This is one of my favorite recipes. I have it every time I go to a Thai restaurant topped with coconut ice cream or drizzled with honey. If you have never tried it, now is the time, it's so good! I use Nam, a variety of banana which can be found at most Asian Markets. You can also use sweet potatoes in this recipe.

3/4 cup rice flour
1/4 cup tapioca flour
2 tablespoons white sugar
1 teaspoon salt
1/2 cup shredded coconut
1 1/4 cups water
10 bananas
3 cups oil (for frying)

Steps:

  • In a medium bowl, mix rice flour, tapioca, sugar, salt and coconut. Stir in water, a little at a time, and mix to form a thick batter.
  • Peel the bananas and cut each lengthwise into 3 or 4 pieces. Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
  • Completely coat each banana slice in batter, then fry in hot oil until golden. Drain on paper towels. Serve at once.
  • Serve with Coconut Ice Cream (vanilla ice cream with honey will do if coconut ice cream is not available).

2 tablespoons butter
4 firm bananas, peeled and cut into 1- to 2-inch pieces
¼ cup brown sugar
½ teaspoon ground cinnamon
1 lime, juiced
1 teaspoon black sesame seeds

Steps:

  • Melt butter in a wok over high heat. Add bananas, brown sugar, and cinnamon; saute until bananas are golden brown and sugar is bubbling, about 5 minutes. Stir in sesame seeds and lime juice.

Easy Thai Fried Bananas image

Fried bananas are a popular snack food or dessert in Thailand. They are often made with a batter, but this is a quick and easy batterless method! Yummy as a dessert with ice cream and chocolate syrup, or plain as a snack anytime!

4 bananas
8 spring roll wrappers
vegetable oil

Steps:

  • Cut each banana in half crosswise. Lay the banana in the center of the spring roll wrapper, with the wrapper set diagonally. Fold in the two points of the wrapper on the ends of the banana, and then fold up one side and tuck it over and under the banana, then roll until the wrapper is snugly around the banana. Secure the end by dipping your finger in a little water and wetting the ends of the wrapper to "glue" them shut.
  • Put about 1 inch of vegetable oil into a frying pan, and heat until it is hot enough to make the banana sizzle when it is placed into the oil. Reduce the heat to medium high and fry, turning until all sides are golden brown. Remove from the oil and drain on paper towels. Serve while they are hot and crunchy!

1 lb banana, about 6 (Traditionally small Asian bananas are used)
1 cup rice flour
1 cup all-purpose flour
1 teaspoon baking soda
1 cup water
1/2 cup coconut milk
1/2 teaspoon salt
1/4 cup sesame seeds
3 tablespoons sugar
3/4 cup shredded coconut
4 cups oil (for deep frying)

Steps:

  • Peel and slice each banana lengthwise into four slices.
  • Combine all the batter ingredients and stir just to mix together.
  • Heat the oil in a wok to 375ºF.
  • Dip each piece of banana into the batter and deep fry until golden brown.
  • Remove from oil and drain.
  • Serve with Coconut ice cream.

These bananas are sold from street stalls and floating markets in Thailand. You can enjoy the banana pieces either hot or at room temperature as is, or by dipping them into golden or maple syrup. The recipe, found on Luxury Thailand Travel, is slightly modified.

5 large bananas (not overly ripe)
2 cups self-rising flour
1/2 cup rice flour
2 cups water
1 teaspoon salt
1 tablespoon roasted sesame seeds (0ptional)
vegetable oil (for deep frying)

Steps:

  • Peel the bananas and cut the very end off both sides then cut the banana in half and then again lengthwise.
  • Sift the self-rising flour, the rice flour and salt into a bowl. Add enough water to make a smooth batter then mix in the roasted sesame seeds.
  • Heat vegetable oil in a wok or deep fryer to 375 degrees Fahrenheit. Dip each banana piece into the batter until fully coated then fry a few pieces at a time until crisp and golden. Remove the banana pieces with a large slotted spoon or a wire basket and drain on some paper towels.
  • You can enjoy the banana pieces either hot or at room temperature as is, or by dipping them into golden or maple syrup.

  • If using plantains, peel and cut them crosswise into 3 equal sections, then slice each section horizontally into 4 pieces. If using namwa bananas, peel and cut lengthwise into ¼-inch thick pieces.
  • Add about 1½ inches of oil to a pot and heat to about 325℉ (160℃). Dip the bananas into the batter and fry for about 5 minutes, until they are a deep brown colour. Maintain the frying temperature below 350℉ (175℃). When done, let drain on paper towel or a rack. Note: Based on your first batch, you can decide if you want a thicker or thinner coating by adding more flour or water.
