JELL-O™ SUGAR COOKIES

Steps:
- Heat oven to 375°F. Line cookie sheet with cooking parchment paper.
- In large bowl, beat cookie mix, softened butter and egg with spoon or electric mixer on medium speed until well combined. Separate dough into 4 small bowls.
- Add a half packet of each color gelatin per bowl; knead dough to work color in until well combined. Roll each bowl of dough into 5 small balls of dough each.
- Pour remaining gelatin onto 4 small plates; roll each ball of dough in its corresponding color. Place on cookie sheet 2 inches apart.
- Bake about 12 minutes or until lightly golden on edges. Cool completely before serving.

SUGAR COOKIES WITH JELL-O ICING
If you want to have a fruity tasty icing for your holiday cookies this icing will make your cookies taste super delicious! Or jusst roll in frosting and then in cookie sugar or sprinkles.

- 1. Cookies: Roll dough out to 1/4-inch thick. Cut dough with your favorite cookie cutter. Bake at 350^ for 12-14 minutes. Remove to cooling rack to cool completely. --- Icing: Beat cream cheese, Jell-O and powdered sugar until well combined. Spread thickly on cooled cookies. --- Note: Make smaller dishes of icing by using smaller amount of ingredients in individual muffin cups.Use a little red, another,green. another yellow, orange, purple, blue..etc..... 2 oz. cream cheese 1 T. Jell-O 1/4 c. powdered sugar Mix the same as above.
- 2. Note: To color coconut. Place a small amount in a sandwich baggie and add a drop or so of food color and or flavor essence-close bag and smoosh around until coconut is evenly colored. Open bag dry slightly. Use as desired, for decorating cookies and cake and cupcakes.
SUGAR COOKIES WITH ROYAL ICING

- Sift the cake flour, baking powder and salt onto a piece of parchment paper or into a medium bowl; set aside. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low and beat in the flour mixture in 2 batches until just incorporated. Divide between 2 pieces of plastic wrap; shape into disks. Wrap and refrigerate until firm, at least 1 hour. (The dough can be frozen for up to 1 month; thaw overnight in the refrigerator before rolling.)
- Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface, dusting with flour as needed, until about 1/8 inch thick. Cut out shapes with 2-to-4-inch cookie cutters; arrange 2 inches apart on the prepared baking sheets. (If the dough becomes too soft as you work, return to the refrigerator until firm.) Gather the scraps and refrigerate until firm; reroll once to cut out more cookies. Chill the cutouts 30 minutes.
- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Bake, switching the pans halfway through, until the cookies are slightly puffed and just golden, 13 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely before icing.
- Whisk one 1-pound box confectioners' sugar and 2 tablespoons meringue powder in a large bowl. Add 5 tablespoons water and beat with a mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. Cover the bowl with a damp paper towel and plastic wrap until ready to use to prevent the icing from drying out.
SUGAR COOKIE ICING
This icing dries hard and shiny and the colors stay bright. Choose as many different food colorings as you desire.

- In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.

JELLO SUGAR COOKIES
Jello Sugar Cookies are delicious cookies that can be made with any flavor of jello! This sugar cookie recipe is easy to make in any color and the simple buttercream frosting can be flavored to match. You can choose if you want regular shaped cookies or if you prefer cut out sugar cookies, you can make those instead.

- Cream butter and sugar together for about 2 minutes with an electric mixer.
- Add Jello and continue to mix for 1-2 minutes.
- Add eggs and mix well.
- Mix flour, baking powder and salt together in a separate bowl and then add to the Jello mixture. Mix just until thoroughly combined.
- If rolling into ball, scoop the dough out by tablespoons and roll into smooth balls. Place on prepared cookie sheet. Spray the bottom of a measuring cup with cooking spray and then press the measuring cup onto a plate with a thin layer of sugar on it. Press each cookie ball with the bottom of the measuring cup, dipping into the sugar in between each cookie.
- If making cut-out cookies, chill the dough for at least 2 hours. Divide in half and roll out each half to about 1/4" thick. Cut out shapes and place on a prepared cookie sheet.
- Bake cookies at 375° for 8-9 minutes.
- Let cool and then add frosting if desired.

- Preheat oven to 350 degrees.
- For cookies: Cream margarine, sugar, and box of jello.
- Mix in one egg at a time, then add milk and vanilla and beat well.
- Add dry ingredients.
- Drop by tsp on ungreased baking sheet.
- Bake at 350 degrees for 8-10 minutes or until lightly brown.
- This is a very soft cookie. After completely cool, frost with jello icing.
- For icing: Mix all ingredients and stir. Add more powdered sugar if necessary to thicken.
