This recipe is a variation on one calling for pork chops. I like this delicious main dish because it doesn't dirty a pile of pots and pans.-Jim Cosgrove, Burlington, Ontario

6 boneless skinless chicken breast halves
1/2 cup all-purpose flour
2 large eggs, beaten
3/4 cup dry bread crumbs
1/2 cup grated Parmesan cheese, divided
1 tablespoon canola oil
SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/4 cups whole milk
1 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 can (8 ounces) tomato sauce
1 cup shredded mozzarella cheese

Steps:

  • Pound chicken breasts. Coat with flour; dip into eggs. Combine crumbs and 1/4 cup Parmesan cheese; pat onto both sides of chicken. Brush oil onto a foil-lined 13x9-in. baking pan; place chicken in pan. Bake, uncovered, at 400° for 20 minutes. , Meanwhile, for sauce, melt butter in a saucepan; stir in flour until smooth. Whisk in milk; bring to a boil. Cook and stir for 2 minutes. Add seasonings. Pour over chicken. Drizzle with tomato sauce; sprinkle with mozzarella and remaining Parmesan. Bake 15 minutes longer or until the cheese is lightly browned.

salt and pepper
poultry seasoning
1/2 cup oil
1/2 cup red wine vinegar
2 cloves minced garlic

Steps:

  • Mix together oil, vinegar and garlic in a covered jar and shake well.
  • Arrange chicken in a shallow baking pan and sprinkle with salt, pepper and poultry seasoning.
  • Pour oil and vinegar mixture over chicken and bake at 350° for about an hour or until done.

My oldest is the pickiest eater in the history of the world. Even now, at 15 years old, there are very few meals that he actually likes (although he will force down pretty much whatever I make). Most days he comes home from school and asks, "Are we having chicken tonight?" and I know he means this ridiculously simple baked chicken. Keep in mind that I have 2 boys (14 & 15) and this serves all 4 of us with some leftovers sometimes. I usually serve with green beans and some parmesan-butter noodles.

1 (16 ounce) bottle Italian dressing

Steps:

  • Dump bag of still-frozen chicken in baking dish.
  • Cover with entire bottle of italian dressing.
  • Bake 1 hour at 350.

1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
4 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons olive oil, divided
5 garlic cloves, minced
2 cups chicken broth
1 cup tomato puree
1 teaspoon dried basil
1 teaspoon dried oregano
4 slices mozzarella cheese
4 tomato slices
4 teaspoons grated Parmesan cheese
Hot cooked angel hair pasta
Minced fresh parsley

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper; add chicken, one piece at a time, and shake to coat. In a large skillet over medium heat, brown chicken in 2 tablespoons oil on each side. Transfer to a greased 11x7-in. baking dish. , In the same skillet, saute garlic in remaining oil for 1 minute. Stir in the broth, tomato puree, basil and oregano. Bring to a boil. Pour mixture over chicken., Cover and bake at 400° for 25-30 minutes or until a thermometer reads 170°. , Remove chicken and set aside. Pour sauce into a small bowl and keep warm. Return chicken to the pan; top with mozzarella and tomato. Sprinkle with Parmesan cheese. , Bake, uncovered, for 6-8 minutes or until cheese is melted. Arrange pasta on a large serving platter; top with chicken. Pour sauce over chicken and sprinkle with parsley.

  • Preheat your oven to 400 degrees F. Lightly coat a baking sheet with cooking spray. Cut each chicken breast in half lengthwise so that you have 4 pieces total. Pound each piece to an even 1/2-inch thickness. Set aside.
  • In a wide, shallow bowl (a pie dish works well), combine the Italian breadcrumbs, whole wheat Panko breadcrumbs, Parmesan, garlic powder, and pepper. In a separate bowl, whisk together the egg whites until lightly foamy. Cut the mozzarella into 4 slices, or grate and divide into four equal portions.
  • Arrange your work station in the following order: pounded chicken, egg whites, breadcrumb mixture, baking sheet. Working one at a time, dip each piece of chicken into the egg whites, shaking off any excess, then the breadcrumbs, gently patting the chicken as needed so that the crumbs stick to all sides. Place on the prepared baking sheet. Lightly coat the tops of the chicken with baking spray.
  • Bake until the chicken is cooked through (it should reach an internal temperature of 165 degrees F) and the crumbs are brown, about 15 minutes. Remove from the oven, spoon 2 tablespoons of sauce over each piece of chicken, and top with a slice of mozzarella. Return to the oven and bake until the cheese is melted, about 3-5 additional minutes. Sprinkle with basil and enjoy immediately, topped with extra sauce as desired.
