SWEET-AND-SOUR MEATBALLS
These meatballs can also be made with ground venison instead of the ground beef - they're delicious either way! The recipe is great for parties or other social gatherings because it's simple to make and can easily be doubled.

- In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into 2 dozen 1-1/2-in. balls. Place in a greased 2-qt. baking dish. , For sauce, combine brown sugar and cornstarch in a saucepan. Add pineapple and juice, green onions, vinegar and soy sauce; cook and stir just until thickened and bubbly. Pour over meatballs. , Cover and bake at 350° for 40 minutes. Stir in green pepper. Cover and bake 10 minutes longer or until meat is no longer pink. Serve with rice if desired.

- In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
- In a large skillet over medium heat, gently brown the meatballs and set aside.
- In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

SWEET AND SPICY MEATBALLS

- Preheat the oven to 400 degrees F. Fit a baking sheet with a wire rack and lightly spray with cooking spray.
- Place the ground beef and pork in a large bowl. Add the diced jalapeños, breadcrumbs, granulated garlic, egg, onion, 1 tablespoon pepper jelly and some salt and pepper and gently fold this mixture together.
- Using a small scoop, roll a tablespoon of the meat mixture into a ball. Place on the prepared wire rack and repeat until all of the meat has been shaped into balls. Roast the meatballs until slightly browned, about 25 minutes.
- Meanwhile, make the glaze. Combine the bloody mary mix, pomegranate juice, light brown sugar and remaining pepper jelly (about 3/4 cup) in a small saucepot. Boil over medium heat, stirring occasionally, until the jelly has dissolved and the sauce has reduced slightly, about 5 minutes. Turn off the heat and pour into a large mixing bowl to cool. (The glaze will thicken as it cools.)
- Transfer the hot meatballs to the large bowl with the glaze and gently toss until evenly coated. Transfer to a serving platter and garnish with the pomegranate seeds.

A family favorite sweet and sour meatballs. Great pot luck recipe; keep warm in a crockpot on low. Recipe can be doubled. Cook, cool and freeze half.

- Prepare finely chopped fresh white bread crumbs in food processor or blender and place in a large bowl.
- Prepare finely minced onion in a food processor. Add to crumbs in bowl.
- Add hamburger to crumbs and onion.
- Add salt and pepper and poultry seasoning to taste.
- Mix egg and canned milk together.
- Add egg mixture to meat mixture until it is quite moist.
- Add a little more canned milk if necessary.
- Use a teaspoon of mixture for each meatball (or use a tablespoon for larger meatballs).
- Dampen hands with cold water during rolling, if necessary.
- Place cornstarch in a shallow bowl or pie plate.
- Roll each meatball in cornstarch.
- Place coated meatballs on wax paper.
- Fry meatballs in hot oil until brown and hard looking.
- Drain well on a double layer of paper towelling on a cookie sheet.
- If freezing for later, transfer cooked meatballs, in a single layer, to a cool cookie sheet lined with wax paper.
- Freeze. Bag, label and date.
- To continue with recipe, combine sauce ingredients in a large pot.
- Add additional consommé for less sweetness.
- Heat sauce until hot.
- Add meatballs and simmer slowly, uncovered, stirring gently occasionally, for about 45 minutes or 1 hour or until meatballs are glazed and tender.

- Combine ground beef, breadcrumbs, celery, parsley, egg and 1/2 teaspoon pepper in medium bowl. Add 1 1/2 tablespoons soup mix; blend well. Using moistened hands, form mixture into 1-inch-diameter balls and place on sheet of foil.
- Combine chili sauce, 3/4 cup water, raisins, vinegar, sugar and remaining soup mix in heavy large pot. Bring to simmer over medium-low heat. Drop meatballs into sauce. Cover pot and simmer until meatballs are cooked through and sauce thickens, stirring occasionally, about 30 minutes.

I was given this recipe by a friend many years ago. I was told it originally belonged to a woman who owned a modeling agency in Boston and had reason to entertain many in the fashion world. No matter how elegant a menu was being served, guests counted on these delicious meatballs being on the appetizer table. They always disappeared quickly then, and they disappear quickly now.

- Mash minced garlic with ground beef, eggs, chili sauce, parsley flakes, salt, and 1/4 teaspoon pepper. Shape meatballs into 75 to 85 meatballs.
- Combine vegetable juice, brown sugar, vinegar, garlic cloves and remaining pepper in a large sauce pot. Bring mixture to a boil.
- Drop meatballs into the juice mixture. Reduce heat to low and cook 40 minutes. Add prunes and cook 20 minutes more.
- Just a reminder: this recipe calls for a quart (32-ounces) of vegetable juice; if you buy the 46-ounce can, do not use the whole thing.
- Drain off some, but not all, of the sauce before putting meatballs and prunes into a chafing dish. Serve hot with toothpicks.
- It's best to make these a day ahead, then refrigerate them. When it is time to serve, skim off the fat on top of mixture and reheat.
- To make 115 to 125 meatballs, increase meat mixture ingredients by half, leave the sauce ingredients as they are.
