Another delicious recipe my mother makes and I finally got the recipe for. Tender chicken thighs and tangy sauce are perfect served over rice. Adults and kids alike will love this! Enjoy!

1 cup ketchup
½ cup water
⅓ cup apple cider vinegar
¼ cup butter, melted
1 onion, chopped
1 tablespoon paprika
1 tablespoon white sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
1 teaspoon salt
½ teaspoon ground black pepper
1 dash steak sauce (such as A.1.®)
3 pounds skinless chicken thighs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Whisk ketchup, water, vinegar, butter, onion, paprika, sugar, Worcestershire sauce, mustard, salt, pepper, and steak sauce together in a saucepan. Bring to a simmer; cook 5 minutes, stirring occasionally, for flavors to blend.
  • Spread chicken thighs in a single layer in a baking dish. Pour sauce over chicken thighs.
  • Bake chicken in the preheated oven until thighs are cooked through and sauce is bubbling, about 2 hours. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 165 degrees F (74 degrees C).

1 pound baby carrots
1 medium green pepper, cut into 1/2-inch strips
1 medium onion, cut into wedges
6 boneless skinless chicken breast halves (4 ounces each)
1 can (20 ounces) pineapple chunks
1/3 cup packed brown sugar
1 tablespoon soy sauce
2 teaspoons chicken bouillon granules
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
3 tablespoons cornstarch
1/4 cup cold water
Hot cooked rice

Steps:

  • In a 5-qt. slow cooker, layer the carrots, green pepper and onion. Top with chicken. Drain pineapple, reserving juice. Place pineapple over chicken. Add the brown sugar, soy sauce, bouillon, salt, ginger and garlic powder to pineapple juice; pour over pineapple. Cover and cook on low for 8-9 hours or until chicken is tender., Combine cornstarch and water until smooth; gradually stir into cooking juices. Cook 30 minutes longer or until sauce is thickened, stirring once. Serve with rice.

¼ cup tomato-based chili sauce (such as Heinz®)
1 tablespoon honey
1 tablespoon fresh lime juice
1 tablespoon dried minced onion
1 teaspoon brown sugar
1 teaspoon minced garlic
1 teaspoon Sriracha sauce, or more to taste
1 pound boneless, skinless chicken tenders
½ medium lime, cut into 4 wedges

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and spray lightly with nonstick spray.
  • Combine chili sauce, honey, lime juice, dried onion, brown sugar, garlic, and Sriracha in a small bowl. Let the sauce sit for 5 minutes to allow the dried onion to soften a bit.
  • Spread out chicken tenders on the prepared baking sheet; brush with a thin coat of the sauce.
  • Bake in the preheated oven for 10 minutes, remove from oven, and brush on the remaining sauce. Return to the oven and bake until chicken is no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Serve with lime wedges.

1 cup Original Bisquick™ mix
1 teaspoon onion powder
1/2 teaspoon red pepper (add more if you want them really spicy, omit if no spice)
1 teaspoon chili powder
2 teaspoons paprika
1 teaspoon celery salt
2 teaspoons sugar
1 egg
1/4 cup milk
1 package chicken tenders (14 to 16 oz)
2 to 3 tablespoons butter, melted
Ranch dressing, if desired

Steps:

  • Heat oven to 450°F. Line cookie sheet with parchment paper.
  • In a pie plate, combine the Bisquick mix, onion powder, red pepper, chili powder, paprika, celery salt and sugar. Stir together until well mixed.
  • In medium bowl, mix egg and milk with whisk until well blended. Spoon 1 to 2 tablespoons egg mixture into the Bisquick mixture; stir until little lumps form.
  • Dip the chicken breast tenders into the egg mixture, then into the Bisquick mixture, then back into the egg mixture and finally back into the Bisquick mixture. Place on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken.
  • Bake 12 to 14 minutes, turning halfway through bake time, until no longer pink in the center. Serve tenders with ranch dressing if desired.

  • Prepare a charcoal fire using about 6 pounds of charcoal and burn until the coals are completely covered with a thin coating of light gray ash, 20–30 minutes. Spread the coals evenly over the grill bottom, position the grill rack above the coals and heat until medium-hot (when you can hold your hand 5 inches above the grill surface for no longer than 3 or 4 seconds). Or, for a gas grill, turn on all burners to high; close the lid and heat until very hot, 10–15 minutes.
  • Remove the chicken from the refrigerator to take the chill off. Scrape the hot grill rack clean with wire brush. Lightly dip wadded paper towels in the oil; holding the wad with tongs, wipe the grill rack.
  • Remove the chicken from the marinade; discard marinade. Use the reserved marinade to brush the chicken while cooking. Place the chicken on the grill and cook until seared, about 1–2 minutes per side for legs and thighs, and 3 or so minutes for breasts. Move the chicken to medium-low heat or reduce the heat to medium; continue to grill, turning occasionally and brushing with the reserved marinade, until the juices run clear when pierced, 12–18 minutes.
