking of a name for this one. Can use JD, brandy, cognac or similar strong spirits. Works with lamb, beef, or chicken as well as pork. Very simple and very tasty.

2 tablespoons Jack Daniels Whiskey
2 tablespoons peanut oil
2 tablespoons oyster sauce
1 -2 tablespoon minced garlic
1 tablespoon soy sauce
1 tablespoon water
1/2 teaspoon black pepper
4 boneless pork chops (approx 1/2 pound each)

Steps:

  • Combine marinade ingredients.
  • Marinate meat at least 2 hours, or up to overnight in the refrigerator. Marinating in a ziploc bag with most of the air squeezed out works great to maximize contact between meat and marinade.
  • Pan fry or BBQ as you like.
  • If pan fried, can deglaze pan with a bit of water and/or white wine to have a very nice sauce.

3 tablespoons soy sauce
2 tablespoons cornstarch
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon black pepper
1 1/2 lbs boneless thin cut pork chops
1 lb thin spaghetti or 1 lb asian rice noodles
1/2 cup sliced green onion
2 tablespoons sesame oil
1/2 teaspoon salt
1 teaspoon crushed red pepper flakes
2 tablespoons peanut oil
1 cup snow peas, cleaned and sliced in half
1 cup shredded carrot

Steps:

  • In small bowl, whisk together soy sauce, cornstarch, sugar, salt and pepper.
  • Place in plastic bag and add pork.
  • Seal and turn to coat.
  • Chill for 1 hour, or up to overnight.
  • Cook noodles according to package directions.
  • Drain well and toss with onions, sesame oil, salt and pepper flakes.
  • Meanwhile, heat skillet over medium high heat, add peanut oil, snow peas and carrots, cook, tossing frequently, about 5 minutes until crisp tender and set aside.
  • Add one more tablespoon oil and sear pork chops, about 2 to 3 minutes per side, or until done.
  • Add vegetables back to pot and toss to coat.
  • Serve over noodles.

¼ cup all-purpose flour
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
½ teaspoon salt
2 tablespoons vegetable oil
4 boneless pork chops, about 3/4-inch thick
⅓ cup chicken broth
½ cup coconut milk
2 tablespoons peanut butter
1 tablespoon honey
1 teaspoon ground ginger
¼ teaspoon salt
¼ cup chopped green onion
¼ cup sliced red bell pepper
¼ cup coarsely chopped dry roasted peanuts
¼ cup chopped fresh cilantro

Steps:

  • On a plate, combine the flour, cumin, cayenne pepper and 1/2 teaspoon of salt. Stir to distribute the spices. Coat the pork chops with the flour mixture, and shake off any excess.
  • Heat the oil in a large skillet over medium-high heat. Place the pork chops in the hot skillet, and fry for about 4 minutes per side, until cooked through.
  • While the pork chops cook, stir together the chicken broth, coconut milk, peanut butter, honey, ginger and 1/4 teaspoon of salt. Remove the pork chops to a serving platter, and keep warm.
  • Pour the peanut sauce into the skillet. Cook, stirring constantly for 2 minutes, or until thickened. Pour peanut sauce over the chops, and garnish with green onion, bell pepper, peanuts and cilantro.
