NO-BAKE STRAWBERRY AND CREAM PIE



No-Bake Strawberry and Cream Pie image

This No-Bake Strawberry & Cream Pie is a family favorite around our house. It's light, it's refreshing, and you don't even have to turn on your oven to make this pie.

1 1/2 cups graham cracker (crumbs)
1/3 cup granulated sugar
2 teaspoons ground cinnamon
1/3 cup butter (melted)
1 package strawberry jello (3 oz.)
2/3 cup boiling water
1/2 cup cold water
1/2 cup ice cubes
1 container Cool Whip topping (8.oz)
4 cups fresh strawberries (sliced)

Steps:

  • Using a food processor, pulse graham crackers until crumbly. Mix in sugar, ground cinnamon and melted butter until crust forms.
  • Press graham cracker crust into a 9-inch pie dish. Place pie crust in refrigerator.
  • In a large bowl, add boiling water and gelatin powder. Stir gelatin powder until completely dissolved.Then, add 1/2 cup cold water and 1/2 cup ice cubes, stir until gelatin is slightly thickened. TIP: Let the gelatin mixture sit for a few minutes to thicken slightly before you add the cool whip otherwise it won't set up.
  • Add cool whip topping to gelatin mixture and whisk together until light and fluffy. Stir in sliced strawberries. Refrigerate for 30 minutes or until mixture has thickened.
  • Add strawberry pie filling to pie crust. Refrigerate for up to 6 hours or until firm. Top with cool whip and a slice strawberry.

1 package (7 oz) almond paste
1 teaspoon cornstarch
1 egg white
1/2 cup granulated sugar
3 tablespoons cornstarch
3 cups sliced fresh strawberries*
1 cup whipping cream
2 tablespoons powdered sugar
1/4 teaspoon vanilla
8 fresh whole strawberries, if desired

Steps:

  • Heat oven to 400°F. Unroll 1 crust on work surface. Into medium bowl or food processor, crumble almond paste. Add 1 teaspoon cornstarch and the egg white. Mix or cover and process until smooth. Spread on crust to within 1 1/4 inches of edge. Unroll second crust; place on top and pat together gently. Place stuffed crust in ungreased 9-inch glass pie plate. Seal edges; flute. Cover edge with foil; fit second pie plate inside first pie plate on top of crust.
  • Bake 10 minutes. Remove top pie plate; gently prick crust surface over filling about 15 times with fork. Bake uncovered about 15 minutes longer or until crust is light golden brown. Cool completely, about 1 hour.
  • Meanwhile, in 2-quart saucepan, mix granulated sugar and 3 tablespoons cornstarch. Stir in strawberries. Heat to boiling over medium heat, stirring constantly. Cook and stir 3 to 5 minutes or until filling thickens. Refrigerate about 30 minutes, stirring once, until cool.
  • Just before serving, spread strawberry filling in crust. In medium bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on high speed until soft peaks form. Spread on top of pie. Garnish with strawberries.

A chocolate cookie crust makes this strawberries-and-cream pie taste a bit like Neapolitan ice cream, but other crumbly cookies or sweet crackers work too. The best strawberries have a heady scent - they should smell like candy - and likely won't need sweetening. But strawberry sweetness varies greatly, so taste one and toss them all with a little sugar as needed.

6 ounces/170 grams chocolate wafer cookies (about 35 cookies)
1 tablespoon granulated sugar
1/4 teaspoon kosher salt (Diamond Crystal)
6 tablespoons/85 grams unsalted butter, melted and cooled
1 1/2 teaspoons unflavored powdered gelatin (from 1 packet)
1 3/4 cups/420 milliliters sour cream
1 teaspoon vanilla bean paste or pure vanilla extract
1/2 cup/120 milliliters heavy cream
1/4 cup/50 grams granulated sugar, plus more if needed
1/4 teaspoon kosher salt (Diamond Crystal)
1 pound/454 grams strawberries, halved, quartered if large

Steps:

  • Make the crust: Heat oven to 350 degrees with a rack in the middle position. Place cookies, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
  • Transfer mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and set, 20 to 25 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
  • Make the filling: Place 3 tablespoons cold water in a small bowl. Sprinkle gelatin over top and let stand until softened, about 5 minutes. In a large bowl, whisk together sour cream and vanilla until smooth. Combine cream, sugar and 1/4 teaspoon salt in a small pot and bring to a simmer over medium heat. Whisk in gelatin mixture until completely dissolved, then whisk cream mixture into sour cream. Pour filling into cooled crust and refrigerate until set, at least 2 hours and up to 2 days. (If making ahead, wrap tightly once set).
  • Toss strawberries with sugar, if needed, and let sit for 10 minutes. Pile strawberries and any accumulated juices on top of pie just before serving.

I had tons of strawberries so I had to at least try this pie. Naturally I used Recipe #371212 for the crust. Next time I make this, I will have to make make two pies since it was so creamy and dreamy. If you like strawberries and cream, this pie is a dream come true!! Time does not include refrigeration. 1 quart strawberry
1/2 cup sugar
3 tablespoons cold water
2 teaspoons unflavored gelatin
3 tablespoons boiling water
1 tablespoon fresh lemon juice
1 cup cold heavy cream

Steps:

  • In a large bowl, crush strawberries and add sugar.
  • Let stand 30 minutes.
  • Pour cold water in a bowl and add the unflavored gelatin to the top.
  • Let stand 5 minutes.
  • Add boiling water to dissolve the gelatin; stir.
  • Stir in the the strawberries and add fresh lemon juice.
  • Chill the gelatin until it is the thickness of unbeaten egg whites.
  • Whip the cream until firm peaks form.
  • Gently fold into strawberry mixture.
  • Pour into pie crust and refrigerate for at least 4 hours.
