1/2 lb ziti pasta
2 tablespoons olive oil
1 onion, diced
6 minced garlic cloves
1 cup ricotta cheese
1/3 cup grated parmesan cheese
2 cups crushed tomatoes (for this recipe i use cento tomatoes)
1/4 teaspoon salt
bay leaf
1/2 teaspoon fresh black pepper
1/2 cup grated mozzarella cheese
1/4 cup store bought pesto sauce

Steps:

  • preheat oven to 350.
  • oil an 8x8 baking dish.
  • cook pasta in salted water for 7 min, drain, and tinse.
  • heat 1 1/2 tbsp of the oil in a pan over med- low heat.
  • cook onion until it becomes translucent.
  • add garlic and cook it for 30 sec.
  • add tomato, salt, and bay leaf.
  • raise heat to medium.
  • simmer mixture for 10 min or until it gets very thick.
  • remove the bay leaf and stir in 1/4 tsp pepper.
  • in a bowl, combine the pesto, half the parmesan, the ricotta, 1 cup of the mozzarella, and the remaining black pepper.
  • put 1/2 of the pasta in the baking dish.
  • top with 1/3 of the sauce.
  • spread entire cheese mixture evenly over the sauce.
  • cover with the remaining pasta, sauce, and cheese.
  • drizzle 1/2 tbsp olive oil over the top layer of cheese.
  • bake until bubbling (about 30 min).
  • let stand at least 10 minutes before cutting.

1 pound ground beef
2 tablespoons olive oil
1 white onion (, diced)
8 ounces sliced mushrooms
5 cloves minced garlic
6 ounce can tomato paste
28 ounce can crushed tomatoes
15 ounce can tomato sauce
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 pound ziti pasta
8 ounces cream cheese (, softened)
8 ounces ricotta cheese
1 cup freshly grated parmesan cheese

Steps:

  • Pour olive oil into a large, deep skillet, over medium-high heat. Add in ground beef and brown, 5 minutes. Add in diced onions, and mushrooms (optional). Saute for 5 to 7 minutes until onions are soft and translucent, and ground beef is cooked through.
  • Add in garlic and tomato paste and toast for 2 minutes. Pour in crushed tomatoes and tomato sauce. Stir in basil, oregano, salt, and pepper and bring to a simmer. Reduce the heat to low and simmer until pasta is ready.
  • Cook pasta in boiling water, according to package directions. Preheat oven to 350 degrees Fahrenheit.
  • Prepare the cheese topping in a small mixing bowl by combining cream cheese, ricotta, and parmesan. Mix together until smooth.
  • Once the pasta is done, add it into the meat sauce and stir to combine. Pour it into a lightly greased 9x13 pan. Spread cheese mixture on top of the pasta.
  • Bake, uncovered, for 20 minutes until the cheese is melted and bubbly. Serve hot.

1 pound ziti (can sub penne) pasta
Extra virgin olive oil
1 pound bulk Italian sausage or ground beef or pork
1 large onion, chopped
3-4 garlic cloves, chopped
1 tablespoon fresh rosemary (or basil), minced
1 tablespoon Italian seasoning
1/2 teaspoon red pepper flakes
1 large jar of marinara sauce (about 32 ounces) or make your own tomato sauce
Salt and pepper to taste
1/2 pound of mozzarella cheese, grated or shredded
1 heaping cup of ricotta cheese
1 cup grated parmesan or pecorino cheese

Steps:

  • Preheat the oven: Preheat the oven to 350°F.
  • Cook the pasta: Heat a large pot of salted water (for every 2 quarts of water, one tablespoon of salt) to a strong boil. Add the pasta and cook at a rolling boil, uncovered, until the pasta is al dente-edible but still a little firm to the bite. Drain the pasta through a colander. Toss with a little olive oil so the pasta does not stick together while you make the sauce.
  • Brown the meat: While the water is heating in the previous step, start on the sauce. Heat a tablespoon of olive oil in a large sauté pan on medium-high heat. When the oil is shimmering hot, add the bulk sausage or ground meat. Break up any large chunks of sausage as it cooks. Brown well. Don't stir that often or it will be more difficult for the meat to brown. If you are using ground beef or pork instead of sausage, sprinkle with a little salt.

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 ½ cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
  • In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
  • Bake for 30 minutes in the preheated oven, or until cheeses are melted.

1 (16 ounce) package ziti pasta
¾ pound ground Italian sausage
¾ pound ground sirloin
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon kosher salt, divided
¾ teaspoon ground pepper, divided
¼ teaspoon crushed red pepper flakes
2 (24 ounce) jars marinara sauce
½ cup water
1 (15 ounce) container whole milk ricotta cheese
¾ cup grated Parmesan cheese, divided
1 large egg
1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh basil
1 ½ (8 ounce) packages mozzarella cheese, shredded

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Bring a large pot of water to a boil. Add 1 tablespoon kosher salt to the boiling water and stir in pasta. Cook until just about tender to the bite, about 8 minutes (or 1 to 2 minutes less than package instructions).
  • At the same time, heat a large, deep skillet or saucepan over medium-high heat. Add sausage and beef and cook, crumbling with the back of a spoon, until browned, about 5 minutes.
