Sweet and Spicy Ginger String Beans image

Everyone needs sweet and everyone needs that little bit of spice to wake up the senses.

2 1/2 pound(s) fresh string beans
4 clove(s) garlic - chopped
1 - red onion - sliced
2 inch stick(s) fresh ginger - chopped
2 tablespoon(s) olive oil
- dressing:
1/4 teaspoon(s) red pepper flakes
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1/2 teaspoon(s) garlic powder
1 tablespoon(s) sugar
1 tablespoon(s) vinegar
1 tablespoon(s) olive oil

Steps:

  • Gently simmer the string beans until tender. Heat a large frying pan with olive oil; add the onions, garlic and ginger and sauté until the garlic is fragrant and the onions are slightly golden. Lift the string beans out of the water with a slotted spoon and carefully add them to the sautéed garlic, onions and ginger. Sauté the sting beans for another minute or two. Mix the ingredients for the dressing and add to the string beans.

1 pinch salt
2 1/2 lbs string beans, trimmed (French-style slim haricots verts work especially well)
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil.
  • Fill a large bowl with ice water.
  • Working in two batches, boil beans until just tender but still crisp and bright green.
  • Start testing after 4 minutes or so, being careful not to overcook.
  • When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.).
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat.
  • Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic.
  • Sprinkle with salt, and remove to a serving dish.
  • Repeat with remaining oil, beans, ginger and garlic. Serve.

¾ pound fresh green beans, trimmed
2 tablespoons soy sauce
1 clove garlic, minced
1 teaspoon garlic chili sauce
1 teaspoon honey
2 teaspoons canola oil

Steps:

  • Arrange a steamer basket in a pot over boiling water, and steam the green beans 3 to 4 minutes.
  • In a bowl, mix the soy sauce, garlic, garlic chili sauce, and honey.
  • Heat the canola oil in a skillet over medium heat. Add the green beans, and fry for 3 to 5 minutes. Pour in the soy sauce mixture. Continue cooking and stirring 2 minutes, or until the liquid is nearly evaporated. Serve immediately.

1 tangerine, peeled, segmented, seeds removed
1/4 cup chopped green onions
1/4 cup soy sauce
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon minced fresh gingerroot
1 garlic clove, peeled and halved
1 teaspoon packed brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon white vinegar

Steps:

  • In a 6-qt. stockpot, bring 12 cups water to a boil. Add green beans; cook, uncovered, 2-3 minutes or just until crisp-tender and bright green. Quickly remove and immediately drop into ice water. 1 cup barbecue sauce
