SUN OVEN LENTIL STEW

Number Of Ingredients 9

1 bunch kale , ribs removed, leaves coarsely chopped
8 cups vegetable broth
1 tablespoon herbes de provence
1 pound brown lentils, picked over and rinsed
2 cups rutabaga, peeled and chopped
3 cups celery root, peeled and chopped
1 cup carrot, chopped
1 large onion, chopped
2 tablespoons olive oil

Steps:

  • Set Global Sun Oven out to preheat. Remove the leveling tray and place a rack or trivet on the floor of the cooking chamber. Heat the oil in a large (6 quart) light weight, dark pot. Add the onion, carrots, celery root, and rutabaga; sauté until beginning to soften, about 5 minutes. Stir in the lentils and Herbes de Provence. Add broth and kale. Cover and transfer pot to the Sun Oven. Cook until the lentils are tender, about 1 hour. Season with salt and pepper to taste.

An easy to make, no fuss soup. Chunky and full of goodness, I find this is a hearty after school snack, or add a crusty bread roll straight from the oven, and its a great starter.My daughter sent me this version, so I am assumng she has finetuned another she may have seen elsewhere.

1 large onion, diced
1 large carrot, diced
2 small zucchini, diced
2 tablespoons curry powder
1 tablespoon crushed garlic
800 g crushed tomatoes
800 ml water
1 tablespoon oil, to fry veg in
1 cup lentils, rinsed

Steps:

  • heat oil.
  • brown onions,
  • add curry and garlic.
  • now add other vegs, and lightly fry till all softened.
  • tip tomatoes in, (being careful not to splash all over yourself).
  • now, the lentils.
  • next, the water.
  • simmer for about an hour,.
  • stirring now and then so the vegs dont stick to the base.

2 tablespoons olive oil, divided
1 medium onion, finely chopped
1 medium carrot, finely chopped
2 large cloves garlic, minced, divided
2 tablespoons curry powder
1 cup green lentils
3 1/2 cups water
1 (15-ounce) can chickpeas, drained and rinsed
1 tablespoon fresh lemon juice
1 tablespoon butter

Steps:

  • Set Global Sun Oven out to preheat. Pour 1 tablespoon oil in a dark, light-weight and heat in GSO. Chop the onion and carrots while the oil is heating. Add onion and carrots to the pot in the GSO, stir to coat; cook vegetables until the onion is translucent, about 5 minutes. Stir half of the minced garlic and cook another 5 minutes or until the vegetables begin to soften. Stir in curry powder and cook for about 1 minute. Add lentils and water, put the lid on the pot and cook until the lentils are tender, about 50 minutes. While the lentils are cooking, pass the chickpeas through a food mill and mix with lemon juice, remaining tablespoon olive oil, and remaining garlic. (This step can also been done in a food processor.) Stir chickpea mixture and butter into soup, adding additional water if needed, cover and cook until heated through, about 10 minutes.

This is my version of a very tasty soup recipe that was in the local newspaper. It's a good idea to make the vegetables all about the same size dice, they cook evenly that way. I used half chicken stock and half water, but I'm sure that vegetable stock would be great too that way the soup could be kosher and or vegetarian!

3 tablespoons vegetable oil
1 large onion, peeled, diced
3 celery ribs, diced
3 carrots, diced
4 garlic cloves, chopped
2 tablespoons curry powder
1/2 teaspoon cayenne pepper
1 1/2 cups green lentils
1 cinnamon stick
28 ounces diced tomatoes with juice
7 cups chicken stock (or a combo) or 7 cups water (or a combo)
1 teaspoon salt (or to taste)
1/2 teaspoon fresh ground pepper (or to taste)
1 cup plain yogurt
1/2 cup parsley or 1/2 cup coriander, chopped

Steps:

  • In a large soup pot heat oil.
  • Add onion, celery, carrots and garlic; stirring often, cook the vegetables, about 10 minutes or until softened.
  • Add curry powder and cayenne pepper: cook, stirring about 2 minutes.
  • Stir rinsed and drained lentils into vegetable mixture.
  • Add cinnamon stick, tomatoes and stock.
  • Bring mixture to boil. Reduce heat and simmer, partially covered, about 1 hour or until lentils are soft.
  • Remove cinnamon stick. Add salt and pepper.
  • Using immersion blender, puree some of the soup, leaving some of it chunky.
  • Garnish each bowl with a dollop of yogurt and chopped parsley.

  • In a large heavy-bottomed pot or Dutch oven, heat the oil over medium heat. Add the onion, carrots, and salt. Cook until the vegetables begin to soften, about 4 minutes.
  • Reduce the heat to low. Add the curry powder, cumin, coriander, turmeric, and cayenne, stirring to coat the vegetables with the spices. Add the garlic and ginger. Stir and cook 30 seconds. If the spices start to stick, drizzle in a bit more oil as needed so that they do not burn.
  • Add the lentils, broth, and crushed tomatoes. Increase the heat to bring to a gentle simmer. Cook uncovered, stirring occasionally, until the lentils are tender but not mushy, about 25 minutes. If the soup is thicker than you would like, splash in a bit of water to reach your desired consistency. (We like our soup fairly thick.)
  • Remove from the heat and stir in the lemon juice. Taste and add additional salt as desired (the amount you need will vary based on your vegetable broth). If you'd like it spicier, add a touch of additional cayenne (a little goes a long way). Serve warm, topped with chopped fresh cilantro.
