TAMMY'S CHICKEN CASSEROLE
This is my own creation, I hope you enjoy it as much as my family does... never any leftovers.. and it makes a bunch!

Steps:
- 1. I cook the whole chicken overnight in a crock pot on low, in the morning I let it cool, then seperate and bone it.. I use 1/2 the chicken in the casserole.. and save 1/2 for another time.
- 2. Place water on to boil for the penne pasta.. place chicken in large mixing bowl. melt butter in skillet and add onion and peppers and saute till tender.
- 3. mix all with the chicken except use only 1/2 the cheese, save 1/2 for top. place mixture in 9x13 glass casserole dish, and top with cheese bake in 350 degree oven for 30 min. ENJOY!

This is my very special recipe made with the sauce, chicken from Anita's Lemon chicken, my moms recipe.

Steps:
- preheat oven to 350 degrees.
- dice cooked lemon chicken and heat mashed potatoes in microwave until warm.
- mix chicken soup and lemon juice from Anita's chicken in separate bowl. Add in vegetables and diced chicken.
- pour into a 9x13 inch baking dish and top with mashed potatoes.
- add seasonings of your choice and shredded swiss cheese. (I usually add additional pepper after cooking to my own dish).
- cook in preheated oven for 30 minutes.

LEMON AND CHICKEN CASSEROLE RECIPE BY TASTY
Here's what you need: chicken thighs, shallot, large carrots, potato, garlic, lemons, honey, chicken stock cube, fresh thyme, rosemary, olive oil, boiling water, sea salt, bisto

Steps:
- Sear the chicken in the casserole dish until golden, with 1 tbsp of olive oil (10-15 mins).
- Once chicken is cooked, remove and add the shallots and carrots to the dish with 4 tbsp of water. Season with salt and pepper. Fry until softened.
- Add garlic to the carrots and shallots, stirring for 1 minute, then add the chicken pieces to the dish.
- Grate the lemon zest into a heatproof jug. Squeeze in the lemon juice, add honey and crumble in a stock cube. Poor in 1 litre of boiling water. Stir to melt honey.
- Add the potatoes, pour in lemony stock and add the rosemary and thyme. Cover and bake for 2 hours at 350 degrees. When there is 20 minutes of bake time left, add the gravy and finish baking.
- Serve warm.

Steps:
- Boil chicken in 5 qts. water and simmer covered 1-2 hours. Pull chicken out. skim fat off top of broth. Add 4 chicken bouillon cubes to broth and bring to a slow boil.
- Add fresh vegetables (fresh is best but you can use frozen vegetables if you don't have fresh on hand). Add 1 can cream of chicken soup and 1 can cream corn. Cut chicken into bite size pieces and put back in soup. Simmer until vegies are tender. Bring heat up a bit and add pasta. We like orzo, alphabets or stars, but any pasta is fine Soup is ready when pasta is tender.
