A hearty bread to complement any table. This Soda Bread uses lowfat Yogurt. This is also good adding 2 teaspoons caraway seeds. The recipe comes from Stoneyfeild Farm.

Number Of Ingredients 8

3 cups flour
1 cup whole wheat flour
1/2 cup sugar or 1/2 cup Splenda sugar substitute
2 teaspoons baking soda
1 teaspoon salt
4 tablespoons butter
1 cup dried currant
1 1/2 cups low-fat plain yogurt

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine dry ingredients.
  • Cut in butter until clumps are pea-sized.Stir in currants and yogurt.
  • Turn the dough onto a floured cutting board, knead 1 minute, and shape into a round loaf;
  • Slice an x in the top of a loaf and bake on a greased baking sheet for 45-50 minutes,yields one 8-inch loaf.

Growing up in an Irish household, I have had the pleasure of tasting many a soda bread. It seems like every woman had her own recipe, and I have tasted them all. Some are brown and some are white, some have raisins and caraways, some have only one or neither, some are cakey and some are bready, some are round and some are oblong. This recipe uses sour cream instead of the traditional buttermilk, and is on the "cakey" side. You can bake them in either a 8x4-inch loaf pan or an 8-inch round pan.

1 cup sugar
1 teaspoon baking soda
2 teaspoons baking powder
4 cups all-purpose flour
1/2 teaspoon salt
16 ounces sour cream
3 eggs
1 cup raisins
2 tablespoons caraway seeds (optional)

Steps:

  • Combine sugar, baking soda, baking powder, flour and salt in a large bowl. Stir in eggs and sour cream, then add raisins and caraway seeds. Pour into two greased and lightly floured 8x4-inch loaf pans or 8-inch round pans.
  • Bake at 325 degrees F for approximately 60 minutes, or until a toothpick inserted in the bread comes out clean.

This is a quick and easy Irish soda bread that is wonderful when served with a hearty winter beef stew or with a vegetarian chili or curry. This recipe is a great introduction for those of you who might want to get into baking bread. Soda bread is a type of quick bread in which sodium bicarbonate is used as a leavening agent instead of the traditional yeast. This bread has a long history and became popular for it's very basic ingredients during Irelands less wealthy years. Now it's just practical and delicious!

4 -4 1/2 cups flour
1 tablespoon sugar
1 teaspoon salt
1 teaspoon baking soda
4 tablespoons butter (softened)
1 cup berries (dry)
1/2 cup pumpkin seeds
1 large egg, slightly beaten
1 3/4 cups buttermilk

Steps:

  • Preheat oven to 425 degrees.
  • Whisk together flour, sugar, salt, baking soda in a large mixing bowl.
  • Work the butter into the flour mixture using either your fingers or two knives until the mixture resembles coarse meal. Add the dried fruit.
  • Make a well in the center of the flour mixture. Add the beaten egg and the buttermilk to the well and stir with a wooden spoon until the dough is too stiff to stir.
  • Turn mixture onto a floured surface and gently knead until it forms a rough ball. Do not over-knead. Shape into a round ball.
  • Place in a lightly greased cast iron pan and place the dough into the pan. Using a serrated knife, score the top of the dough with a deep X shape. The scoring of the bread with an X allows the heat to get into the center of the dough and thoroughly cook the bread.
  • Bake 35-40 minutes until the top of the bread is golden brown. Remove from the oven and allow to cool in the pan for 5-10 minutes. Remove from the pan. Irish soda bread is best served immediately or within a day or two. We served ours with a marscapone cheese with smashed fresh blueberries.

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup margarine, softened
1 cup buttermilk
1 egg
¼ cup butter, melted
¼ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

5 cups sifted unbleached all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
1/4 lb butter
2 1/2 cups mixed light golden raisins, and
dark raisin, soaked in water for 15 to 20 minutes and drained
3 tablespoons caraway seeds
2 1/2 cups buttermilk
1 large egg, slightly beaten

Steps:

  • Preheat the oven to 350°F
  • Generously butter 2 (9 by 5-inch) bread pans.
  • Stir together the sifted flour, sugar, baking powder, salt, and baking soda. Cut in the butter and mix very thoroughly with your hands until it gets grainy. Stir in raisins and caraway seeds.
  • Add the buttermilk and egg to the flour mixture. Stir until well moistened. Shape dough into 2 loaves and place in the pans.
  • Bake for 1 hour. Test with a toothpick for doneness. Cool in the pans for 3 to 5 minutes. Transfer to a wire rack to cool.

Steps:

  • Beat eggs.
  • Add all ingredients except buttermilk; mix.
  • Add buttermilk; mix.

  • Bake at 350 degrees for 40-60 minutes, or until a toothpick inserted in the center tests clean.

4 cups flour
1 teaspoon salt
3 tablespoons sugar
1 teaspoon baking soda
3 teaspoons baking powder
1 cup raisins or 1 cup currants
1 tablespoon caraway seed
1/2 pint sour cream (8 oz.)
1/2 pint milk (8 oz.)

Steps:

  • Put raisins in a small saucepan, cover with water, and bring to a boil. Drain water off raisins.
  • Mix sour cream with milk.
  • In large bowl, mix all dry ingredients.
  • Add raisins to dry ingredients.
  • Add sour cream and milk to dry ingredients.
  • Mix until all flour is absorbed (batter will be sticky).
  • Place batter in 8 or 9 inch round spring cake pan.
  • Cut shape of cross in top to allow steam to escape while baking.
  • Bake 1 hour @ 350 degrees.
  • Enjoy.
