BEEF TACO PIE
I combine taco fixings with biscuit mix to create this zippy taco pie recipe. You can make it as mild or as hot as you'd like. Pair it with a tossed salad. -Shelly Winkleblack, Interlaken, New York

Steps:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the salsa, taco seasoning and pepper. Transfer to a greased 9-in. pie plate; sprinkle with cheese., In a large bowl, combine the eggs, milk and biscuit mix just until combined; pour over cheese. Bake at 400° until a knife inserted in the center comes out clean, 25-30 minutes.

TACO BEEF AND RICE PIE
Made with a rice crust, adding the beef with taco flavoring for filling and finally an avocado mixture to cover the top. This makes 3 layers the crust the filling and the topping. Very nice presentation. Enjoy!

Steps:
- Taco Pie Crust.
- In a sauce pan bring broth, butter and salt to a boil.
- Add rice, cover, turn to low and cook for 20 minutes.
- Cool rice slightly, add eggs mix well.
- Press mixture into a 9 inch greased pie plate, going up sides.
- Set aside.
- Taco Pie Filling.
- Brown ground beef, drain fat.
- Stir in garlic, cumin and salt, cook 2 minutes longer.
- Remove from heat, stir in taco sauce, egg.
- Spoon into prepared rice pie shell.
- Bake at 350 degrees for 25 minutes.
- Taco Pie Topping.
- While pie is cooking, mash avocado together with onion, taco sauce, salt and lemon juice.
- When beef pie has cooked the 25 minutes, spread avocado mixture over the top and cook another 5 minutes.
- Serve.
- *Optional items green chillis, grated cheese.

I love this taco rice casserole. It's easy to make, and most of the ingredients are usually on hand. Kick it up with dashes of hot sauce.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef, celery, and onion in the hot skillet until beef is browned and crumbly and vegetables are tender, 5 to 7 minutes. Drain and discard grease.
- Stir tomatoes, water, rice, salsa, chilies, olives, bouillon granules, chili powder, Worcestershire, and pepper into beef mixture. Bring to a boil. Transfer to a 2-quart casserole dish.
- Bake, covered, in the preheated oven until rice is tender, 45 to 50 minutes. Sprinkle with cheese. Cover and let stand for 10 minutes before serving.

- In a large bowl, combine the beef, 3/4 cup tomato sauce, bread crumbs, onion, green pepper if desired and seasonings. Press evenly onto the bottom and up the sides of an ungreased 9-in. pie plate, forming a crust., In another large bowl, combine the tomato paste and remaining tomato sauce. Stir in the rice and 3/4 cup cheese; pour into crust. Place pie plate on a baking sheet. , Cover and bake at 350° for 25 minutes or until the meat is no longer pink. Uncover; drain. Sprinkle with remaining cheese. Bake 10-15 minutes longer or until the cheese is melted. Let stand for 5 minutes before cutting.
