SUNNY'S HOT CHICKEN WINGS



Sunny's Hot Chicken Wings image

20 whole chicken wings, washed well and patted dry
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 recipe Sunny's Sauce, recipe follows
Blue Cheese Dipping Sauce, recipe follows, for serving
1 cup hot sauce (recommended: Frank's Red Hot original cayenne pepper sauce)
1 cup (2 sticks) melted butter, at room temperature
1 teaspoon freshly squeezed lemon juice
2 teaspoons dried basil leaves
1 cup crumbled blue cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup buttermilk
1 teaspoon fresh lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
Freshly ground black pepper

Steps:

  • Separate the chicken wings into drummettes and wings, discarding the wing tip joint. Place chicken wings and drummettes into a large, zip-top plastic bag or large brown paper bag. In a small bowl, combine the flour, salt, pepper, and cayenne. Add the seasoned flour to the plastic bag and toss to coat well.
  • Pour the chicken pieces and excess flour onto a baking sheet and spread evenly. Allow the chicken to sit on the floured baking sheet to dry out for about 1 hour.
  • Preheat fryer or a large stockpot filled halfway with vegetable oil to 350 degrees F.
  • Add chicken to hot oil and fry until cooked through and crispy, about 10 to 13 minutes.
  • Place the wings in a large bowl and drizzle with half of Sunny's Sauce. Toss to coat well. Serve hot with the remaining Sunny's Sauce and Blue Cheese Dipping Sauce.
  • Combine all ingredients in a large bowl and set aside until ready to use.
  • Combine all ingredients in a small bowl and stir to combine. Serve immediately or store, covered and refrigerated, for up to 1 week before serving.

CRISPY WINGS WITH HOT HONEY SAUCE



Crispy Wings with Hot Honey Sauce image

2 1/2 pounds chicken wings
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 cup honey
1 tablespoon barbecue sauce
1 tablespoon Louisiana hot sauce
1 tablespoon apple cider vinegar
2 jalapenos, thinly sliced
1 serrano chile, thinly sliced
1/4 cup chopped fresh parsley
Ranch dressing, for serving

Steps:

  • For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
  • Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
  • For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
  • Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
  • For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.

CLASSIC HOT WINGS

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

SUZY'S CRUNCHY HOT WINGS



Suzy's Crunchy Hot Wings image

This is my friend, Suzy's, recipe for wings that stay crunchy, do not get soggy, and have a nice bite to them! Of course you can use any hot sauce on them but we prefer Louisiana Hot Sauce or Krystal's.

36 chicken wings (or drummettes)
2 tablespoons kosher salt
2 cups flour
1 teaspoon black pepper, freshly ground
1 quart canola oil
5 ounces hot sauce
3/4 cup butter, not margarine

Steps:

  • Separate chicken wings at joints and discard tips.
  • Place into a large bowl of cool water.
  • Add the Kosher salt and stir well.
  • Let the wings sit for at least 30 minutes. If sitting outside the fridge, add a few ice cubes to keep the water chilled.
  • Mix flour and black pepper in one end of a shallow pan.
  • Place oil in a heavy iron skillet (or one that heats evenly), and heat to 350 degrees.
  • While oil is heating, prepare an assembly line, taking wing segments out of cold water and dredging in flour mixture.
  • Stack prepared wings at back of dredging pan and wait for oil to come to temperature.
  • Fry wings in hot oil until they are golden brown, turning frequently.
  • Meanwhile, prepare sauce in a small saucepan by mixing the hot sauce with the butter and bring to a slow boil.
  • As wings are taken from the hot oil, dip them into the boiling sauce, then drain on paper towels.
  • Keep platter on low heat in the oven to keep warm in between frying batches, if you can keep people's hands off of them!
  • *The key to crunchy wings is to allow the chicken to absorb the brine, and then to have the sauce boiling when the cooked wings are dipped into it. This keeps the wings from getting greasy.
  • Serve with Bodacious blue cheese dip and fresh, crisp celery sticks, cold beer or iced tea!

2 cups buttermilk
2 tablespoons hot pepper sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
20 chicken wings, separated at joints, tips discarded
3 cups cornflakes cereal, crushed
½ cup all-purpose flour
½ cup cornmeal
salt and black pepper to taste
1 cup honey
1 tablespoon crushed red pepper flakes

Steps:

  • Whisk together the buttermilk, hot pepper sauce, 1 teaspoon salt, 1 teaspoon black pepper, onion powder, and garlic powder in a bowl; pour into a resealable plastic bag. Add the chicken wings, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 12 to 24 hours.
  • Preheat an oven to 400 degrees F (200 degrees C). Grease two baking sheets with nonstick cooking spray.
  • Combine the crushed cornflakes, flour, cornmeal, and salt and pepper to taste in a bowl. Remove the chicken wings from the marinade, and squeeze off excess. Discard the remaining marinade. Press the wings into the cornflake mixture and place onto the prepared baking sheets. Spray the top of the wings with nonstick cooking spray.
  • Bake in the preheated oven until the meat is no longer pink and is pulled easily from the bone, 30 to 40 minutes. While the chicken is cooking, stir together the honey and red pepper flakes in a small saucepan over medium heat until the honey thins. Keep warm until the wings are ready. Once the chicken has cooked, place the wings into a large mixing bowl and drizzle with the honey sauce. Toss until evenly coated. Now you will have a big pile of hot, crunchy, spicy, sticky wings.

I personally like my Hot Wings deep fried and extra crispy. I came up with this recipe after getting tired of the same ol' messy wings with goopy skin. Substitute with your favorite wing sauce, but I always preferred the tangy taste and slight kick of Crystal Hot Sauce. I usually mix Crystal Hot Sauce with a bit of Crystal Extra Hot or Tabasco.

4 lbs chicken wings, portions (Thawed)
1 (6 ounce) bottle Crystal hot sauce or 1 (6 ounce) bottle crystal extra hot sauce
1/2 lb flour
4 tablespoons Old Bay Seasoning (or Cajun Seasoning)
1 tablespoon ground red pepper (optional)
2 gallons ziploc bags
2 large eggs
cooking oil

Steps:

  • Take thawed chicken wing portions and place in ziplock bag.
  • Pour hot sauce on wings for desired flavor and heat.
  • Shake to coat chicken entirely.
  • Marinate for at least 2 hours in the refrigerator.
  • Beat eggs in a medium sized bowl.
  • Pour flour into the spare ziplock bag.
  • Mix Old Bay seasoning thoroughly with flour.
  • Add cayenne pepper (red pepper) for extra heat.
  • Coat wings with beaten egg and then place in the bag with flour.
  • Shake until wings are completely coated with flour.
  • Place wings back in the refrigerator for approximately.
  • 15 minutes so the flour will stick to the chicken.
  • Preheat deep fryer to 370°F, or heat oil in a deep bottomed frying pan.
  • Deep fry wings until a golden brown.

½ teaspoon ground black pepper
1 cup tomato-based hot pepper sauce
2 tablespoons vinegar-based hot pepper sauce
1 teaspoon garlic powder
¼ cup grated Parmesan cheese
3 tablespoons butter, melted

Steps:

  • Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
  • Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
  • While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.
