- Bring the granulated sugar, honey, salt and 2 tablespoons water to a gentle simmer in a small saucepan over medium heat. Cook, stirring, until the sugar dissolves. Transfer 1 1/2 tablespoons of the syrup to a small bowl; set aside. Add the rhubarb to the remaining syrup; cook, stirring occasionally, until the rhubarb breaks down and the mixture thickens, 15 to 20 minutes. Let cool slightly, then transfer to a blender and puree until smooth. Transfer to a bowl and refrigerate until cold, at least 1 hour.
- Beat the heavy cream, mascarpone and confectioners' sugar with a mixer on medium-high speed until stiff peaks form. Fold one-third of the cream mixture into the rhubarb mixture until just combined, then fold in the rest. Cover and refrigerate until cold, about 1 hour.
- Meanwhile, preheat the oven to 375 degrees F. Use a 2-inch-round cookie cutter to cut circles from the pound cake slices. Transfer to a baking sheet and bake until lightly toasted, about 5 minutes. Remove from the oven and immediately brush the cake rounds with the reserved syrup; let cool completely on the baking sheet.
- Spread a layer of strawberry preserves on the cake rounds. Transfer the rhubarb cream to a piping bag fitted with a large star tip. Pipe the cream onto the cakes.
SHIRLEY TEMPLE
This beloved kids' drink was named after the late child star Shirley Temple Black, although she had no involvement in its invention in the 1930s. Saccharine to many adult palates, the grenadine-and-soda mocktail feels grown-up to kids, who delight at its bright red color, cherry garnish and hefty sugar content. (An adult version named the Dirty Shirley tempers its sweetness with the addition of vodka.) There's no right answer to the debate surrounding lemon-lime soda (like Sprite or 7Up) versus ginger ale. Haley Traub, the general manager of the cocktail bar Attaboy on Manhattan's Lower East Side, suspects the divergence is regional. Growing up in Minnesota, she says "it was always Sprite. It wasn't until I moved to the East Coast that I'd ever heard it being made with ginger ale." Soda options vary, but there is one nonnegotiable here: a cherry on top.

DIRTY SHIRLEY
The Dirty Shirley, a vodka-spiked variation on the classic, kid-friendly Shirley Temple, is a syrupy-sweet nostalgia trip for adults. Topped with a cheeky maraschino cherry, the cocktail is evocative of a time before drinks had to be balanced or nuanced, a time when a bright red glass of sugary bubbles was the pinnacle of festivity. While a classic Shirley Temple is made with either lemon-lime soda or ginger ale, the "dirty" version is commonly made with the former (Sprite or 7Up).
