- Shake the potato strips in a plastic bag with the oil to coat them evenly.
- Transfer fries to a greased cookie sheet. Dust heavily with pepper and bake 30 minutes or until done.

- Peel the sweet potato and cut them into chunks. Steam the sweet potato for 15 to 20 minutes until they are soft.
- Once all the sweet potato is mashed, measure out 300 grams of sweet potato puree into a large mixing bowl. The remaining sweet potato puree can be used as a sandwich filling, pancake topping or eaten just like that!
- Freeze whatever you are not planning on eating on the day in an airtight container lined with parchment paper and dusted with tapioca flour. Cook the frozen sweet potato balls the same way as below.
