This tasty side has a great flavor and a nice crunch. Even kids who don't normally care for broccoli will gobble it up.-Jean Artus, Aurora, Colorado

Number Of Ingredients 8

2 garlic cloves, minced
3 tablespoons canola oil
2-1/2 pounds fresh broccoli, cut into florets (about 10 cups)
1/4 cup chicken broth
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons sunflower kernels

Steps:

  • In a large skillet, saute garlic in oil for 1 minute. Add broccoli; cook and stir for 3 minutes. Add the broth, oregano, salt and pepper; cover and cook for 4 minutes or until broccoli is crisp-tender. Sprinkle with sunflower kernels.

2 cups fresh broccoli florets
2 bacon strips, cooked and crumbled
1 green onion, chopped
3 tablespoons raisins
1 tablespoon sunflower kernels
DRESSING:
1/3 cup mayonnaise
4 teaspoons sugar
2 teaspoons white vinegar

Steps:

  • In a bowl, combine the broccoli, bacon, onion, raisins and sunflower kernels. In a small bowl, combine the dressing ingredients; stir until smooth. Pour over broccoli mixture and toss gently. Cover and refrigerate for at least 2 hours before serving, stirring occasionally.

6 cups fresh broccoli florets
3 tablespoons rice vinegar
3 tablespoons reduced sodium soy sauce
3 tablespoons sesame oil
1 tablespoon sugar
1/4 cup unsalted sunflower seeds

Steps:

  • In a large saucepan, bring 8 cups water to a boil.
  • Add broccoli' cover and cook for 3 minutes.
  • Drain and immediately place broccoli in ice water.
  • Drain and pat dry.
  • In a small bowl, whisk the vinegar, soy sauce, oil and sugar.
  • Pour over broccoli; toss to coat evenly.
  • Cover and refrigerate for a least 1 hour, stirring several times.
  • Just before serving, stir in sunflower kernels.
  • 6 servings (3/4 cup each).
  • 121 calories, 10 g fat, 0 mg.
