CRANBERRY SALAD

1 (3-ounce) package cherry or strawberry gelatin
1 cup hot water
1/2 cup cold water
1/2 pound cranberries
3 apples
2 oranges or 1/2 cup crushed pineapple
1/4 cup nuts, chopped
3/4 cup sugar
4 cups salad greens

Steps:

  • Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
  • Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
  • Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
  • Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

This is a favorite recipe that my Grandma makes for us. She freezes it, but my family prefers it just chilled in the refrigerator.

1 (12 ounce) package frozen cranberries
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 (10 ounce) package miniature marshmallows
1 cup sugar
1 pint heavy whipping cream

Steps:

  • Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
  • In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

1 (12 ounce) package fresh cranberries, finely chopped
½ cup white sugar
2 cups chopped apples
1 cup miniature marshmallows
½ cup chopped pecans
½ cup vanilla yogurt
1 cup frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Combine chopped cranberries and sugar in a large, nonreactive bowl. Toss well. Cover and refrigerate for 3 hours.
  • After 3 hours, stir apples, marshmallows, and pecans into cranberries. Combine yogurt and whipped topping; fold into cranberry salad. Serve immediately.

1 cup finely chopped walnuts
1 cup chopped celery
1 cup crushed pineapple, drained
1 (3 ounce) package raspberry flavored Jell-O® mix
2 cups hot water

Steps:

  • Combine the gelatin with hot water (don't let stand). Grind cranberries and orange (including rind) mix with sugar. Stir in nuts, celery and pineapple. Mix with prepared gelatin and chill.

1 can (20 ounces) pineapple tidbits
1 can (11 ounces) mandarin oranges
1 package (3.4 ounces) instant lemon pudding
1 cup quartered strawberries
1 cup sliced ripe bananas

Steps:

  • Drain pineapple and oranges, reserving juices. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

1 3 oz pkg of orange jello
1 c boiling water
1 can(s) small crushed pineapple (save the juice)
2 large grated carrots
DOUBLE BATCH
1 3 oz pkg of orange jello (can use just 2 pkg of orange instead of lemon)
1 3oz pkg of lemon jello
2 c boiling water
4 large grated carrots
2 can(s) small crushed pineapple (save the juice)

Steps:

  • 1. (single batch) Dissolve jello with boiling water,drain off juice into a measuring cup, add cold water into juice until it reaches 1 cup. Add to jello. Wait till jello is cooled, add carrots and pineapple, Stir well and refrigerate til firm.

2 cups boiling water

2 tablespoons lemon juice
1 medium banana, mashed
1 pint sour cream

  • In a bowl, pour boiling water over gelatin, stirring to dissolve. Stir in frozen strawberries until thawed. Set aside.
  • In a small bowl, stir lemon juice into mashed banana. Stir banana mixture into gelatin, and mix in sour cream. Pour into serving bowl, cover, and refrigerate overnight, or until set.

Before trying this divine cranberry salad by Linda Boyd I wouldn't eat anything with my Thanksgiving Dinner except for the old standby canned jellied cranberry sauce. But after one tiny taste of this heavenly recipe her daughter, Angie, had me hooked! This is my favorite times 10!!!! Thanks, Sunshine!

4 ounces cherry gelatin
8 ounces canned crushed pineapple, drained
16 ounces jellied cranberry sauce
11 ounces mandarin oranges, drained
1/3 cup sugar (or a little less)
1 cup pecans, chopped
1/2 cup water

Steps:

  • Combine gelatin and sugar in a mixing bowl.
  • Melt cranberry sauce in a small saucepan over low heat.
  • Boil water and pour over the gelatin and sugar, stirring until dissolved.
  • Add the cranberry sauce, pineapple, mandarin oranges and nuts to gelatin and sugar mixture and stir well.
  • Pour in a shallow casserole dish or mold.
  • Refrigerate until firm.
