Lemon Pie Bars image

This is a really easy recipe that my mom made before the lemon bar 'rage' was on! Thick-skinned lemons work the best. I suggest using real butter and eggs, I've tried using eggbeaters--nowhere near as good!

Number Of Ingredients 7

2 ¼ cups all-purpose flour
½ cup confectioners' sugar
1 cup butter, softened
4 eggs
1 ½ cups white sugar
½ cup lemon juice
1 tablespoon lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 2 cups of flour and confectioner's sugar together. Cut in the butter or margarine. Mix well until the dough resembles pie dough consistency. Press the dough into a 9x13 inch baking pan.
  • Bake 15 to 20 minutes or until golden brown.
  • Beat together eggs, sugar, 4 tablespoons flour, lemon juice and lemon rind for at least 1 minute. Pour the mixture over the baked crust.
  • Bake the bars another 20 minutes, or until the lemon topping has set. Sprinkle with confectioner's sugar when cooled.

I found this recipe in an allrecipes.com magazine and made it for "Teacher Appreciation Week." I cut them into 40 pieces, and the pan was virtually licked clean by the end of the day!

2 1/4 c flour
1/2 c confectioners' sugar

1/2 c lemon juice, fresh squeezed, if possible
1 1/2 Tbsp lemon zest, grated
extra confectioners' sugar to sprinkle on top

Steps:

  • 1. Preheat oven to 350 degrees.

6 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon salt
2 cups cold butter, cubed
FILLING:
8 large eggs
3 cups sugar
3 cups corn syrup
1/2 cup butter, melted
3 teaspoons vanilla extract
5 cups chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until crumbly. Press onto the bottom and up the sides of two greased 15x10x1-in. baking pans. Bake at 350° for 18-22 minutes or until crust edges are beginning to brown and bottom is set., For filling, combine the eggs, sugar, corn syrup, butter and vanilla in a large bowl. Stir in pecans. Pour over crust. , Bake 25-30 minutes longer or until edges are firm and center is almost set. Cool on wire racks. Cut into bars. Refrigerate until serving.
