LEMON CAKE MIX COOKIES

Steps:

• Preheat the oven to 375 degrees Fahrenheit.
• In a large bowl, stir together cake mix, eggs, oil, and lemon extract until well-combined.
• In a separate bowl, pour powdered sugar.
• Drop a teaspoonful of cookie dough into the powdered sugar. Roll the dough around until completely covered.
• Place cookies on a cookie sheet.
• Bake for 6 to 9 minutes. Expect the tops to be cracked and crinkly, the bottoms to be slightly brown, and the center soft and chewy.
• Let the cookies cool completely on the cookie sheet before serving. Enjoy!

SUNSHINE LEMON BARS

Steps:

• Preheat oven to 350 °F.
• Stir together cake mix, butter and egg.
• Spread mixture evenly into bottom of a 13x9-inch baking pan.
• Blend together sweetened condensed milk and lemon juice.
• Pour mixture over top of cake mix mixture.
• Bake for 23 to 27 minutes.
• Cool completely.
• Cut into 1 1/2x3 1/4-inch bars.

LEMON COOLER "KNOCK-OFF" COOKIES

Steps:

• Preheat oven to 350.
• Mix cake mix, oil, eggs and white chocolate in a large bowl.
• Form into small balls and bake on cookie sheet for about 8-10 minutes.
• Let cool.
• Either sift together powdered sugar and kool-aide mix or place in a food processor.
• After cookies come out of oven let cool a couple of minutes sift powdered sugar over cookies.

MEMAW'S LEMON SUNSHINE CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C).
• Grease and flour a 10-inch fluted tube pan (such as a Bundt®).
• Beat lemon cake mix, lemon pudding mix, white sugar, eggs, 1 cup peach nectar, and vegetable oil in a bowl with electric mixer on medium speed for 2 minutes.
• Pour batter into prepared cake pan.
• Bake in preheated oven until top of cake springs back when lightly pressed and a toothpick inserted into the middle of the cake comes out clean, about 50 minutes.
• Cool cake in the pan for 15 minutes before removing cake to finish cooling on rack.
• Mix confectioners' sugar, 1/4 cup peach nectar, lemon juice, and lemon peel in a bowl to make a smooth frosting.
• Place cake on a serving platter; poke holes in top of the cake with a fork. Pour frosting slowly over the cake, allowing frosting to soak into the holes and drizzle down the sides of the cake.
