Steps:
- Combine all seasonings and mix well.
- Take out 1 tbsp for later use.
- Combine the seasoning blend with 1/4 cup olive oil, garlic and shrimp.
- Toss to mix well. Set aside.
- Heat the 2 tbsp of olive oil in skillet and saute onions until softened.
- Add peppers and continue to saute until tender.
- Sprinkle the reserved tablespoon of seasoning blend over vegetables and stir to mix well.
- Remove the vegetables from the skillet and set aside. Add shrimp to skillet and cook until shrimp are cooked through.
- This will only take about 3 to 5 minutes. Add the vegetables back into the skillet and toss to combine.
- Serve in warm tortillas with cilantro, juice of lime, and sour cream.
SPICY SHRIMP FAJITAS
These shrimp fajitas are a great weeknight dish. Quick, easy, and delicious. If you prefer something milder, omit the chipotle peppers - but trust me - they really add some kick! I serve these with black or refried beans on the side. Very yummy. Serve with avocado, sour cream, and shredded Cheddar cheese if you like.

- Heat oil in a skillet over medium heat. Saute bell pepper, onion, mushrooms, and garlic in the hot oil until they begin to soften, 5 to 7 minutes. Add shrimp, chipotle peppers, sazon seasoning, and lime juice and continue to saute until shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.
- Serve with warm tortillas.

JERK SHRIMP FAJITAS
This is a recipe I made up for a quick weeknight meal. Over time, it evolved into something I'm proud enough to share with you all. Please do not use a non-stick pan. You could try substituting the shrimp for chicken or fish and the pineapple or mango salsa for your favorite variety. Like most Caribbean recipes I like the combination of hot, sweet, savory, and sour in one dish. Enjoy!

Steps:
- 1. Combine the shrimp, lime juice, garlic, Jerk Seasoning, and 1 T of the olive oil in a small bowl or ziploc bag to marinate.
- 2. Meanwhile, heat the other 1 T olive oil in a large saute pan over medium-high heat.
- 3. Slice the green and red bell peppers and add them to the hot pan.
- 4. Slice the onion and add it to the pan. Stir occasionally.
- 5. As the vegetables are cooking, prepare the condiments as follows:.
- 6. Mix the sour cream, cayenne pepper, and milk together in a small bowl.
- 7. Chop the cilantro.
- 8. Open the jar of salsa and put a spoon in it. :-).
- 9. When the vegetables are nicely browned and a nice fond has developed on the pan, add the shrimp mixture and scrape the pan to deglaze, stirring frequently. Use your beer, wine, or water to add moisture to the pan only if needed. (Otherwise it will get too runny, ick).
- 10. While shrimp is cooking, cover the tortillas with damp paper towels on a plate and microwave for 1 minute.
- 11. When the shrimp are opaque and the liquid is mostly absorbed, remove from heat.
- 12. Scoop fajita filling onto warm tortillas and top with sour cream mixture, salsa, and cilantro. Wrap, burrito style and serve.
SAVORY SHRIMP FAJITAS RECIPE

- In a small bowl, combine the cumin, garlic powder, pepper, salt, chili powder, brown sugar, and oregano. Put the 1/4 cup of olive oil in a medium bowl and stir in all but 1 Tbs. of the spice mix. Add the garlic and shrimp; toss to coat. Heat a 12-inch sauté pan over medium-high heat, and, when hot, add the remaining 2 Tbs. olive oil. Add the sliced onion and sauté until they're softened and fragrant and starting to brown, about 4 minutes. Add the chiles or bell peppers and continue to sauté for 3 minutes. Add the remaining spice mixture and sauté until the onion and chiles are tender but not mushy, another 2 minutes. Transfer to a bowl. Return the skillet to medium high heat and add the shrimp. Cook, stirring frequently, until the shrimp are cooked through, 3 to 4 minutes. Add the sautéed vegetables; toss to combine and reheat. Transfer to a large serving platter. Serve with the warmed flour tortillas, cilantro, lime wedges for squeezing, and sour cream, if using.
QUICK AND EASY SHRIMP FAJITAS
This is a twist on a classic recipe using shrimp instead of beef or chicken. I use regular old taco seasoning to make it easier, but any seasoning combination for fajitas will work. Serve with refried beans and Spanish rice to make an easy meal!

- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red and green bell peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the skillet and set aside.
- Pour the remaining 1/2 tablespoon of oil into the skillet, and add the shrimp. Cook, stirring occasionally, until pink and opaque. - Heat the oil in a large pan over high heat. Add the peppers and onion to the pan and cook, stirring occasionally, until vegetables are tender and charred on teh edges. Season teh vegetables with salt and pepper.
- In a small bow;, mix together the chili powder, cumin, garlic powder, onion powder, onion powder, smoke paprika. Add salt and pepper to taste.
- Add the shrimp to the pan and sprinkle the seasoning blend over the shrimp and vegetables. Stir to combine.
- Cook for 4-5 minutes or until shrimp are pink and opaque.
- Sprinkle the cilantro over the top and serve. Garnish with lime wedges if desired. Serve the flour tortillas and toppings on the side and have everyone assemble their own fajitas.
