TEXAS LAND AND CATTLE-STYLE STUFFED JALAPENOS
The original version of this recipe is on the menu at Texas Land and Cattle Co. as a yummy, deep-fried appetizer. I have cut the fat in these by using cooking spray, but fortunately, it didn't cut the flavor. Be warned, they are time consuming to make, but oh, so worth it!

- PREPARATION: Preheat oven to 425 degrees. Wearing gloves, slice peppers in half horizontally,completely remove seeds and ribs; set aside. Combine the cheese and the crumbled bacon in a small bowl; set aside. Put the Panko in a low-sided dish. Coat a cookie sheet (preferably stoneware) with cooking spray.
- ASSEMBLY: In assembly-line style, arrange the peppers, cheese & bacon mixture and Panko. Spray the inside of each pepper, then stuff with about a tablespoon of the cheese mixture, then lightly spray the entire jalapeno again. Place in the Panko, press lightly to help crumbs adhere. Place on cookie sheet. Combine any leftover cheese mixture with leftover Panko and sprinkle over peppers on the cookie sheet. Spray lightly with cooking spray. Bake for 25 to 30 minutes, or until golden brown.

TEXAS-STYLE STUFFED JALAPENOS
Jalapenos are stuffed with a cream cheese and cheddar mixture, topped with some meaty bacon, and baked until the bacon is crisp and the cheese is bubbly.

- Preheat the oven to 450 degrees F. Slice the jalapenos in half lengthwise. Carefully scoop out the ribs and seeds (be sure to wear gloves while handling hot peppers). Set the jalapenos aside on a baking sheet with sides, cut sides up. In a large bowl, combine the cream cheese, shredded Cheddar, garlic powder, and salt until well mixed. Using a small spoon, stuff a generous amount of the cheese mixture into the jalapeno halves. You want them well stuffed but not overflowing too much or the cheese will run out when it melts. Wrap a half bacon slice around each jalapeno and secure it with a toothpick or place it on top to cover the cheese. Place the baking sheet in the oven and bake at 450 degrees F for 15-20 minutes or until the bacon is crisp and brown and the cheese is melted. Remove the jalapenos from the oven and let cool slightly before serving.

STUFFED JALAPEñOS
As a game-day snack, they cannot be beat. Stuffed jalapeños, filled with Cheddar and cream cheese and run through with cilantro, are roasted to sweet intensity in the oven and finished under the broiler or in the dying light of a grill's fire. - Preheat oven to 375. In a small bowl, combine the grated Cheddar cheese with the cream cheese and sour cream, and use a fork to mash and combine. Add the cilantro, salt and pepper, and mix again to combine. Spoon the mixture into a quart-size plastic freezer bag, and set aside.
- Wearing disposable latex gloves (or at any rate being very careful not to get the interiors of the jalapeños on your skin or in your eyes or nose), use a knife to split the peppers down the center, and dispose of the seeds and ribs. Rub lightly with oil, and place on a roasting pan.
- Cut a half-inch triangle from one corner of the bag with the cheese in it, and pipe the mixture into each of the jalapeños. Gently press the cheese mixture into the peppers. Roast until the peppers have softened and the cheese has just started to bubble, approximately 15 minutes. Finish over the grill, if you like.

- 1. Preheat oven to 350 or Grill on top shelf
- 2. In fry pan brown hamburger breaking up, add brick of cream cheese, stir to melt add shredded cheese stir until melted. Salt and pepper to taste. Turn off heat and let sit.
- 3. Cut Jalapenos in half lengthwise, remove seeds.
- 4. Fill jalapenos with meat mixture.
- 5. Place on top shelf of grill for about 10 to 15 minutes until jalpenos are done. Keeping an eye so they don't burn. OR place in center of oven fo 10-15 minutes until Jalapenos are done.
STUFFED JALAPENOS
These stuffed jalapenos make a great party appetizer. The recipe can easily be doubled for a crowd.

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. - Slice peppers lengthwise, remove seeds and core; fill with cheese.
- Roll out sausage with rolling pin, between two layers of plastic wrap. Remove plastic from sausage, and wrap a thin coating of sausage around each jalapeno.

- Preheat oven to 350 degrees.
- Wash and dry jalapenos.
- Trim the top of each jalapeno and dig out seeds. Discard seeds and tops.
- Mix together cream cheese and garlic powder.
- Fill each jalapeno with cream cheese. (I use a piping bag.).
- Mix together bisquick, sausage, and cheddar cheese.
- Cover each jalapeno with a small portion of the sausage mixture. Making sure the pepper is completely covered and there are no cracks.
- Dip each jalapeno in the beaten egg and then roll in the shake n' bake.
- Place on a lined cookie sheet (make sure you use one with an edge) and bake for 30 minutes or until golden brown.
- * The amount of jalapenos you use is relevent to the size of your jalapenos. The bigger the jalapeno the less this recipe will make.
- * The bigger jalapenos seem to be tougher overall when eating than the smaller ones.
