These prawn cakes are a great appetizer or small finger food to serve with drinks. They can be made in huge batches, all shaped and kept in the freezer. And when you need them (which will be often), just take them out and shallow fry. It is ready to be served. Great for unexpected guest.

600 g green prawns (raw)
1 egg white
2 fresh lime leaves, shredded
3 tablespoons sweet chili sauce
2 cups fresh corn flakes, crushed finely
3 tablespoons rice flour
oil, for shallow frying
extra sweet chili sauce, to serve

Steps:

  • Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
  • With wet hands, shape the mixture into small cakes.
  • Heat enough oil in a frying pan over medium heat to shallow fry.
  • Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
  • Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
  • Serve with the extra sweet chili sauce.

Delicious inclusion in a seafood platter, anti pasto or just as an entree/ starter. When I do this at home I use Chilli Wine jelly for the glazing, it comes from the Disaster Bay Chilli company in Eden NSW and is brilliant. If not from Australia substitute sweet chilli sauce for a similar taste

400 g green prawns, peeled
2 garlic cloves, diced finely
2 cm ginger, diced finely
1/2 bunch coriander leaves, picked and chopped finely
1 tablespoon lemongrass, finely diced
1/2 teaspoon fish sauce
1 egg
1 tablespoon plain flour
salt and pepper
2 tablespoons sweet chili sauce

Steps:

  • Mince prawns in blender or food processor.
  • Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
  • Add egg and stir through.
  • Season to taste.
  • Check consistency and add flour as required to stiffen up mixture.
  • Make into small patties using 1 teaspoon of mixture at a time.
  • Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
  • Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
  • Serve while hot.

I spotted this in the September 2013 issue of Super food Ideas. Was an advert for Trident Sweet Chilli Sauce.

20 prawns, cooked cutlets
400 g Coleslaw, Asian
3 spring onions, finely chopped
220 g corn niblets
40 g pumpkin seeds
100 g rocket
100 g noodles, Crispy and Thick
mint leaf, handful
1 cup sweet chili sauce, Trident
1/2 cup mayonnaise
1 teaspoon sesame oil
1 tablespoon soy sauce
2 teaspoons fish sauce
1 teaspoon ginger, fresh and grated

Steps:

  • De-vein the prawns and set aside.
  • In a large bowl combine the coleslaw, corn niblets, pumpkin seeds, rocket leaves and crispy noodles.
  • Combine the last 6 ingredients in a small bowl to make the dressing. Whisk well.
  • Arrange the salad on a large serving platter, top with prawns and drizzle over the dressing.
  • Garnish with mint leaves and fried spring onions.
  • Serve.

I got the recipe for the patties from an online mum's forum I use. But the dressing and salad I invented myself.

500 g ground chicken
1 small red onion, finely chopped
2 garlic cloves, minced
1/3 cup chopped fresh coriander
1 tablespoon Thai sweet chili sauce
1 egg white, moderately whisked
cooking spray
2 tablespoons Thai sweet chili sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1 -2 dash lemon juice
1 -2 dash fish sauce
1 tablespoon chopped fresh coriander
1/4 cup water
8 cups shredded romaine lettuce (we call it cos lettuce)
1 large carrot, grated
1 small cucumber, sliced

Steps:

  • Mix patty ingredients together, shape into 8 patties and pan fry with a little cooking spray.
  • Mix dressing ingredients together, adding water a little at a time, to taste.
  • Serve patties over salad and/or cooked rice with dressing drizzled over everything.

300 g white fish fillets, cubed
300 g raw prawns
2 spring onions, finely chopped
1/4 cup coriander, chopped
2 cups fresh breadcrumbs
2 eggs, lightly beaten
salt and pepper
vegetable oil
sweet chili sauce, to serve

Steps:

  • Place fish and prawns in processor. Chop to chunky paste. Remove to bowl.
  • Stir in onions, coriander and breadcrumbs.
  • Season.
  • Moisten your hands, and form mixture into small cakes.
  • Heat a little vegetable oil in pan or wok and cook cakes in batches until golden brown on both sides.
  • Drain on paper towels.
  • Serve with sweet chilli sauce for dipping.
