Sugar Plum Bread With Homemade Butter image

This was my very first attempt at bread and has become a constant in our house. This is one of those things that just says "Christmas", but good any time of year. Freezes well. Our son became the 'official' butter maker when he was only 4. Great fun and wonderful memories. NOTE: Prep time does not include 3-1/2 hours of rising time.

Number Of Ingredients 14

1 teaspoon sugar
1 cup warm water
1 (8 g) package yeast
1/2 cup sugar
1/2 cup butter, melted
2 teaspoons salt
6 cups flour, divided
4 eggs
1 cup raisins
3/4 cup candied fruit
1/3 cup slivered almonds
1/2 cup icing sugar
1 tablespoon hot water
2 cups whipping cream

Steps:

  • In a large bowl, dissolve 1 tsp sugar in warm water.
  • Sprinkle in yeast and let stand 10 minutes then stir well.
  • Add 1/2 cup sugar, butter, salt and 2 cups flour. Beat for 2 minutes.
  • Add 2 more cups flour and eggs. Beat 3 minutes.
  • Stir in remaining flour. You should have a soft dough. Knead for 8 minutes. Place in a lightly greased bowl. Cover with greased paper and a towel.
  • Let rise for 2 hours in a warm oven.
  • Punch down. Knead in fruit and nuts. Shape into 2 balls.
  • Place in greased 8" cake pans. Cover with a towel and let rise for 1-1/2 hours. Bake for 45 - 50 minutes at 350°.
  • Remove from pans at once. Drizzle with glaze.
  • Glaze: Mix sugar and water together. If too stiff, add more water by drops.
  • Butter: In a glass jar, shake the whipping cream until butter forms. Drain and chill until ready to use.

What a lovely bread to serve at Christmas time--visions of sugar plums. I make a lot of sweet breads at the holidays and my family enjoys them. Baking is one of my hobbies which I cherish dearly. Slivered almonds can be substituted for pine nuts.

1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
½ cup white sugar
½ cup butter, melted
2 teaspoons salt
1 teaspoon lemon zest
6 cups all-purpose flour
4 eggs
½ cup candied mixed fruit
1 cup raisins
¾ cup pine nuts
1 cup confectioners' sugar
1 ½ tablespoons water
½ teaspoon vanilla extract
1 cup cherries

Steps:

  • Dissolve 1 teaspoon sugar in 1 cup warm water in large mixer bowl. Sprinkle in yeast. Let stand 10 minutes, then stir well.
  • Add 1/2 cup sugar, melted butter or margarine, salt, lemon rind, and 2 cups flour. Beat for 2 minutes at medium speed with electric mixer. Add 2 cups more flour and eggs; beat 3 minutes. Stir in almost all remaining flour, using enough flour to make a soft dough.
  • Knead dough on floured board until smooth and elastic, about 8 minutes. Place in lightly greased bowl. Cover with greased waxed paper and a tea towel. Let rise in warm place 75 - 85 degrees F (25 - 30 degrees C)until doubled in volume, about 2 hours.
  • Punch down dough. Turn out onto a lightly floured board, and knead in raisins, candied fruit, and nuts. Shape into two round loaves. Place each in a well greased, 9 inch, round cake pan. Cover with tea towel. Let rise in warm place until doubled, 1 - 1 1/2 hours.
  • Bake at 350 degrees F ( 175 degrees C) for 45 to 55 minutes. Remove from pans immediately. Cool on wire racks.
  • Mix together confectioners sugar, 1 1/2 tablespoons water, and 1/2 teaspoon vanilla. Spoon onto loaves. Decorate with cherries or almonds. Alternatively, dust loaves with confectioners sugar.

This Frisian sugar bread recipe is native to the Dutch province of Friesland. It's softer than a cloud with a stunning marbling of cinnamon-coated pearl sugar clusters throughout. This loaf is easy to make, authentic, and absolutely heavenly served warm straight from the oven. Alternatively, cool fully for a firmer texture.

1 ¼ cups whole milk, lukewarm
2 tablespoons white sugar, divided
1 (.25 ounce) package active dry yeast
1 egg
2 ¾ cups all-purpose flour
1 teaspoon salt
3 tablespoons ginger syrup, divided
1 ½ tablespoons butter, melted
2 teaspoons vegetable oil, divided
¾ cup Belgian pearl sugar
1 tablespoon butter, melted
1 teaspoon ground cinnamon

Steps:

  • Combine milk, 1 tablespoon sugar, and yeast in a small bowl. Let stand until yeast is frothy, about 10 minutes.
  • Whisk egg in a small bowl. Place 1 tablespoon in a separate bowl; reserve for glazing.
  • Sift flour into a large bowl; mix in salt. Add yeast mixture, beaten egg, 2 tablespoons ginger syrup, and 1 1/2 tablespoon melted butter. Knead until a smooth dough forms.
  • Grease a large bowl with 1 teaspoon oil. Place dough in the greased bowl. Cover with a clean dish towel and let rise in a warm place until doubled, about 1 hour.
  • Grease a 2-pound disposable loaf pan with remaining 1 teaspoon oil. Sprinkle remaining 1 tablespoon sugar and ginger syrup over the bottom and sides of the pan.
  • Mix pearl sugar, 1 tablespoon melted butter, and cinnamon together in a bowl.
  • Roll dough into a rectangle on a lightly floured work surface. Sprinkle 1/2 of the pearl sugar mixture on top; knead until evenly incorporated. Roll out again and add remaining pearl sugar mixture; knead until evenly incorporated.
  • Shape dough into a loaf; place seam-side down in the prepared pan. Cover with a damp cloth and let rise until puffy, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Brush top of loaf with reserved beaten egg.
  • Bake in the preheated oven until top is golden brown, about 30 minutes. Cool slightly in the pan before slicing, about 10 minutes.

When our kids read about sugarplums in a holiday tale, they were intrigued...and so was I! In short order, I figured out a no-bake way to make the sweets from dried fruits and nuts.

1 package (15 ounces) raisins
2 cups pitted dried plums (prunes)
1 package (8 ounces) dried mixed fruit
1-1/2 cups chopped pecans
Sugar

Steps:

  • In a food processor, combine the raisins, plums, mixed fruit and pecans. Cover and process until chopped. Transfer to a large bowl., Roll into 1-in. balls, then roll in sugar. Place on waxed paper and let stand at room temperature for 4 hours. Store in an airtight container. Roll in additional sugar before serving if desired.

I've been making this quick bread since I first learned how to cook back when I was in grade school. I don't remember where I got it from, but I wanted to pass it along to all of you. It makes a nice breakfast bread with coffee.

1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
3 tablespoons melted butter

Steps:

  • In a large bowl, mix dry ingredients, set aside.
  • In a smaller bowl, combine liquid ingredients.
  • Pour liquid mixture into dry mixture and stir thoroughly enough to moisten flour.
  • Pour the mixture into a buttered loaf pan and bake at 350F for 35 minutes.
  • *note-can add chopped nuts or fruit into the dough for a different variation.

My Mother-in-Law's Plum Bread image

A cross between a cake and a loaf bread, with sweet-tart plums and a brown sugar topping. Just like my mother-in-law used to make. Use plain, lemon, or orange yogurt.

1 cup pitted, chopped plums
1 tablespoon all-purpose flour
½ cup margarine
1 cup white sugar
½ teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
⅓ cup plain yogurt
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray, or line with parchment paper.
  • Sprinkle chopped plums with 1 tablespoon of flour in a bowl, and toss to coat. Set aside. In a large bowl, beat the margarine, white sugar, and vanilla extract with an electric mixer until light and fluffy. Beat in the eggs. In another bowl, sift together 1 1/2 cup of flour with salt and baking soda. Stir the dry ingredients into the egg mixture, alternating with yogurt until the mixture forms a smooth batter. Lightly stir in the flour-coated plums, and pour the batter into the prepared loaf pan. Sprinkle the top of the batter with brown sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Remove from oven, and let cool in the pan 10 to 15 minutes before removing from pan for slicing.

2 c self rising flour
2 c sugar
1/2 tsp cinnamon
1/2 tsp clove, ground
3 eggs
1 c oil
3 jar(s) plum baby food
1 c chopped walnuts or pecans

Steps:

  • 1. Combine flour, sugar, cinnamon, and cloves in large mixing bowl.
  • 2. Add beaten eggs and oil, stirring until well blended.
  • 3. Add baby food and nuts.
  • 4. Pour into two greased loaf pans. (I spray mine with cooking spray.)
  • 5. Bake at 350 degrees for 45 minutes. Sprinkle a Tbs. of sugar over each loaf about 15 minutes before done.

1-1/4 cups sugar, divided
1 cup chopped almonds
1 cup sweetened shredded coconut
1 cup chopped dates
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • In a large bowl, beat eggs for 1 minute. Gradually add 1 cup sugar; beat 1 minute longer or until thickened. Stir in the almonds, coconut, dates and extracts. Transfer to an ungreased 11x7-in. baking dish., Bake at 350° for 20-25 minutes or until browned and a thermometer reads 160°. Remove from the oven; stir. Let stand for 6-8 minutes or until cool enough to handle. Roll into 1-in. balls; roll in remaining sugar. Cool completely on waxed paper. Store in an airtight container.
