Steps:
- Combine everything except chopped peppers and chopped tomatoes. Bring to boil, then simmer for 10 minutes. Add chopped peppers and tomatoes, and boil to desired consistency. To can: Fill sterilized jars, divide liquid equally among jars and screw on lids. Process in boiling water bath for 25 minutes. Can be frozen but takes away some of the flavor.
SWEET AND MILD COOKED TOMATO SALSA
When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

- Combine the tomatoes, onion, green chiles, vinegar, brown sugar, garlic powder, cumin, oregano, coriander, salt, and hot sauce in a Dutch oven or large pot over medium-low heat. Simmer, stirring occasionally, until the salsa reaches your preferred consistency, about 3 hours. Store in refrigerator until using.

- Place the ingredients in a blender in the order given - jalapenos on the bottom, tomatoes next, etc.
- Pulse for one second at at time.
- Take a wooden spoon and mix ingreditents then pulse again until blended, but not too long where it will turn to liquid.
- Serve with tortilla chips and enjoy!

- Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack. Grill, covered, over medium heat 10-15 minutes or until tender, turning occasionally., Meanwhile, cut tomatillos, tomatoes and jalapenos in half; place in a large bowl. MILD SWEET SALSA
I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!

SWEET & HOT PEACH SALSA
We had an overabundance of peaches this year so I tried a couple of different salsa recipes and came up with my own version....posting for safe keeping. My peaches were sweet and very ripe, so depending on your ingredients, taste this as you go and modify it for heat and sweetness. I started out adding 1/4 cup sugar at a time until it was what I liked. Same with jalapenos. Adjust to your personal taste. After figuring out that we liked salsa sweet and hot, we have four batches and worried how we are going to make it this winter!

- Stir constantly to prevent scorching.
- Boil gently for 5 minutes. This is where I add the sugar and taste for preference.

MY HOMEMADE (HOT) SALSA
This salsa is similar to one at the local restaurant we used to frequent when we lived in Georgia. I went home and experimented to try to come up with one that tasted like the restaurant's and this is what I came up with. If you like your salsa even hotter you can adjust the hot seasonings to your taste. I always get lots of compliments when I serve this. Don't let all the ingredients scare you off...it's really easy to make. No accurate time on prep and actually the longer you let it simmer the better it is. I don't know how many exact servings you get but it does make alot. (The flavor will be more intense if you use the fresh herbs but its just as tasty with the dried)
