Sweet and Spicy Pulled Pork image

Sweet and spicy pulled pork is a great recipe because it is so versatile. Serve it on rice, with a salad, or in tacos or burritos.

4 lb pork butt (trimmed)
8 ounces tomato sauce
4 ounces diced green chiles
1/4 c brown sugar
1/3 c Coke (NOT DIET)
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp Salt
1 tsp chili powder
1 tsp chipotle chili powder
1 tsp smoked paprika
1/2 tsp black pepper
1 cup red enchilada sauce
1/4 cup brown sugar
4 ounces diced green chiles

Steps:

  • Spray slow cooker with non-stick cooking spray
  • Mix all the spices together in a small bowl, reserve 1 Tbs, and rub the remaining over pork butt
  • Place pork butt rubbed with spices into the slow cooker, put reserved spices aside
  • Add the tomato sauce, chiles, brown sugar, and coke to the slow cooker.
  • Cook on low 6-8 hours until pork is fork tender and easy to shred.
  • Shred pork, remove any excess fat, and liquid.
  • Add pork back into slow cooker with the remaining ingredients and reserved spices.
  • Stir everything together and cook for another 20 minutes. Taste, and adjust flavor to sweeter or spicier as you wish.
  • Serve in burritos, tacos, salads, and more.

2 medium onions, sliced (about 2 cups)
2 tablespoons brown sugar
1 tablespoon smoked paprika
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 boneless pork shoulder roast (4 to 5 pounds)
1/2 cup chicken or vegetable broth
1/4 cup cider vinegar
3 tablespoons reduced-sodium soy sauce
3 tablespoons Worcestershire sauce
2 tablespoons Sriracha chili sauce
1 tablespoon molasses
2 garlic cloves, minced
2 teaspoons Dijon mustard
3 cups coleslaw mix
3 tablespoons lime juice
10 kaiser or onion rolls, split

Steps:

  • Place onions in a 4- or 5-qt. slow cooker. Mix brown sugar, paprika, salt and pepper; rub over roast. Place over onions., In a small bowl, mix broth, vinegar, soy sauce, Worcestershire sauce, chili sauce, molasses, garlic and mustard; pour over roast. Cook, covered, on low 8-10 hours or until meat is tender., Remove roast; cool slightly. Skim fat from cooking juices. In a small bowl, toss coleslaw mix with lime juice. Shred pork with two forks. Return pork to slow cooker; heat through. Serve on rolls with coleslaw.

1 boneless pork shoulder butt roast (3 to 4 pounds)
1 can (15 ounces) tomato sauce
1 bottle (12 ounces) beer or 1-1/2 cups beef broth
1 cup packed brown sugar
1/2 cup honey
1/4 cup tomato paste
3 tablespoons paprika
4 teaspoons garlic powder
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon salt
1 teaspoon cayenne pepper
1 tablespoon hickory liquid smoke, optional
8 Hawaiian sweet hamburger buns, split

Steps:

  • Place roast in a greased 4- or 5-qt. slow cooker. In a large bowl, combine tomato sauce, beer, brown sugar, honey, tomato paste, seasonings and, if desired, liquid smoke; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast. When cool enough to handle, shred meat with two forks. Skim fat from cooking juices. 1 (5 to 7-pound) pork shoulder
1/2 cup light brown sugar
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon salt
1 1/2 teaspoons cayenne pepper
2 onions, coarsely chopped
2 cups low-sodium broth or water
1 cup cola

Steps:

  • Preheat the oven to 350 degrees F. Rinse and dry the pork shoulder.
  • Mix together the brown sugar, garlic, cumin, salt, and cayenne. Rub the mixture generously and evenly over the pork shoulder.
  • In a large roasting pan or Dutch oven, add the chopped onions, broth, and cola. Place the seasoned pork in the Dutch oven and roast for 4 to 6 hours, checking the pork every hour for tenderness and liquid level.
  • When the pork is tender enough that it is falling apart, shred it with a fork. Reserve the juices and pour them over the shredded pork before serving.

1 (4.5 pound) bone-in pork shoulder roast
1 cup root beer
2 ½ tablespoons light brown sugar
2 teaspoons kosher salt
½ teaspoon ground black pepper
1 ½ teaspoons ground paprika
½ teaspoon dry mustard
½ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon celery salt
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
⅓ cup balsamic vinegar
1 ½ cups root beer
1 ½ fluid ounces whiskey
¼ cup brown sugar
1 tablespoon olive oil
¾ cup prepared barbecue sauce
10 hamburger buns, split

Steps:

  • Place the pork shoulder roast into a large plastic bag, pour 1 cup of root beer over the meat, and squeeze out all the air from the bag. Seal the bag closed, and refrigerate 6 hours to overnight.
  • The next day, mix together the light brown sugar, kosher salt, black pepper, paprika, dry mustard, onion powder, garlic salt, celery salt, cinnamon, ginger, and nutmeg in a bowl.
  • Remove the meat from the marinade, and shake off the excess. Rub the meat all over with the spice mixture, wrap in plastic wrap, and refrigerate for 30 minutes to 2 hours.
  • Mix together the balsamic vinegar, 1 1/2 cups of root beer, whiskey, and brown sugar in a bowl, and stir until the sugar dissolves.
  • Heat the olive oil in a skillet over medium-high heat, and sear the meat on all sides until the meat develops a brown crust, about 3 minutes per side. Place the seared meat into a slow cooker. Pour the balsamic vinegar-root beer mixture over the meat, set the slow cooker to High, and cook for 6 to 8 hours.
  • Remove the roast from the slow cooker, and shred with 2 forks. Discard the bones and all but 1 cup of the liquid in the slow cooker. Return the shredded meat to the cooker, mix in the barbecue sauce, and let sit on Low until ready to serve. Serve piled on buns.

  • Melt butter in a large skillet over medium heat; fry pork in batches until browned on all sides, about 10 minutes. Transfer browned pork to a slow cooker.

6 oz Cranberry Juice
6 oz Chicken Stock
2 tablespoons orange juice
1/4 cup Worcestershire sauce
1/4 cup ketchup
1 cup regular barbecue sauce
1 chipotle peppers in adobo, seeded and chopped
8 Flour Tortillas
2 tablespoons olive oil

Steps:

  • Combine pork, cranberry juice, chicken stock, orange juice, Worcestershire sauce, ketchup, barbecue sauce, and chipotle peppers in saucepan and bring to a boil. Reduce heat to medium-low and, cover, and let simmer for 20-30 minutes. Remove pork and shred with two forks. Add back to saucepan and continue to cook over medium heat for another 10-15 minutes (until sauce has thickened a bit and pork has been incorporated into sauce). Brush each tortilla with olive oil and grill 1 minute per side. Remove from grill and top with pork mixture. Optional, top with sour cream. Enjoy!!

  • Combine all brine ingredients in large container or an extra-large Ziploc bag. Mix well to combine and dissolve the salt. Rinse the pork shoulder and carefully add it to the brine. Close the bag and refrigerate the pork and the brine for at least 8 hours or overnight.
  • Remove the pork shoulder from brine solution, pat dry with paper towels, and place in a crock pot or baking pan that is bigger than the shoulder by at least a inch in length and width and at least 3 inches deep.
