My family has fond memories of traveling to my parents' house for Christmas dinner. After a 12-hour drive, we'd be welcomed in the door with this special seafood spread. -Barbara Biddle, Harrisburg, Pennsylvania

Yield 2 cups (8 servings).

Number Of Ingredients 8

1 package (8 ounces) cream cheese, softened
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon minced garlic
Paprika
Assorted crackers or vegetables

Steps:

  • In a small bowl, combine the first six ingredients. To serve chilled, cover and refrigerate until serving. Sprinkle with paprika., To serve warm, spoon into a greased 3-cup baking dish. Sprinkle with paprika. Bake, uncovered, at 375° for 15 minutes or until heated through. Serve with crackers or vegetables.

I love this stuff! Can't remember where the original recipe came from, but it's Weight Watchers friendly (1pt per 1/3 cup), and it's great on a sandwich, on top of a green salad or in a quesadilla. Or on a cracker. Or right off the spoon!

8 ounces surimi (krab) or 8 ounces imitation crabmeat, chopped (krab)
1/4 cup reduced-fat mayonnaise or 1/4 cup fat-free mayonnaise
2 stalks celery, minced
1 large carrot, shredded
1/2 small red onion, minced
3 tablespoons chopped green olives
2 tablespoons chopped dill pickles or 2 tablespoons minced jalapenos
1 garlic clove, minced

Steps:

  • Stir everything together in a small bowl and serve.
  • 1 serving = 3 Tbsp = 1 pt.
  • NOTE: I often use garlic powder instead of fresh garlic. And you can leave out the olives, but don't skip adding the dill pickle OR the pickled jalapeno (whichever you prefer), because it really makes the salad.

SWEET RED PEPPER RELISH/SPREAD



Sweet Red Pepper Relish/Spread image

This is a favorite appetizer at every family function. It is especially well received with cocktails! It is similar to pepper jelly, but you do not need pectin. We usually serve it with crackers spread with a little cream cheese and a dollop of this sweet spread on top. This is great to have on hand when you have unexpected company or to give as a hostess gift. (yield is aproximate)

Number Of Ingredients 5

6 large red bell peppers
1 1/2 cups granulated sugar
1 cup apple cider vinegar
2 tablespoons cornstarch
1 teaspoon salt

Steps:

  • Clean and remove seeds and finely chop peppers. (This can be done by hand or with a food processor).
  • Combine all ingredients in a medium saucepan and simmer, uncovered for 45-60 minutes - stirring occasionally until thickened.
  • It can be canned or you can store it in the fridge for several weeks.
