GLUTEN-FREE SWEET POTATO MUFFINS
I have a family member with special dietary needs, so I came up with these gluten-free sweet potato muffins that we could all enjoy. These are just as good as any traditional recipe, maybe better! Steps:
- Preheat oven to 350°. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, honey, coconut oil, olive oil and vanilla until blended. Add to flour mixture; stir just until moistened., Fill 12 greased or paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

- 2. In another bowl, beat the eggs, onion and butter until blended; stir into the dry ingredients just until moistened. Fold in walnuts.
- 3. Fill greased or paper lined miniature muffin cups three quarters full. Bake at 400*F for 10-12 minutes or until muffins test done.
- 4. Cool for 5 minutes before removing from pans to wire racks.

- Bake at 400°F for 10-12 minutes or until a tooth pick inserted near the center comes out clean.
- Cool, for 5 minutes before removing from pan to wire racks.
- Yield: 3 dozen minis or 1 dozen regular muffins.
- Note: If using regular-size muffin cups, bake for 20-25 minutes.

- 1. Preheat oven to 400 degrees F.
- 2. In a medium saucepan, melt butter and sauté the onion until tender but not brown, for approximately 5 minutes.
- 3. Remove the pan from the heat and add the muffin mix, milk, sour cream, chiles and then the egg. (Do not add the egg first or it will scramble in the hot onion mixture.) Then add half of the cheese, salt and dill.
- 4. Stir to combine and pour into prepared muffin tins. Sprinkle the remaining cheese on top of each. Bake muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool slightly before removing them from the tins.
- 5. *Note: These can also be made into a bread when baked in an 8x8 baking pan instead of muffin tins
