Sticky Rice with Coconut Milk and Mango image

This recipe will allow you to create a decadent Thai desert. This is an easy and clear recipe. The steamed sweet sticky rice soaked in coconut milk and topped with sliced mango will be sure to please family and guests alike.

1 cup sweet (glutinous) rice
1 cup coconut milk
2 tablespoons white sugar
⅛ teaspoon salt
1 ripe mango - peeled, seeded, and sliced

Steps:

  • Rinse sweet rice until water runs clear. Soak rice in warm water, 2 to 4 hours. Drain.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Line the steamer with cheese cloth and spoon rice into cheese cloth; steam until thoroughly cooked, about 20 minutes. Remove steamer from heat and transfer rice to a bowl.
  • Mix coconut milk, sugar, and salt together in a saucepan; bring to a simmer. Pour 3/4 of the coconut milk mixture over rice; cover bowl and let sit for 5 minutes.
  • Pour remaining coconut milk mixture over rice and top with mango slices.

This is my favorite Thai dessert. There is something very comforting about it. I also like to eat it for breakfast.

1 tablespoon grapeseed oil
1 ½ cups sweet rice
2 cups coconut milk
¼ cup water
2 tablespoons palm sugar, or more to taste
1 pinch salt
½ cup unsweetened coconut cream
2 mangoes - peeled, seeded, and diced

Steps:

  • Heat oil in a saucepan over medium heat; gently cook and stir rice in the hot oil until toasted, 2 to 3 minutes. Add coconut milk, water, sugar, and salt; bring to a boil. Reduce heat, cover saucepan, and simmer until rice is tender and has absorbed all the liquid, 20 to 25 minutes. Stir coconut cream into rice.
  • Scoop rice into a serving bowl and top with mango.

I was trying to match a dessert sold at a local Thai restaurant; this is pretty close, but not exact. The real thing uses glutinous rice, but since that is not available in most of the U.S., this can be a variation for people without it.

1/2 cup jasmine rice or 1/2 cup other sweet asian rice
1 (14 ounce) can coconut milk (you can use the light kind if you want, it just makes it a little less rich)
1/2 cup sugar
1 mango, sliced

Steps:

  • Rice: Cook rice according to package directions, but substitute coconut milk for half of the water, and add half the sugar.
  • It should be fairly dry when you finish cooking it, without any liquid visible in the pot.
  • Sauce: In a medium saucepan, boil the rest of the coconut milk with the second half of the sugar.
  • Keep this at a full boil until the rice is cooked, or until it reaches a thick, syrupy consistency.
  • Presentation: Arrange the cooked coconut rice in a bowl or plate with the mango slices in some kind of pretty formation and dribble a bit of the sauce over the whole thing.

an easy-to-make-at-home spin on the classic Thai desert: sticky rice with mangoes. However, we recreate the delicately sweet coconutty taste by using jasmine rice, available everywhere, instead of hard-to-find "sticky rice". Sprinkle with Piquant Post Kaffir Lime powder for authentic pizzazz!

1 1/2 cups jasmine rice
1 (14 1/2 ounce) can coconut milk (light coconut milk okay)
1 cup water
1/4 cup sugar
1 large ripe mango, sliced into wedges
1/2 teaspoon salt (optional)
1 teaspoon kaffir lime leaf spices
1 handful mint (to garnish) (optional)

Steps:

  • Rinse the rice in a mesh strainer under cold water. You can also rinse in the pot, carefully pouring out the water, using the lid to keep rice from falling out.
  • Place the rice in a medium pot with coconut milk, water, sugar, and salt. Heat the pot on Med-High heat. As soon as you see the first bubbles of a boil, lower the heat to Low and cover. Simmer for 20 minutes.
  • While the rice is cooking, peel the mango and slice into 1/2 inch wedges or cubes. Set aside.
  • After 20 mins, pull the rice off the stove and let stand covered for ~10 minutes Sprinkle with Piquant Post Kaffir Lime Powder then fluff rice with a fork. Scoop rice to a plate and top with mangoes and a sprig of mint.

  • Place the rice in a sieve and rinse it several times with cold water until the water runs clear. Transfer the rice to a bowl and fill it with cold water. Cover it with a towel and allow the rice to soak overnight.
  • Drain the rice in a sieve then place the sieve atop a large pot of shallow, simmering water. (The sieve should not touch the water.) Place a towel over the sieve and then cover the pot with a lid and steam the rice for 60 to 70 minutes until it's cooked through. (Error on the side of overcooking the rice.) Add more water to the pot as needed.
  • While the rice is cooking, in a small saucepan set over medium heat combine 1 cup of coconut milk with 1/3 cup sugar and the salt. Bring the mixture to a boil, stirring until the sugar is dissolved. Remove the pan from the heat and cover it with foil to keep it warm.
  • Transfer the cooked rice to a large bowl and stir in the coconut milk mixture. Cover the bowl and let the rice stand for 30 minutes until it has absorbed all of the liquid. (The rice can be prepared up to this point 2 hours in advance and kept covered at room temperature.)

  • Cook the rice with the water, according to the package directions. We have used both kinds of rice and the Jasmine rice works just as well. (It is also much easier to find in grocery stores, if you aren't headed to an Asian market. The glutinous rice goes by several different names, sweet rice, pearl rice, sticky rice.)
  • I typically add the rice and water to the pot, cover with a lid and bring to a boil over high heat. As soon as it boils, stir, reduce the heat to low and cover again. Set a timer and allow it to cook undisturbed for 20 minutes. Remove from the heat, stir and fluff the rice. (You can also use a rice maker and add the fruit and milk mixture directly into the pot with the finished rice.)
  • While the rice is cooking, combine the milk, sugar and salt in a small saucepan. Whisk to combine and them bring to a slow simmer over medium heat. Let it cook about 10 minutes, stirring occasionally. Remove from the heat when it is done. While the rice is still cooking and the milk is finishing, prepare your mangoes. Add the mangoes to the milk when they are ready.
  • Once the rice has finished cooking, pour in the coconut milk and the mangoes and stir to combine. Scoop into serving dishes and sprinkle with sesame seeds. Enjoy!
