EGG NOODLES WITH SPINACH

Egg Noodles with Spinach image

A wonderful side dish to ramp up plain buttered egg noodles. We love it with Salisbury steak, chicken, or pork.

Provided by Judy in Delaware

Categories     Side Dish

Time 25m

Yield 4

Number Of Ingredients 6

8 ounces wide egg noodles
¼ cup butter
1 onion, diced
1 clove garlic, minced
4 ounces baby spinach leaves
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes; drain and return noodles to pot.
  • While the noodles boil, melt butter in a skillet over medium-high heat. Saute onion and garlic in melted butter until lightly browned and soft, about 8 minutes. Stir baby spinach into the onion mixture; saute until the spinach is just barely wilted, about 2 minutes.
  • Stir spinach mixture into the noodles; season with salt and pepper.

CARNE SECA

Carne Seca image

"Dry Meat", basically... a kind of Mexican jerky. The seasoning is deliciously subtle, and doesn't detract from the flavor of the beef. If you're ready for something a little different in jerky, this is it. I dry mine in the oven, but obviously you can do this in a dehydrator or smoker.

Time P1DT6m

Yield 15 serving(s)

Number Of Ingredients 8

2 1/2 lbs lean flank steak, cut into 1/4 inch slices
2 teaspoons ground oregano
2 teaspoons salt
3/4 cup red wine vinegar or 3/4 cup cider vinegar
2 onions, chopped
2 cloves garlic, sliced
1/2 teaspoon fresh coarse ground black pepper
1 teaspoon liquid smoke

Steps:

  • Place all ingredients in a plastic zipper bag and refrigerate overnight.
  • The next day, if using your oven to dry, cover your oven racks with foil and preheat oven to 180 degrees F.
  • Transfer drained meat to baking racks and dry for approximately 6 hours; depending on how thick the meat slices are, drying could take between 5 and 7 hours.
  • Be sure to place a couple of potholders in the oven door to keep it slightly ajar so moisture can escape and the meat can dry more thoroughly.

Tallarines Y Espinacas (Mexican Noodles and Spinach) image

Make and share this Tallarines Y Espinacas (Mexican Noodles and Spinach) recipe from Food.com.

Provided by Muffin Goddess

Categories     Lunch/Snacks

Time 40m

Yield 8 serving(s)

Number Of Ingredients 10

3 tablespoons cooking oil
1 (12 ounce) package fideos (original recipe called for 10 fideo coils ( see note below)
1/4 cup chopped onion
1 garlic clove, minced
2 cups beef broth
1 1/2 cups water
1 cup tomato sauce
1/2 teaspoon salt
1/8 teaspoon fresh ground pepper
2 cups fresh spinach, coarsely chopped (you may substitute frozen chopped spinach, thawed and drained)

Steps:

  • NOTE: Fideo is usually found in the Mexican or ethnic section of the grocery store. A common package size is 12 oz. If I can't find the small coil type, I just use 1 package of the large coil type. You can also substitute any other type of long thin or small shaped pasta you prefer.
  • Heat oil in a large skillet. Fry fideos, turning periodically, until golden brown. Add the onions and garlic and cook for two more minutes, stirring often.
  • Add beef broth, water, tomato sauce and seasonings. Bring to a boil, then reduce heat to simmer. Cover and simmer for 20 minutes. Add spinach. Mix thoroughly, making sure that fideo coils have fully separated. Continue cooking until almost all of the liquid is absorbed (about 10 minutes).
  • Serve hot.
