Swiss Sunday Bread image

This is a traditional bread enjoyed in Switzerland on Sundays for breakfast.

3 ½ cups all-purpose flour
1 ½ teaspoons salt
2 teaspoons active dry yeast
2 teaspoons white sugar
1 egg
1 egg white
¼ cup warm milk
water as needed
¾ stick unsalted butter, melted
1 egg, lightly beaten

Steps:

  • Place flour into a bowl, creating a small hole in the center. Sprinkle salt around the edge and place yeast and sugar into the hole.
  • Mix egg and egg white together in a 2-cup measuring cup. Add enough water to reach the 1 1/4 cup mark. Stir in milk. Add melted butter. Pour into the center of the flour. Mix thoroughly, adding more milk or flour as needed until dough is smooth and elastic. Cover the bowl with a damp cloth and let rise for 30 minutes.
  • Cut dough in 1/2. Form each 1/2 into a long roll. Lay rolls out in front of you on a work surface in an 'X' shape. Braid bread by constantly switching the ends. Place bread onto a baking sheet, cover with a damp cloth, and let rise for 15 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush bread with beaten egg using a pastry brush.
  • Bake in the preheated oven on the middle rack until golden, about 30 minutes.

1 loaf (18-20 inches) French bread
1 cup butter, softened
2 cups shredded Swiss cheese
3/4 teaspoon celery seed
3/4 teaspoon garlic powder
3 tablespoons dried parsley flakes

Steps:

  • Cut bread in half crosswise. Make diagonal cuts, 1 in. apart, through bread but not through bottom. Combine all remaining ingredients. Spread half the butter mixture between bread slices. Spread remaining mixture over top and sides of bread., Place bread on double thickness of foil; cover loosely with more foil. Bake at 425° for 20-30 minutes. For last 5 minutes, remove foil covering bread to allow it to brown.

I discovered this Swiss Sunday bread when I was visiting friends in Switzerland. One of these friends is a pastry chef! The measurements given to me were metric, so I had to convert them. This makes a beautiful loaf and is super easy to make!

1 (.25 ounce) package active dry yeast
1 ⅓ cups warm milk
1 egg yolk
2 tablespoons butter, softened
3 ½ cups bread flour
1 egg white
1 tablespoon water

Steps:

  • In a large bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes. Add the egg yolk, butter and 2 cups of bread flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Divide the dough into 3 equal pieces and roll each piece into a 14 inch long cylinder. Braid the pieces together and place on a lightly greased baking sheet. Cover with a damp cloth and let rise until doubled in size, about 1 hour. Meanwhile, preheat oven to 425 degrees F (220 degrees C).
  • In a small bowl, beat together egg white and water. Brush risen loaf with egg wash and bake in preheated oven for 20 to 25, until golden.

Swiss Bread image

This is really, really excellent, but like everything that is excellent it is extremely bad for you. I think you can actually hear your arteries clogging, but it is soooo worth it!!!! I save this for once, maybe twice a year. Please note that I am saying 12 slices of cheese, but the more cuts you make, the more cheese you can use. This stuff is heavenly--I hope you enjoy!

1 loaf French bread
12 slices swiss cheese
1 lb butter, softened (yes, 1 pound, not a typo!)
1 tablespoon grated onion
1 teaspoon prepared mustard
2 teaspoons lemon juice
1 tablespoon poppy seed
1 tablespoon beau monde seasoning

Steps:

  • Slice french bread on the diagonal, 3/4 of the way through the bread. Make sure that you do not cut all the way through the bottom of the bread.
  • Place one slice of cheese in each slice of bread.
  • Mix remaining ingredients together and spread evenly over top of bread.
  • Wrap loaf in foil and bake at 325 for 25 to 30 minutes.
  • Serve and Enjoy!

4 ounces Jarlsberg or Swiss cheese
3 cups all-purpose flour
3 tablespoons sugar
3 teaspoons baking powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 bottle (12 ounces) beer or nonalcoholic beer
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375°. Divide cheese in half. Cut half into 1/4-in. cubes; shred remaining cheese. In a large bowl, combine next 5 ingredients. Stir beer into dry ingredients just until moistened. Fold in cubed and shredded cheese., Transfer to a greased 8x4-in. loaf pan. Drizzle with butter. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool 10 minutes before removing from pan to a wire rack.

This is a sweet bread, made into a round loaf.

4 ½ cups all-purpose flour
2 (.25 ounce) packages active dry yeast
¼ cup white sugar
1 teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon ground mace
¼ teaspoon ground cloves
1 cup milk
½ cup water
¼ cup margarine
1 egg
½ cup raisins
½ cup halved candied cherries
¼ cup candied citron peel
¼ cup chopped walnuts
1 tablespoon butter, melted
1 teaspoon white sugar

Steps:

  • In a saucepan, heat milk, water, and butter or margarine until warm.
  • In large mixing bowl, combine 2 cups flour, yeast, 1/4 cup sugar, salt, nutmeg, mace, and cloves; mix well. Stir in warm milk mixture and egg. Blend with an electric mixer at low speed until moistened; beat 3 minutes at medium speed. By hand, stir in raisins, cherries, citron, nuts, and enough remaining flour to make a firm dough.
  • Knead dough on a lightly floured surface until smooth and elastic, 5 to 8 minutes. Place in a greased bowl, turning to grease top. Cover. Let rise in warm place until doubled, about 1 hour.
  • Punch dough down. Shape into a round loaf, and place in a greased 2 quart casserole. Cover, and let rise in warm place until doubled, about 1 hour. Brush top of loaf with melted butter, and sprinkle lightly with 1 teaspoon sugar.
  • Bake at 375 degrees F ( 190 degrees C) for 40 to 45 minutes, until deep golden brown. If too dark, cover loosely with foil last 5 to 10 minutes of baking. Cool.

From The Festive Bread Book by Kathy Cutler. I made this the first time in honor of a Swiss colleague who was interning with us. I asked her if it was like birnbrot at home and she laughed and said that it was not, but that it was very good. I'm not sure what the difference is, as I've never had it when in Switzerland. But it's a very nice Christmas bread and has the added benefit of using dried pears, a convenience when fresh pears are not in season.

2 1/2 teaspoons active dry yeast, one envelope is enough
1/3 cup water
1 1/2-2 1/2 cups flour
1/4 teaspoon salt
3 tablespoons sugar
3 tablespoons unsalted butter, softened
1 egg
3/4 cup water
3/4 cup coarsely chopped dried pears
1/3 cup pitted coarsely chopped prune
1/4 cup golden raisin
2 tablespoons lemon juice
1/4 cup chopped walnuts
1 tablespoon sugar
1/2 teaspoon grated lemon zest
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1 egg, beaten with 1 tbl milk

Steps:

  • Dissolve the yeast in water, add one tsp flour and set aside in warm place for 10 minutes or so, until it is foamy and bubbly.
  • Mix 1 cup flour, salt, sugar and softened butter in a mixer bowl. Add the yeast mixture and egg and mix thoroughly.
  • Stir in enough of the remaining flour to make a soft dough. Turn out onto a floured surface and knead until smooth, about 10 minutes.
  • Place in greased bowo, turning to coat top. Cover and let rise in warm place until doubled, about 1 hour.
  • Prepare the filling while the dough is rising. In a small saucepan, bring the water to a boil.
  • Add the fruit and the lemon juice to the water. Simmer over low heat, stirring frequently, for 10 minutes or until so tender that it can be mashed easily. Drain the fruit.
  • Puree in a blender or food processor. Remove to a bowl and combine with the walnuts, lemon zest, cinnamon and nutmeg. Mix thoroughly - this will be a thick mixture.
  • Grease a large baking sheet. Punch down the dough and turn it out onto a lightly floured surface. Roll the dough into a 9 x 9 inch square.
  • Spread the filling on the dough, leaving a 1-inch margin all around. Roll the dough jelly-roll style.
  • Place on the grease baking sheet, seam side down, and let rise in a warm place, covered, until doubled, about 30 minutes.
  • Brush with glaze and bake in preheated 350 deg F oven 30 to 40 minutes or until done. Cool on wire rack.

3 tablespoons mashed potato flakes
1 tablespoon nonfat dry milk powder
2 tablespoons cornmeal
1-1/2 teaspoons salt
4 cups bread flour
1 tablespoon active dry yeast
1/2 cup diced fully cooked ham
1/2 cup diced Swiss cheese

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add ham and cheese. Refrigerate leftovers.
