1 salmon fillet
2 cm piece fresh ginger, peeled
2 kaffir lime leaves
1 stick lemongrass
1/2 garlic clove, chopped finely
1/2 large red chili, seeded, sliced
fresh coriander, chopped
1 tablespoon grated palm sugar
1 tablespoon limes or 1 tablespoon lemon juice
splash light soy sauce
splash fish sauce

Steps:

  • Remove the skin from the salmon if desired. Remove the pin bones in the salmon with tweezers.
  • Preheat barbecue or preheat oven to 220°C/200°C fan-forced.
  • Slice ginger thinly then cut into long thin strips. Remove the centre rib from the lime leaves; shred the leaves finely. Cut about 6cm from the end of the lemon grass stalk - you will only need the tender white section. Discard tough outer layer and green top section. Split lemon grass in half, remove the v-shaped centre. Chop the lemon grass finely.
  • Place the salmon on a sheet of lightly greased foil on an oven tray; top with all ingredients. Fold up foil to enclose salmon and form a parcel. Barbecue (or cook in oven) for about 8 minutes or until done as desired. Salmon is best served rare in the centre.
  • Serve with steamed rice, Chinese broccoli and lime wedges, if desired.

12 ounces wild salmon fillets, cut in two (King or Sockeye)
2 tablespoons honey
1 -2 tablespoon Thai red curry paste
1/4 cup plain yogurt
1/4 cup sour cream
1 teaspoon lemon juice
2 tablespoons of fresh mint (chopped)
1/2 cup yellow pepper, cubed
1/2 cup orange bell pepper, cubed
1/2 cup shiitake mushroom
2 shallots, peeled and quartered
1/2 cup green beans
2 garlic cloves, minced
3 tablespoons olive oil
salt and pepper
1/2 lime
4 cashews

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl, mix the honey and Thai curry paste.
  • Lightly oil the fillets and then brush on a light coating of the curry mixture.
  • WARNING: Some Thai curry paste is very hot so taste before you baste.
  • Place fillets on a baking sheet lined with parchment paper and set aside while you prepare the vegetable stir-fry and sauce for the salmon.
  • Wash and chop vegetables in bite-sized pieces. Put 1 tbsp of oil in a large frying pan.
  • Whisk the yogurt, sour cream, lemon juice and chopped mint together in a small bowl.
  • Pop the salmon in the oven for 10 minutes; preheat the frying pan on high and begin stir-frying the veggies at about the 5-minute mark.
  • Add the garlic as the vegetables are just arriving at that tender-crisp stage, so that it won't brown and turn bitter. Finish the vegetables with a squeeze of fresh lime and salt and pepper to taste. Cover them to keep hot while you garnish the salmon.
  • Lift the salmon from the parchment paper, leaving the skin behind, and place it on the dinner plate. Pour a little of the sauce artistically over one end of the salmon, garnish with a couple of cashews and a mint sprig.
  • Arrange the vegetables attractively around the salmon and serve!

1 tablespoon chopped garlic
2 -3 tablespoons chopped cilantro
2 tablespoons fish sauce
1 tablespoon low sodium soy sauce
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1 1/2 lbs salmon fillets

Steps:

  • Preheat oven to 400.
  • In a small bowl, mix all ingredients except fish.
  • Place fish in a shallow pan. Spoon marinade over fillets.
  • Marinade for at least an hour.
  • Bake 15 minutes or done to your liking (can turn fish over halfway through cooking).
