Recipe video above. Juicy meatballs smothered in a beautiful creamy gravy, with a hint of spicing that Swedish Meatballs are known for. Made extra soft and extra tasty by soaking fresh bread in grated onion - tried and tested technique used in my most of my meatball recipes, highly approved by readers! 2 slices white sandwich bread (, crusts removed, chopped into small cubes (Note 1))
1 onion (, small (brown, white or yellow))
300g / 10 oz ground beef (mince)
300g / 10 oz ground pork (mince) (, or sub with more beef (Note 2))
1 egg
1/4 tsp ground nutmeg (, preferably freshly grated)
1/4 tsp All Spice powder ((Note 3))
1/4 tsp black pepper
3/4 tsp salt
1 tbsp oil
40g / 3 tbsp butter (, unsalted)
3 tbsp flour
2 cups beef broth/stock ((salt reduced), or sub with chicken)
1/2 cup heavy / thickened cream ((Note 4))

Steps:

  • Grate onion using a standard box grater (see video).
  • Scrape onion and juices into bowl. Add bread and mix well - onion juice should make bread soggy (if not, add a tiny splash of milk). Set aside to soak for 1 minute.
  • Add remaining Meatball ingredients EXCEPT oil. Mix well.
  • Using a tablespoon measure and measure out a heaped tablespoon (or use ice cream scooper which is what I do), dollop on work surface. Repeat with remaining mixture: 25 - 30 meatballs. Then roll into shape.

Easy Swedish Meatballs with Creamy Sauce image

These Easy Swedish Meatballs are made with ground beef, pork, breadcrumbs and a savory cream sauce. They're served over mashed potatoes for a hearty and flavorful dinner recipe!

1 pound lean ground beef
1 pound ground pork
1 medium yellow onion, finely diced
2 cloves garlic, minced
1/2 cup Panko breadcrumbs
1 large egg, lightly beaten
2 tablespoons whole milk
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon allspice
2 tablespoons olive oil, for frying pan
1/3 cup unsalted butter
1/4 cup all-purpose flour
1 1/2 cups beef broth
3/4 cup heavy cream (or sour cream)
1 tablespoon Worcestershire sauce (or low-sodium soy sauce)
1 teaspoon Dijon mustard
Salt and pepper, to taste
sprinkle of finely chopped fresh parsley
garlic mashed potatoes

Steps:

  • In a large bowl, combine ground beef and pork. Mix in all the other meatball ingredients by hand (except the olive oil) until well combined.
  • Using a cookie scoop or your hands, shape the mixture into 1 1/2-inch balls. Place on a clean platter, cover and refrigerate for about 30 minutes, if possible - this helps them retain their round shape when cooking.
  • In a large non-stick skillet, warm the olive oil over medium-high heat. Working in two batches to avoid overcrowding, add the meatballs and cook, turning continuously until browned on all sides and cooked through, about 5-6 minutes. Repeat with the remaining meatballs. Transfer to a plate and cover with foil.
  • Add the butter to the skillet and once melted, whisk in the flour; stir to combine and cook, stirring constantly for about 1 minute until no lumps remain and flour just begins to brown.
  • Slowly whisk in the beef broth and then the heavy cream. Whisk in the soy sauce and mustard; bring to a simmer, then turn down the heat to a gentle simmer and let the sauce thicken, stirring constantly, 1 to 2 minutes. Season with salt and pepper to taste.
  • Add the meatballs back to the skillet and simmer for another 3 minutes to finish cooking and warm through.
  • Serve over mashed potatoes with a sprinkle of parsley.

A quick but very tasty sauce to add to already prepared frozen meatballs. This recipe makes a generous amount of sauce for a 1/2 package (20 oz) of meatballs. Serve over egg noodles or rice.

1 cup heavy cream
3 tablespoons all-purpose flour
1 tablespoon soy sauce
1 teaspoon ground black pepper

This quick and easy savory sauce turns heat-and-eat meatballs into tonight's main attraction. Serve on a bed of pasta or rice and a side salad, and dinner is ready in no time.

1 cup beef stock
1 cup heavy cream
3 tablespoons all-purpose flour
1 teaspoon soy sauce
1 teaspoon ground black pepper
1/2 teaspoon dried rosemary
ground beef
1/2 lb ground veal
1/2 lb ground pork
2 garlic cloves, minced
2 eggs
1 cup freshly grated romano cheese
1 1/2 tablespoons chopped flat-leaf Italian parsley
salt & fresh ground pepper
2 cups stale Italian bread, crumbled
1 1/2 cups lukewarm water
1 cup olive oil
0.5 (20 ounce) package frozen cooked meatballs, thawed (to save some time)
1 (16 ounce) package egg noodles
1/4 cup butter, cubed
1/4 cup minced fresh parsley

Steps:

  • 1. Whisk together the beef stock, heavy cream, flour, soy sauce, black pepper, and rosemary in a large saucepan until smooth. Cook and stir over low heat until thickened, about 10 minutes, stirring occasionally. Stir in the meatballs, and continue cooking until meatballs are heated through, about 5 more minutes.
  • 2. Meanwhile, cook noodles according to package directions. Drain; toss with butter. Serve with meatball mixture; sprinkle with parsley.
  • *My Meatballs: 1. Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • 2. Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • 3. Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.).
  • My Note: I used 1/2 skim milk and 1/2 cream so it wasn't so heavy and it turned out great! BUT IF LIKE TO HAVE A GRAVY: see be low.
  • For a Gravy Ingredients:
  • 4 tablespoons unsalted butter.
  • 4 tablespoons flour.
  • 2 1/2 cups beef broth.
  • 1 tablespoon Worcestershire.
  • 1/2 cup sour cream.
  • 1/8 teaspoon allspice.
  • salt/cracked black pepper, to taste.
  • Gravy Directions:.
  • 1). In a large skillet, melt butter on medium heat.
  • 2). Whisk in the flour slowly and cook until smooth and slightly darkened.
  • 3). Add the beef broth, allspice, salt, pepper, and Worcestershire sauce and bring to a simmer.
  • 4). Reduce the heat to medium low and stir until gravy thickens.
  • 5). Stir in sour cream, mix well, and serve warm on top of meatballs.
  • UPDATE: I used lean beef so had to melt butter in the pan to make the gravy. The flavor was wonderful. I skipped the noodles and used them as a hors d'oeuvre. I made the meatballs ahead of time and froze them so I had them ready to go when I made the recipe the following week. Used ground sirloin to cut down on fat. Next time I will need to add melted butter with flour to make the roux because it lumped up and I had to use my emulsifier to get the lumps out. Didn't have fat from the meat (can't add cold liquid to flour).
  • Sometime I used at meatloaf mix (beef/pork/veal), and added 2 TBSP of parmesan cheese and 2 tsp crushed garlic for extra flavor. Baked them according to the recipe then put them in a pot of sauce to simmer for a couple hours. That me!

400g lean pork mince
1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock (from a cube is fine)

Steps:

  • In a bowl, mix the mince with the egg, onion, breadcrumbs, dill and seasoning. Form into small meatballs about the size of walnuts - you should get about 20.
  • Heat the olive oil in a large non-stick frying pan and brown the meatballs. You may have to do this in 2 batches. Remove from pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 mins, then slowly whisk in the stock. Keep whisking until it is a thick gravy, then return the meatballs to the pan and heat through. Sprinkle with dill and serve with cranberry jelly, greens and mash.
