This classic Swiss steak recipe is true comfort food. The steaks are browned and then slowly baked to perfection in a tomato sauce.

2 to 3 pounds boneless chuck steak (lean, or bottom round)
1/2 teaspoon black pepper (freshly ground)
1 teaspoon salt
1 cup all-purpose flour
5 tablespoons vegetable oil (divided)
2 medium onions (quartered and sliced)
1 (28-ounce) can tomatoes (undrained, chopped)
Optional: 1 tablespoon all-purpose flour mixed with 1 tablespoon water

Steps:

  • Preheat the oven to 325 F/165 C.
  • If needed, add another tablespoon of the remaining oil to the pan to cover its bottom.
  • Enjoy!

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

This intro is from the 1937 recipe. Our first swiss steak recipe appeared in 1930 and was seasoned only with salt, pepper, onion and mustard. Over, the years, the ingredients have changed to include more flavorful items. With todays recipe you can take your choice of of range-top or oven method. This is a very tasty recipe. Sometimes going back to the basics is just the best! Recipe says to serve over rice or egg noodles.

1 lb boneless beef round steak, cut 3/4 inch thick
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cooking oil
16 ounces diced tomatoes
1 small onion, sliced into rings
1/2 cup sliced celery (one stalk)
1/2 cup sliced carrot (1 medium)
1/2 teaspoon dried thyme, crushed between fingers

Steps:

  • Trim fat from meat. Cut into 4 serving size pieces.
  • Combine the flour, salt and pepper. With the notched side of a meat mallot, pound flour mixture into meat, both sides.
  • In a large skillet brown meat on both sides in hot oil. Drain off fat.
  • Add undrained tomatoes, onion, celery, carrot and thyme. Bring to boil, reduce heat. Cover and simmer about 1 1/4 hours or until meat is tender.
  • Skim off any fat.
  • Serve over rice or noodles.
  • Oven directions:
  • Prepare and brown meat in skillet, as above. Transfer meat to a 2 qt baking dish.
  • In the same skillet combine undrained tomatoes, onion, celery, carrot and thyme. Bring to a full boil, scraping up any browned bits.
  • Pour over meat.
  • Cover and bake in a 350 degree oven about 1 hour until tender. Serve over rice or noodles.

3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 lb boneless beef round steak, cut into 3/4-inch cubes
2 tablespoons vegetable oil
2 cups sliced mushrooms
1 cup frozen pearl onions
1 clove garlic, finely chopped
4 cups sliced carrots (8 medium)
1 can (14.5 oz) stewed tomatoes, undrained

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, salt, paprika and pepper. Add steak; toss to coat. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add steak, reserving remaining flour mixture; brown steak on all sides. Spoon into ungreased 2 1/2-quart casserole.
  • To same skillet, add remaining 1 tablespoon oil, the mushrooms, onions and garlic. Cook 2 to 3 minutes, stirring constantly, until browned; add to casserole. Add carrots, tomatoes and reserved flour mixture; mix well.
  • Cover casserole. Bake 1 hour 30 minutes to 1 hour 45 minutes or until meat and vegetables are fork-tender.

3 tablespoons shortening
1/2 cup onion, sliced
1 (16 ounce) can diced tomatoes
2 tablespoons chopped green peppers

Steps:

  • Combine flour, 1 tsp salt, and 1/4 tsp pepper.
  • Pound into meat.
  • In large skillet, brown meat on both sides in hot shortening.
  • *Top with onions and tomatoes.
  • Cover;cook over low heat 1 1/2 hrs.
  • or until tender.
  • Add green pepper; cook 15 minutes longer.
  • Skim off excess fat.
  • Thicken juices, if desired.
  • Season to taste.
  • *Tooven bake, transfer browned meat to 12 X 7 1/2 X 2 inch baking dish.
  • Top with onion and tomatoes.
  • Bake, covered at 350 Deg.
  • for 1 1/2 hrs.
  • Uncover; add green pepper and bake 15 minutes, basting meat occasionally.
