Categories     Side Dish

Time 28m

Number Of Ingredients 12

2 tbsp oil (or butter)
1 onion (chopped, medium sized (approximately 1 cup))
1 green pepper (seeded jalapeno or a small bell pepper would work (approximately 1/2 cup))
2 tbsp tomato paste
1 teaspoon ground cumin
1 cup coarse bulgur (both coarse and extra coarse bulgur would work for this recipe)
1 fresh tomato (cut into small cubes (approximately 1 cup))
1 can chickpeas (drained and rinsed )
2 cups water (boiling water (or you can use vegetable stock))
1 teaspoon salt
1/4 teaspoon ground black pepper
handful of Italian (or flat leaf parsley, chopped)

Steps:

  • Saute onion and tomato paste: Heat olive oil in a medium saucepan over medium heat. Add in onion and green pepper and saute until translucent, 3-4 minutes. Add in tomato paste and stir constantly for a minute or so.
  • Add in the rest of the ingredients: Add in ground cumin, bulgur, tomatoes, chickpeas, and water (or stock). Season with salt and pepper.
  • Stir & Bring it to a boil: Give it a stir, bring it to a boil, put the lid on, turn down the heat to low. Let it simmer for 10-12 minutes or until most of the liquid is absorbed.
  • Let it rest & serve: Off the heat, allow it to rest for 10 minutes (with the lid on), fluff it with a fork, garnish with parsley, and serve.

Stuffed Peppers with Pilaf image

Provided by Food Network

Categories     main-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 15

6 green or red bell peppers
1/2 cup olive oil
3 onions, finely chopped
1/4 cup pine nuts
Salt
1 cup uncooked white rice
2 tomatoes, seeded and finely chopped
1/4 cup currants
3 tablespoons finely chopped fresh mint
2 teaspoons sugar
1/4 teaspoon freshly grated nutmeg
1 3/4 cups hot water
3 tablespoons fresh lemon juice
Olive oil for drizzling
Lemon wedges for garnish

Steps:

  • Cut around the stems of the peppers (reserving the stem caps), remove the seeds, wash and drain the peppers. Set aside.
  • Heat the oil in a large saute pan, add the onions and pine nuts and saute until onions are soft and golden, 10 to 15 minutes, seasoning with salt to taste. Add the rice, and saute for 5 minutes. Stir in tomatoes and cook a minute longer, then add the currants, mint, sugar and nutmeg. Add the hot water and lemon juice, adjust seasonings, and bring to a boil. Cover and simmer over low heat until all the liquid is absorbed, about 10 minutes. Remove from heat and let rice stand for 5 to 10 minutes to cool.
  • Preheat oven to 350 degrees.
  • Stuff the peppers loosely with the rice mixture, and close them with the reserved caps. Place stuffed peppers side by side in a baking dish and drizzle with olive oil. Add a little water to the baking dish, cover and bake for 30 to 40 minutes, or until peppers are tender and rice is fully cooked, adding more water to dish if needed. Squeeze lemon juice over the peppers and serve warm or room temperature with remaining lemon wedges.

SWEET AND SOUR PEPPERS STUFFED WITH RICE OR BULGUR AND FENNEL

Sweet and Sour Peppers Stuffed With Rice or Bulgur and Fennel image

These sweet and sour peppers are great on their own, but they can also be filled. I like the filled peppers both cold, as sort of a salad, and warm. This is one instance in which fleshy red peppers work best.

Categories     dinner, lunch, main course, side dish

Time 1h

Yield Serves 6

Number Of Ingredients 16

3 cups water
1/3 cup sugar
1/3 cup sherry vinegar
1 onion, sliced
6 garlic cloves, sliced
Salt to taste
1 bay leaf
4 sprigs fresh thyme
4 medium or 3 large red peppers, cut in half, seeds and membranes removed
2 tablespoons extra virgin olive oil
2 medium-size fennel bulbs (about 3/4 pound), finely chopped
2 garlic cloves, minced
2 cups cooked red, brown or black rice, or bulgur
Freshly ground pepper to taste
1/2 cup chopped fresh mint, parsley, dill or chervil, or a mix
1 to 2 ounces feta, crumbled (optional)

Steps:

  • Simmer the peppers. Combine the water, sugar, vinegar, sliced onion, sliced garlic, salt, bay leaf and thyme in a large saucepan and bring to a simmer. Add the peppers, turn the heat to medium and boil gently for 15 minutes, checking and spooning liquid over the peppers from time to time if they are not submerged. Remove from the heat, allow to cool, cover and refrigerate until cold.
  • Heat the olive oil over medium heat in a large skillet and add the fennel and a pinch of salt. Cook, stirring often, until the fennel is tender and fragrant, about 5 minutes. Add the garlic and continue to cook, stirring, for another 30 seconds to a minute, until fragrant, then stir in the rice or bulgur and mix together. Season to taste with salt and pepper and remove from the heat. Stir in the herbs.
  • Set a strainer over a bowl and drain the peppers. Blot them dry with paper towels and arrange on a platter or on plates if serving cold. Arrange in a lightly oiled baking dish if serving hot, and preheat the oven to 350 degrees. Fill with the rice mixture and spoon 2 teaspoons of the marinade over the filling of each serving. Sprinkle on the feta. Serve or chill if serving cold. If serving warm place in the oven for 15 minutes, until the cheese softens.

STUFFED PEPPERS WITH BULGUR-WALNUT PILAF

STUFFED PEPPERS WITH BULGUR-WALNUT PILAF image

Categories     Vegetable

Yield 4 servings

Number Of Ingredients 14

4 medium bell peppers
Pilaf:
3 tbsp olive oil
1 c uncooked bulgur
3/4 c boiling water
1/2 c lemon juice
1/4 c minced chives or scallion
1 tbsp minced fresh dill
3 tbsp minced Italian parsley
1/2 c packed crumbled feta
1/4 tsp salt
1/2 tsp pepper
1 c walnuts, toasted and chopped
3/4 c currants or chopped dried apricots

Steps:

  • Preheat the oven to 375F. Lightly oil a baking tray. Cut stem off pepper, reserve. Scrape out pith and seeds. Pilaf: Place a medium-small skillet over medium heat and wait about 1 min. Pour in 2 tbsp of oil and swirl to coat. Add the uncooked bulgur and sauté over medium heat for about 5 min. Keep stirring during this process to be sure it doesn't burn. Pour in the water, place the lid on the pan and turn off the heat. Let stand 30 min. After 30 min, fluff with a fork as you add the remaining oil and lemon juice. Stir in chives, dill, parsley and feta, and then add salt and pepper to taste. Stir in walnuts and dried fruit and serve warm or at room temperature. Spoon in 1/2 c pilaf per pepper, patiently packing it down as you go. Place stems back on top as a pug for the filling. Brush the outside surface of each pepper with a little additional olive oil, and place them standing upright, if possible, on the prepared tray. Bake for 35 min in the center of the oven. Let sit for at least 5 min; serve hot or warm.
