SWEDISH FRUIT SOUP
Our children expect me to make this sweet soup for the holidays. It's a delicious dessert served with pound cake and whipped cream...or offer it as a fruit compote for brunch.

Steps:
- In a large saucepan, combine the first five ingredients; let stand for 10 minutes. Bring to a boil over medium heat. Reduce heat; cook and stir for 15 minutes or until thickened and clear. Remove from the heat; discard lemon slices and cloves. Stir in remaining ingredients. Cover and refrigerate for at least 4 hours.

SWEDISH STRAWBERRY MINT SOUP
According to Marcus Samuelsson, this is traditionally made in Sweden in June when the wild strawberries (which heretofore I only associated with Ingmar Bergman) are available. But Marcus says it's delicious with cultivated strawberries, or you can substitute other berries or a combination thereof. Cooking time includes three hours of cooling/chilling time.

Steps:
- Set aside 1/2 pint of the strawberries and thinly slice the rest.
- Place the sliced strawberries in a large saucepan and add the water, orange juice, ginger, lemongrass, mint and sugar, and bring to a boil, stirring occasionally.
- Reduce the heat to low and simmer for five minutes.
- Remove from heat and set aside to steep for an hour.
- After steeping, strain the strawberry mixture through a fine sieve, mashing the strawberries to get the maximum strained liquid.
- Discard the solids.
- Cover and refrigerate the liquid--your strawberry soup--until well chilled--at least two hours.
- Meanwhile, cut the reserved 1/2 pint of strawberries into 1/4" dice, place in a small bowl, cover and refrigerate.
- When ready to serve, place a small mound of diced strawberries in the center of each shallow soup plate or bowl, pour the chilled soup around the berries and serve.
- Note 1: You can, if you wish, serve this with a scoop of vanilla ice cream.
- Note 2: You can combine 1/2 cup of the soup with 1/2 cup of champagne for a lovely summer cocktail or with 1/2 cup of sparkling water for a non-alcoholic version.

CHILLED STRAWBERRY AND MINT SOUP

- Combine all the ingredients, except the mint, in a blender and mix well
- Refrigerate for at least 1 hour to allow the flavors to blend. Before serving, stir in the chopped mint. Pour into soup bowls and serve. This is a great chilled soup or summer drink. Enjoy.
SUCCULENT STRAWBERRY SOUP
Steps:
- Mash half of the strawberries with a potato masher or fork; set aside. , In a blender, combine remaining strawberries, water, sugar, flour and orange zest; process until smooth. Pour into a 2-qt. saucepan. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Add mashed strawberries. Reduce heat; simmer, uncovered, for 10 minutes, stirring constantly. Chill for at least 1 hour. , Stir in cream. Cover and chill overnight. Serve with mint and strawberries if desired.

Midsummer would not be Midsummer without strawberries, and this is a simple Swedish recipe to make, to celebrate Midsummer, wherever you may be! In Scandinavia, the summer solstice is a magical time. The lavender twilight lasts until 11 p.m. and the day breaks again at about 2 a.m.; above the Arctic Circle, the sun doesn't sink below the horizon for weeks. This year, 2007, Midsummer Eve, the beginning of the three day official holiday, falls on June 25. Throughout Scandinavia, families and friends gather to decorate the maypole with birch leaves and wildflowers, make flower crowns for women and girls, dance around the maypole, sing summer songs and feast on pickled herring, new potatoes, and aquavit. In addition, many families have their own special foods that they traditionally serve as the Midsummer meal. These are usually dishes that can be prepared ahead of time and easily served outdoors.

- Clean and hull strawberries. Cut large ones into bite-sized pieces or slice.
- In a saucepan, combine strawberries and sugar. Mix a little of the water into the arrowroot (cornflour/starch) to create a thin paste. Add this mixture into saucepan. Add remaining water, and stir to combine. Bring to a gentle boil, stirring carefully & then take off the heat immediately.
- Pour the strawberries into a serving bowl, sprinkle with a little more sugar, and let them stand.
- Serve warm or cold with cream, milk or sour cream.

SWEDISH 1-2-3 VINEGAR
Another Aquavit recipe, this vinegar/pickling solution is truly delicious. According to Marcus Samuellson, it can be used on anything from berries to herring. I used it to make his pickled beets and loved it. It's easy to make and just needs to to marinate for at least six hours. It will keep in the fridge indefinitely.
