PO'BOY TACOS



Po'Boy Tacos image

I intended to make tostadas, but I misread a couple of ingredients and had to use what I had on hand. I put my own twist on a po'boy recipe and ended up with something even better. -Cynthia Nelson, Saskatoon, Saskatchewan

1/4 cup mayonnaise
2 tablespoons seafood cocktail sauce
1/2 teaspoon Buffalo wing sauce
1/2 medium ripe avocado, peeled
1 tablespoon lime juice
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons Creole seasoning
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
2 tablespoons canola oil
8 flour tortillas (6 inches)
1 medium tomato, chopped
2 tablespoons minced fresh cilantro

Steps:

  • Combine mayonnaise, cocktail sauce and wing sauce; set aside. In another bowl, mash avocado with lime juice until combined; set aside., In a shallow bowl, mix flour, cornmeal and Creole seasoning. Add shrimp, a few pieces at a time, and turn to coat; shake off excess. In a large skillet, heat oil over medium-high heat. Add shrimp; cook and stir until shrimp turn pink, 4-6 minutes., Spread avocado mixture over tortillas. Top with shrimp, mayonnaise mixture, tomato and cilantro.

Fish Po'Boys image

Substitute with your favorite brand of frozen breaded fish.

2 packages (11.4 ounces each) frozen crunchy breaded fish fillets
1/2 cup mayonnaise
1 tablespoon minced fresh parsley
1 tablespoon ketchup
2 teaspoons stone-ground mustard
1 teaspoon horseradish sauce
2 to 4 drops hot pepper sauce
1-1/2 cups deli coleslaw
6 hamburger buns, split

Steps:

  • Bake fish according to package directions. Meanwhile, in a small bowl, combine the mayonnaise, parsley, ketchup, mustard, horseradish sauce and hot pepper sauce until blended. , Spoon 1/4 cup coleslaw onto the bottom of each bun; top with two pieces of fish. Spread with sauce; replace bun tops.

  • Heat oven to 325°F. In small bowl, stir together melted butter and 1/2 teaspoon garlic. Lightly brush melted butter mixture on all sides of each bowl to coat. Place bowls on cookie sheet. Bake 5 to 7 minutes or until warm.
  • In shallow dish, pour buttermilk. Mix flour and Cajun seasoning in another shallow dish. Dip shrimp into buttermilk, allowing excess to drip back into dish. Coat shrimp with flour mixture, shaking off excess. Place coated shrimp in batches in preheated oil, 2 to 3 minutes per batch, stirring occasionally in oil, until golden brown and just cooked through. Drain on paper towel-lined cookie sheet. Keep warm while frying remaining shrimp.
