NUTTY BROWNIE THINS



Nutty Brownie Thins image

Number Of Ingredients 10

2 tablespoons milled flaxseed
6 tablespoons water, at room temperature
3 ounces 70 percent dark chocolate, broken into pieces
1/3 cup coconut oil, plus more for greasing baking pan
1/3 cup whole hazelnuts, chopped
1/3 cup coconut sugar or brown sugar
1 teaspoon vanilla extract
1/2 cup whole-wheat flour, plus a little more for lining baking pan.
1 teaspoon baking powder
2 ounces whole hazelnuts

Steps:

  • For the brownies: Preheat the oven to 350 degrees F.
  • In a small bowl, mix together the milled flaxseed and water and set aside.
  • On a very low heat, gently melt the chocolate and coconut oil in a medium saucepan. Stir from time to time, then take off heat as soon as all is just melted.
  • Stir in the nuts, sugar, vanilla extract, flour and baking powder and mix well. Finally, stir in the flaxseed and water mixture.
  • Pour into an 8-by-8-by-2-inch lightly greased and floured pan. Bake for 9 minutes until just set, then leave to cool.
  • For the garnish: Meanwhile, dry toast the hazelnuts in a small saute pan for 4 minutes. Transfer to a resealable plastic bag and crush to a fine dust using a rolling pin.
  • Once cool, remove the brownies from the pan. Cut into squares, put onto a serving plate or board and sprinkle over the nut dust.

  • Peel 3 beets (red and yellow) and slice no more than 1/8 inch thick. Toss with flour, then deep-fry in 1 to 2 inches 350 degrees F vegetable oil, stirring occasionally, until the sizzling around the chips slows down, 3 to 5 minutes. Remove with a slotted spoon and drain on a paper towel-lined rack set on a baking sheet; season with salt. Let cool.

SUNNY'S QUICK HORCHATA FONDUE

1/2 to 3/4 cup sweetened vanilla-flavored rice milk, or more as needed
1 cinnamon stick
24 ounces white chocolate, chopped
Pinch kosher salt
Ground cinnamon, for dusting
Dipper suggestions: blackberries, brownies, ridged potato chips, graham crackers, marshmallows, pretzel rods and strawberries

Steps:

  • In a medium saucepan, add the rice milk and cinnamon stick. Heat over medium heat until warm, then turn off the heat and add the chocolate and salt. Let sit for a minute, then stir to melt. If too loose, just cook a bit longer; if not loose enough, add more rice milk. Top with a dusting of cinnamon and serve with the suggested dippers and more!

ROSEMARY CHIPS

1 1/2 pounds fingerling potatoes
Ice water 4 rosemary sprigs
Vegetable oil, for frying
Kosher salt
Special equipment: mandoline

Steps:

  • Using a mandoline or sharp knife, thinly slice the potatoes. Put the potatoes in a large bowl of ice water and refrigerate for 1 hour. Meanwhile, in a deep heavy-bottomed pot, add the rosemary and enough oil to come 1/3 of the way up the sides. Heat the oil to 360 degrees F. Remove and the rosemary from the oil when it turns golden and crispy. Reserve.
  • Strain the potatoes and thoroughly pat dry by laying them out on a flat surface. Add potatoes to oil, in batches, making sure to keep the temperature above 350 degrees F. Fry until golden, about 3 minutes. While potatoes are frying, remove the rosemary leaves from stem and chop. Transfer the chips to a paper towel-lined bowl and sprinkle immediately with the rosemary and salt, to taste. Yield: 4 servings Prep Time: 15 minutes

SUNNY'S EASY COOKIE BUTTER HOT CHOCOLATE

1/2 cup semisweet mini chocolate chips
2 tablespoons cookie butter
2 tablespoons light brown sugar
Pinch of kosher salt
1/2 cup half-and-half
1 1/2 cups almond milk
1/4 cup bourbon
Cinnamon sugar, for topping

Steps:

  • For the base: In a medium saucepot on medium heat, add the chocolate chips, cookie butter, brown sugar and a pinch of salt. Heat, stirring, until the cookie butter and chocolate begin to melt, then slowly whisk in the half-and-half in parts to make a tight slurry. Continue to whisk until the mixture loosens and the half-and-half is completely incorporated.
  • For the finish: Raise the heat to medium high and whisk in the almond milk and bourbon. Cook until the entire pot is warm. Remove and serve in a mug with a dash of cinnamon sugar, or over ice as a chilled drink.
