SWEET POTATO LOAF
I enjoy making this bread because it lets me use sweet potatoes in something besides pie. I found the recipe in an old Southern cookbook, but changed a few things. The orange juice in the glaze adds a nice citrus flavor to the loves. -Ann Jovanovic Chicago, Illinois

Steps:
- In a large bowl, combine the first seven ingredients. Whisk together the sweet potatoes, eggs and oil. Add sugar; whisk until smooth. Stir into dry ingredients just until combined. Fold in walnuts and raisins (batter will be thick). Transfer to two greased 9x5-in. loaf pans. , Bake at 350 ° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks. , Meanwhile, for glaze, combine the confectioners' sugar, orange zest and enough orange juice to achieve desired consistency. Spread over warm loaves; sprinkle with walnuts.

A Southern delight with a 'more-ish' taste. One bite and you want more! This bread freezes well.

- Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.
- Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

- In a large bowl, combine the tomato sauce, egg, 1/2 cup of cracker crumbs, green pepper, onion and salt. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Combine sweet potatoes and molasses; roll potatoes in remaining crumbs. Add potatoes to the pan; place bacon strips over meat loaf. Bake 30 minutes longer or until the meat is no longer pink and a thermometer reads 160°.

- Let eggs and buttermilk stand at room temperature 30 minutes. Preheat oven to 350 F. Lightly coat 9x5x3-inch baking pan with nonstick cooking spray; coat lightly with flour. Set aside. In bowl combine flour, baking powder, cinnamon, baking soda, salt, allspice, and nutmeg; set aside.
- In large microwave-safe bowl, microcook butter on 10 percent power (low) for 1-1/2 to 2-1/2 minutes or until very soft but not melted, checking and rearranging if necessary every 30 seconds.
- Add sugar; whisk until well combined. Add eggs, buttermilk, and vanilla; whisk until well mixed (mixture may look curdled). Add flour mixture. Whisk until combined. Fold in the sweet potato. Spoon into prepared pan and spread evenly.
- Bake 65 to 70 minutes or until top springs back when lightly touched and split in top appears dry. Cool on wire rack 10 minutes. Remove from pan.
