SWEET AND SPICY MUSTARD



Sweet and Spicy Mustard image

A thick mustard perfect for dipping appetizers or for spreading onto sandwiches.

1 cup sugar
1 ⅓ cup dry mustard (4 ounces)
3 eggs (beaten)
1 cup white vinegar
dash salt

Steps:

  • In a pot combine sugar, mustard, beaten eggs, vinegar and salt
  • Heat over medium heat, stirring often, until mixture begins to thicken and is heated to 150-155 degrees, about 10 minutes.
  • Remove from heat and strain mustard through a fine sieve to remove small egg pieces or lumps.
  • Place in a storage container, cover and refrigerate until ready to use. Mustard may be refrigerated for up to one month.

1/4 cup Dijon Mustard
2 Tablespoons Honey Mustard
2 Tablespoons Deli or Stoneground Mustard
1/4 cup dark brown sugar
2 Tablespoons honey
1 Teaspoon dried thyme
1 garlic clove- minced

Steps:

  • In a bowl stir all ingredients until well incorporated and smooth.
  • Adjust flavor to liking adding more sugar or honey to make sweeter, or more mustard to make spicier.
  • Place in refrigerator until ready to use.
  • Use as a marinade for meat, pork, chicken or fish.
  • Use as a glaze after the meat, pork, chicken, or fish is cooked.
  • Use as a dipping sauce for pretzels, chips, or vegetables.

A nice sweet and spicey mustard sauce that goes well with most meats, great on burgers and hot dogs as well! I get the best results with Keens Mustard Powder... other brands don't seem to work as well. Enjoy!

1/4 cup butter
1/4 cup keen's mustard powder
3/4 cup white sugar
1/2 cup white vinegar
2 beaten eggs

Steps:

  • Mix all dry ingredients together and put in a non-stick pot.
  • Beat eggs with vinegar in a small bowl.
  • Add egg/ vinegar mixture to the dry ingredients.
  • Bring to a boil stirring constantly.
  • When the sauce starts to boil, add the butter.
  • Continue to boil until thinkened.
  • store in an airtight jar in the fridge.
  • Keeps for 7 days.

1 1/2 tablespoons lemon juice
2 tablespoons lime juice
3 tablespoons yellow mustard
1/4 cup cider vinegar
2 tablespoons liquid smoke (optional)
2 garlic cloves, minced
1/2 teaspoon garlic granules
2 teaspoons dried chipotle powder
1/4 cup brown sugar
1/4 cup canola oil
6 chicken breasts

Steps:

  • Combine lemon juice through brown sugar. Whisk until the sugar has dissolved. Add in the oil and continue to whisk until it has emulsified.
  • Pour over chicken breasts in a zipper bag or non-reactive container. Let marinate between 4-24 hours.
  • Cook on a hot grill until done.

Sweet & Spicy. Easy. Lots of compliments on this. Good with chicken, beef, and pork. I have used it on chicken legs, boneless skinless chicken thighs, pork chops, and tri-tip.

1/3 cup sriracha sauce
1/2 cup sweet chili sauce
2 tablespoons salt

Steps:

  • mix ingredients in a bowl. Rinse chicken, place in marinade, stir to coat. Transfer to ziplock or leave in covered dish to marinade. Marinade in the refrigerator 2-24 hours.
  • You can also place meat with marinade in a Ziploc and freeze it. The meat would then marinate while thawing whenever you decide to cook it.
  • Grill meat to your liking.

Sweet Hot Mustard Chicken Thighs image

When it comes to mustard, sweet-hot works amazingly well, especially as a glaze for chicken. Even though we are using skin-on bone-in chicken thighs, I'm sure it will work with any cut of chicken. By the time this is done, it doesn't have a super-strong mustard flavor. It gets mellowed out by the brown sugar and spices. The old saying 'The closer the bone, the sweeter the meat' really is true. Leaving in the bones adds a lot of flavor and juiciness.

8 large bone-in, skin-on chicken thighs
½ cup Dijon mustard
¼ cup packed brown sugar
¼ cup red wine vinegar
1 teaspoon dry mustard powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
½ teaspoon ground dried chipotle pepper
1 pinch cayenne pepper, or to taste
4 cloves garlic, minced
1 onion, sliced into rings
2 teaspoons vegetable oil, or as needed

Steps:

  • Make 2 slashes crosswise into the skin and meat of each chicken thigh with a sharp knife, cutting to the bone. Cuts should be about 1 inch apart. Transfer thighs into a heavy resealable plastic bag.
  • Whisk Dijon mustard, brown sugar, red wine vinegar, mustard powder, salt, black pepper, ground chipotle pepper, and cayenne pepper in a bowl until smooth. Whisk garlic into marinade.
  • Pour marinade into bag over chicken thighs and massage marinade into chicken, coating each thigh thoroughly and working the marinade into the cuts. Seal bag and refrigerate at least 4 hours (or overnight for best flavor).
  • Move a rack to the center position in oven. Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and lightly oil the foil.
  • Scatter onion rings onto prepared baking sheet. Place chicken thighs on top of onion rings. Spray or brush thighs with vegetable oil; sprinkle thighs with additional salt and cayenne pepper if desired.
  • Roast chicken in preheated oven until the skin is browned, meat is tender, and the juices run clear, 35 to 45 minutes.
  • Transfer chicken and onions onto a serving platter. Pour pan drippings into a saucepan, bring to a boil, and continue boiling, stirring often, until drippings are reduced by half, 3 to 4 minutes. Skim excess fat from pan sauce.
  • Spoon reduced pan sauce over each chicken thigh and serve.
