From a supermarket card I just picked up. DH loves swordfish. If you use fresh tarragon, use 3 tsp. chopped, divided.

2 heads garlic, medum size
1/2 cup reduced-sodium chicken broth
2 teaspoons dried tarragon, divided
4 (6 ounce) swordfish steaks
1/2 teaspoon pepper (to taste)
salt, to taste
2 teaspoons unsalted butter
2 -3 tablespoons fresh lemon juice
lemon wedge (optional)

Steps:

  • Lightly oil grill grate and preheat to medium-high.
  • Cut off pointed end of garlic bulbs; place garlic on piece of heavy duty foil and wrap to seal in pouch.
  • Place garlic on grill rack and cover; grill 30-35 minutes or until fork tender.
  • Cool 5 minutes and squeeze pulp from garlic; mince and set aside.
  • On stovetop, in a heavy skillet, bring chicken broth and 1 teaspoons of the tarragon to boiling; lower heat and simmer until mixture is reduced to 1/4 cup.
  • Melt butter in separte skillet over medium-high heat.
  • Whisk in garlic pulp, remaining tarragon, broth reduction and lemon juice; bring to boiling; reduce heat and keep warm until ready to serve.
  • Meanwhile, rinse and pat dry swordfish with paper towels.
  • Sprinkle fish evenly with pepper and salt to taste.
  • Grill fish 5 minutes on each side, or until fish flakes when tested with a fork.
  • Transfer fish to serving dish and serve with reserved garlic sauce.

2 large garlic cloves, chopped
1/4 cup chopped fresh parsley
1 tablespoon anchovy paste
2 teaspoons Dijon mustard
1 cup good mayonnaise
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3 pounds center-cut swordfish steaks, 3/4 to 1 inch thick, cut into 6 portions
1/2 cup chopped scallions, white and green parts (4 scallions)
2 tablespoons good olive oil
3 tablespoons drained capers
Lemon wedges, for serving

Steps:

  • Preheat the oven to 500 degrees F. (Be sure your oven is very clean.) Line a sheet pan with aluminum foil.
  • For the Caesar sauce, place the garlic, parsley, anchovy paste, and mustard in the bowl of a food processor fitted with the steel blade and pulse until the garlic is minced. Add the mayonnaise, lemon zest, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper and pulse to make a smooth sauce.
  • Place the swordfish steaks on the pan and sprinkle both sides generously with salt and pepper. Set aside one third of the sauce to serve with the cooked fish. Spread the fish on one side with half the remaining sauce, turn the fish, and spread the remaining sauce on the second side. Sprinkle with the scallions and allow to stand for 10 minutes.
  • Roast the fish for 10 to 12 minutes, until the center is just barely cooked. Cover the fish with aluminum foil and allow to rest on the pan for 10 minutes.
  • Meanwhile, heat the oil in a small saute pan until very hot, add the capers, and cook for 30 to 60 seconds, until they start to pop and are a little crisp. Serve the swordfish hot with the lemon wedges, frizzled capers, and the reserved Caesar sauce.

We made this sauce recently during class at Culinary Communion - it was intended to go along with the Pork Loin with Spinach and Pernod recipe, but frankly, it went really well on just about everything served with the meal! Especially with the Green Glop (aka Puree Verte, recipe # 122434). Here's Chef Gabriel Claycamp's recipe for Roasted Garlic and Herb Beurre Blanc - I can assure you that it's a rich, creamy, flavorful, delicious sauce that's well-worth the relatively small effort of making it to accompany your meals! (It's not exactly fat-free, but remember: everything in moderation.) Posted with permission.

2 cups white wine
2 large shallots, minced
4 tablespoons chopped roasted garlic
1/2 cup cream or 1/2 cup half-and-half
1 lb butter, cut into cubes and preferably at room temperature
salt & freshly ground black pepper, to taste
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh cilantro
3 tablespoons chopped fresh parsley

Steps:

  • In a saucepan over medium temperature, combine the wine, shallots, and garlic, and reduce until the wine just covers the shallots.
  • Add the cream or half and half and reduce again until the mixture is thick and syrupy, stirring occasionally.
  • Reduce the temperature to very low and gradually whisk the pieces of butter into the mixture, one cube at a time (alternately, you can remove it from the heat and - using an immersion blender - emulsify the butter into it one piece at a time; this is the method we used during class).
  • Do not allow the sauce to become either too hot or too cold or it will break.
  • Season to taste with salt and freshly ground pepper, stir in the remaining ingredients (the herbs), and serve immediately.
  • Note: we've served this over pork, chicken, rabbit, and vegetables - delicious!
  • Also, feel free to experiment with other herbs than listed above.

4 swordfish steaks, 1 inch thick
Marinade
1 cup virgin olive oil
1/4 cup fresh lemon juice
1 teaspoon chopped garlic
1/8 teaspoon salt
1/8 teaspoon pepper
Beurre Blanc
1 pound sweet butter
1/4 cup dry white wine
1/4 cup tarragon vinegar
1/8 cup roasted garlic, minced
4 large fresh basil leaves, cut julienne for garnish

Steps:

  • Preheat grill to medium heat. Marinade: Mix all ingredients together, add swordfish and marinate 1 1/2 hours Beurre Blanc: Set butter out to become room temperature. In saucepan melt a little butter and sauté onions until transparent. Add wine and vinegar. Let reduce to 1/4 amount. Whip in softened butter; add garlic. Swordfish: Place swordfish on preheated grill approximately 5 minutes on each side. Place on serving platter. Put sauce on top and garnish with fresh basil. To roast garlic: Preheat oven to 375 degrees. Separate the cloves of garlic from the head. Place in a sauté dish that has been oiled with olive oil. Coat the cloves well. Bake 15 to 20 minutes or until golden brown.
