SUSAN'S HERBED ITALIAN BREAD

Susan's Herbed Italian Bread image

I used a bread machine to mix this, but took it out before baking, and let it rise a second time. I wanted to shape it into long loaves like traditional Italian bread.

Provided by Susan Feliciano

Categories     Savory Breads

Time 4h

Number Of Ingredients 14

11 oz lukewarm water
1 tsp sea salt
1 1/2 Tbsp extra virgin olive oil
2 c king arthur white whole wheat flour
1 1/2 c bread flour
2 Tbsp vital wheat gluten
1/4 c grated romano cheese
1 Tbsp dried parsley
2 tsp sugar
2 tsp dried onion flakes
1/2 tsp dried basil leaves
1/2 tsp crushed dried rosemary
1/2 tsp ground dried garlic
2 tsp active dry yeast (for bread machines)

Steps:

  • 1. Place the ingredients into the bread machine in the order given. Turn on bread machine and process according to manufacturer's directions for "dough only" use. Do not bake in the machine.
  • 2. When dough has completed its first rising, turn it out into a large oiled bowl, punch down and knead 5-10 strokes. Cover and let rise in a warm place for 1 hour.
  • 3. When rising is complete, punch down again and divide into 2 parts. Shape each part into a loaf by rolling each ball into a long log. Make 3-4 diagonal slices across the top of each loaf with a very sharp knife, cutting down about 3/4". Put loaves on a large baking sheet that has been dusted with cornmeal. Place pan in oven, with a pan of boiling water on the bottom shelf. Let rise, uncovered, about 20 minutes.
  • 4. After 20 minutes, leaving pan in the oven, set oven to 425 degrees. Bake for 25-30 minutes, until loaves sound hollow when tapped on bottom. Cool on racks.

Time 1h25m

Yield 10

Number Of Ingredients 14

4 ½ cups all-purpose flour, divided
3 tablespoons white sugar
2 (.25 ounce) packages active dry yeast
2 teaspoons dried basil
1 ½ teaspoons salt
1 teaspoon dried oregano
¾ teaspoon garlic powder
¾ teaspoon dried rosemary
¾ cup milk
½ cup water
4 tablespoons butter
1 egg

1 teaspoon dried basil

Steps:

  • Combine 1 1/2 cups flour, sugar, yeast, basil, salt, oregano, garlic powder, and rosemary in a large bowl.

  • Bake in the preheated oven until golden brown, 20 to 25 minutes. Cool on the baking sheet, or remove to a wire rack.

HERBED ITALIAN LOAF

Herbed Italian Loaf image

I simply cannot keep up with the demand for this bread at home! The children want to set up a soup and bread stand just like the old lemonade stands. This dough is mixed in a bread machine but is baked in the oven.

Provided by TI2GR

Categories     Bread     Yeast Bread Recipes

Time 1h30m

Yield 15

Number Of Ingredients 10

1 ¼ cups warm water (110 degrees F/45 degrees C)
1 tablespoon white sugar
1 teaspoon salt
3 ½ cups high-gluten bread flour
1 tablespoon active dry yeast
1 teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons water
¼ teaspoon salt
1 tablespoon sesame seeds, toasted

Steps:

  • Place warm water, sugar, 1 teaspoon salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Most machines have a 'beep' toward the end of their cycle that allows you to add additional ingredients. Sprinkle in oregano and basil at this time.
  • When machine's Dough cycle has ended, turn the dough out onto a lightly floured surface and shape into an oval or round loaf. Place loaf on a baking sheet that has been well greased with olive oil. Cover with a damp towel and let rise in warm place until doubled, about 1 hour. Meanwhile, preheat oven to 400 degrees.
  • In a small bowl, mix 2 tablespoons water with 1/4 teaspoon salt. Cut three slits on top of bread. Brush entire loaf with salt water mixture and sprinkle with toasted sesame seeds.
  • Bake in preheated oven for 20 to 25 minutes, until golden and bottom of loaf sounds hollow when tapped. This bread will be hard when it comes out of the oven. Let sit 10 minutes to soften before cutting.

BAKED CHICKEN PARMESAN BY SUSAN

Baked Chicken Parmesan by Susan image

I've been making this since the first week I was married. Back then I actually made my own pasta sauce. Now I usually get a jar. But it's good either way.

Provided by Susan Feliciano @frenchtutor

Categories     Chicken

Number Of Ingredients 5

6 large chicken breast halves, skinless and boneless
1 cup(s) finely grated parmesan cheese, divided (the kind in the green can)
1 tablespoon(s) crushed italian herbs
1 large jar of your favorite pasta sauce (or 3 1/2 cups of your own homemade)
1 1/2 cup(s) shredded mozzarella cheese

Steps:

  • Wash and dry the chicken breast halves. Preheat oven to 350°. Grease a shallow baking dish that will just hold the chicken, placed close together. Place 3/4 cup of the parmesan cheese in a shallow plate and stir in the Italian herbs.
  • Press the chicken breast halves one at a time into the parmesan cheese coating, on both sides, getting a fine layer of cheese to stick. Place chicken breasts in the baking dish. Sprinkle any leftover coating on top of chicken breasts.
  • Pour the pasta sauce evenly over the chicken breasts. Then, sprinkle the remaining 1/4 cup of parmesan cheese evenly over top of chicken breasts. Finally, top with the shredded mozzarella.
  • Bake for 35-40 minutes, until juices run clear. Serve with pasta of your choice and a nice green salad. Italian bread is good, too. I recommend my https://www.justapinch.com/recipes/bread/savory-bread/susans-herbed-italian-bread.html?p=1.
