MOM'S SWEET SPAGHETTI SAUCE
My mom has made this sauce ever since before I was born. My whole family and all my friends love it. I love it cause it's sweet and different from all the other spicy and tart sauces.

Steps:
- In a skillet over medium heat, cook onion and bell pepper in oil until transparent. Add beef to onions and peppers; cook until brown. Set aside.
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve drippings and crumble bacon. Combine drippings and crumbled bacon with the beef mixture.
- Add mushrooms, tomato sauce, tomato paste, garlic powder and oregano. Pour in wine while stirring. Stir in sugar, then salt and pepper. Cook until hot.

HERBY PASTA WITH GARLIC AND GREEN OLIVES
Feel free to use whatever tender herb you like for this pasta (a mix of tarragon, chives, and dill works well).

Steps:
- Cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, about 2 minutes less than package directions.
- Meanwhile, heat 1/4 cup oil in a large Dutch oven or other heavy pot over medium. Add garlic and cook, stirring often and pressing down on cloves so they make good contact with the bottom of the pot, until golden and soft, about 5 minutes. Add parsley and cook, stirring occasionally, until parsley releases some of its liquid and slightly darkens in color, about 5 minutes. Toss in olives and red pepper flakes and cook another minute to let the flavors meld.
- Using tongs, transfer pasta to pot with sauce and add butter and 1/2 cup pasta cooking liquid. Cook, tossing and adding more pasta liquid as needed, until each strand of pasta is coated and pasta is al dente, about 4 minutes. Remove pasta from heat and toss in basil, lemon zest, and lemon juice. Taste and season with salt as needed.
- Divide pasta among bowls and drizzle with more oil.
SWEET SPAGHETTI SAUCE
This recipe is from my MIL. My husband loves it and it's the only spaghetti sauce he'll eat. Took me a little getting used cause it's sweet, but now it's a favorite. Makes a REALLY good pizza sauce too!!

Steps:
- Combine all ingredients in a crock pot. Cook on Low for 6 hours, or can be done on High for 3. Stir occasionally. Will turn a darker shade of red, and have a nice sweet flavor and aroma. Can be done on the stove top, but needs more constant attention.
- I will throw it in the morning on low, and leave it until dinner time (my crock pot keeps things warm until you shut it off) and it tastes wonderfully!
- This sauce freezes beautifully, so does the leftover puree. Can be frozen for up to 4-6 months. Can be reheated in the microwave or however you would like.

Alot of recipes call for long simmering times, but often I don't have the time to wait so this is a shorter version, which still taste great. It is on the sweeter side, but it still has an earthy flavor.

Steps:
- Heat oil in a large skillet, add onion and garlic and saute till golden.
- Add to garlic and onions tomato sauce, paste, water, and crushed tomatoes and stir until blended.
- Add green pepper, brown sugar(dark brown sugar home-made from 3 tbls. molasses and 1 cup sugar tastes great in this sauce),pepper, salt, oregano, basil, parsley, and garlic seasoning.
- Stir until seasonings are blended and simmer on med-low heat covered 45 min stirring occasionally.
- Have a taste and add more seasonings if you desire.
