MEXICAN-INSPIRED SHEPHERD'S PIE



Mexican-Inspired Shepherd's Pie image

Somehow the combination of the spicy beef, the sweetness of the corn and red bell pepper, and the simplicity of mashed potatoes makes a mouthwatering dish my whole family loves!

2 ¼ cups peeled and cubed potatoes
1 pound ground beef
1 (1 ounce) packet taco seasoning mix
3 tablespoons vegetable oil
1 onion, diced
1 red bell pepper, diced
½ (10 ounce) package frozen corn
3 tablespoons water
2 tablespoons tomato paste
1 cup shredded Emmentaler cheese
3 tablespoons taco sauce
2 tablespoons butter, cut into pieces
½ cup milk
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 25 minutes.
  • While potatoes are cooking, cook ground beef in a nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add taco seasoning and stir until meat is coated; set aside.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium heat. Add onion and bell pepper and cook until slightly browned, about 5 minutes. Stir in frozen corn, water, and tomato paste. Bring to a simmer and cook for 3 minutes. Transfer corn mixture to a shallow baking dish and spread to cover the bottom. Top with seasoned meat.
  • Drain potatoes. Add Emmentaler cheese, taco sauce, and butter and mash with potatoes. Add milk, salt, and pepper, mash until smooth, and spread on top of seasoned meat.
  • Bake in the preheated oven until potatoes begin to brown, about 30 minutes.

My kids love tacos and shepherd's pie so I put the two of them together for another family favorite!

1 lb ground beef
1 tablespoon butter
1 cup chopped onion
1 (1 1/4 ounce) envelope taco seasoning mix
1 1/2 cups frozen corn
3 cups mashed potatoes
1/2 cup grated cheese

Steps:

  • Preheat oven to 350°F.
  • Cook potatoes in boiling salted water until tender, about 20 minutes.
  • Drain potatoes and mash as usual.
  • Heat 1 tablespoons butter in saute pan; add onion, and saute for 5 minutes.
  • Add ground beef, and cook until beef is lightly browned; drain off any excess fat.
  • Add taco seasoning mix and cook as per package directions.
  • Remove from heat.
  • Place meat mixture into ovenproof casserole.
  • Cover with corn.
  • Cover with mashed potatoes.
  • Sprinkle with grated cheese.
  • Bake at 350 degrees for 30 minutes, or until potatoes are light golden.
  • Serve.

This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

1 ½ pounds ground beef
1 onion, finely chopped
garlic powder to taste
salt and pepper to taste
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
¾ cup hot water
1 (11 ounce) can whole kernel corn, drained
1 (8.5 ounce) package corn muffin mix
1 cup shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.
  • Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.
  • Bake 20 minutes in the preheated oven, or until puffed and golden. Garnish with olives and cheese.

1 pound ground beef
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) Mexicorn, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 envelope taco seasoning
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/8 teaspoon garlic powder
1 cup shredded cheddar cheese, divided

Steps:

  • Prepare mashed potatoes according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, corn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil; cook and stir for 1-2 minutes. , Transfer to a greased 2-1/2-qt. baking dish. Top with 3/4 cup cheese. Spread mashed potatoes over the top; sprinkle with remaining cheese. Bake, uncovered, at 350° for 12-15 minutes or until cheese is melted.

1 1/2 lbs ground beef
0.5 (1 1/2 ounce) package taco seasoning
8 ounces salsa
2 (3 1/2 ounce) packages Hungry Jack cheesy homestyle easy mashed potatoes
1 (16 ounce) package frozen mixed vegetables
1 cup cheddar cheese, shredded (I used Mexican Blend)

Steps:

  • Brown ground beef and drain, return to pan.
  • Add taco seasoning and salsa, stir to combine.
  • Prepare mashed potatoes as directed on package.
  • In a casserole dish, layer first a thin layer of mashed potatoes.
  • Next add half of the ground beef mixture, then half the frozen vegetables.
  • Sprinkle 1/2 cup of cheese on top of the vegetables.
  • Next layer again, potatoes, beef mixture, vegetables and cheese.
  • Top with a final layer of mashed potatoes.
  • Cover with foil and bake at 350 for 30 minutes.

6 large potatoes, peeled and cut into chunks
2 pounds lean ground beef (90% lean)
14 green onions, chopped (white portion only)
1-1/4 cups water
2 envelopes taco seasoning
1 cup 2% milk
1/4 cup butter
2 teaspoons garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded sharp cheddar cheese
2 cups shredded pepper Jack cheese

Steps:

  • Roll out pastry to fit two 9-in. deep-dish pie plates. Transfer pastry to pie plates; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack., Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook until liquid is evaporated. Spoon into pastry shells., Drain potatoes and place in a large bowl. Bake 5-10 minutes longer or until heated through and cheese is melted., To use frozen pie: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 1-1/2 hours. Uncover; bake 10-15 minutes longer or until heated through.
