Tender chicken loaded with bacon, celery, and green onions, then coated with a mayonnaise dressing. This recipe is sure to become your new favorite.

4 oz chopped (bacon)
2 cups cooked chicken (chopped)
¼ cup mayonnaise
2 stalks celery (cleaned and diced)
2 green onions (sliced into rounds)
salt and black pepper (to taste)

Steps:

  • In a skillet, cook the bacon over medium heat until crispy. Remove from the pan and blot to remove extra fat. Set aside to cool completely.
  • Mix all the ingredients in a bowl, taste for seasoning and as needed according to taste. Mix well and refrigerate until serving.

1 package (22 ounces) frozen grilled chicken breast strips
1 cup crumbled blue cheese
3 tablespoons white wine vinegar
1 tablespoon water
1/8 teaspoon coarsely ground pepper
1/4 cup canola oil
8 cups chopped romaine
3 medium tomatoes, chopped
6 bacon strips, cooked and crumbled

Steps:

  • Heat chicken according to package directions. Cool slightly; coarsely chop chicken., For dressing, place cheese, vinegar, water and pepper in a small food processor; cover and process until smooth. While processing, gradually add oil in a steady stream., In a large bowl, combine romaine, chicken, tomatoes and bacon. Serve with dressing.

1/2 cup mayonnaise
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
6 cups mixed salad greens
1 medium red onion, sliced
1 package (10 ounces) frozen peas, thawed
8 ounces sliced Swiss cheese, julienned
1 pound bacon, cooked and crumbled

Steps:

  • In a small bowl, combine mayonnaise, sugar, salt and pepper. In a large salad bowl, layer a third of the greens and a third of the mayonnaise mixture, onion, peas and cheese. Repeat the layers twice. Cover and refrigerate for at least 2 hours. Just before serving, add the bacon and toss.

3 tablespoons unsweetened pineapple juice
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoon pepper
2 pounds boneless skinless chicken breasts, julienned
8 cups torn mixed salad greens
2 large tomatoes, chopped
3/4 cup pineapple tidbits
4 green onions, sliced
Oil and vinegar salad dressing, optional

Steps:

  • In a large resealable plastic bag, combine the pineapple juice, soy sauce, Worcestershire sauce, garlic powder and pepper. Add chicken strips; seal bag and toss to coat. Cover and refrigerate for 1 hour. Drain and discard marinade. Grill chicken, covered, over medium heat for 8-10 minutes or until juices run clear, turning once. , To serve, arrange greens on four serving plates; top with tomatoes, pineapple, onions and warm chicken. 3 cups cooked diced chicken
4 slices bacon, cooked and crumbled
3/4 cup mayonnaise
1 tablespoon parsley, fresh
2 tablespoons finely minced green onions
1 teaspoon lemon juice
1/4 teaspoon ground cumin (or curry powder)
1 dash Worcestershire sauce
salt and pepper, to taste

Steps:

  • Combine chicken and bacon.
  • In a small bowl, whisk together remaining ingredients to make the dressing. Chill for 20 minutes.
  • Combine dressing with chicken mixture. Add the dressing slowly to make the desired consistency.

Steps:

  • In a small bowl, mix together the mayonnaise, sugar, salt and pepper.
