The ever-popular combination of strawberries and chocolate shines in these rich, decadent truffles. I often double the recipe to give as gifts. -Pat Habiger, Spearville, Kansas

4 milk chocolate candy bars (7 ounces each), halved
1 cup heavy whipping cream
1/4 cup strawberry spreadable fruit
1-1/2 teaspoons vanilla extract
1-1/4 cups chopped almonds, toasted

Steps:

  • Place chocolate in a food processor; cover and process until chopped. In a small saucepan, bring cream just to a boil. Pour over chocolate; cover and process until smooth. Stir in spreadable fruit and vanilla until combined. Transfer to a small bowl; cool to room temperature, stirring occasionally. Refrigerate until firm, about 3 hours., Shape into 1-in. balls. Roll in almonds.

Strawberry Truffles image

A new spin on the usual chocolate-covered strawberries.

Number Of Ingredients 8

3 medium fresh strawberries, trimmed
2 ⅓ cups (14 oz.) white chocolate chips (from 2 [11-oz.] pkg.)
1 tablespoon heavy whipping cream
1 teaspoon grated lemon zest (from 1 lemon)
¼ teaspoon kosher salt
Red liquid food coloring (optional)
2 tablespoons pink sanding sugar
2 tablespoons white sanding sugar

Steps:

  • Place strawberries in a food processor or blender; process until smooth, stopping to scrape down sides as needed, about 30 seconds. Pour through a fine mesh strainer into a small bowl, pressing pulp with the back of a spoon to release all juices; discard pulp. Measure ¼ cup strawberry puree.
  • Combine white chocolate chips, whipping cream, and ¼ cup strawberry puree in a medium-size heatproof bowl. Microwave on HIGH in 15-second intervals, stirring after each interval, until melted (mixture will be thick), about 45 to 60 seconds total. Stir in lemon zest and salt until well combined. Stir in food coloring, if desired. Cover with plastic wrap, and refrigerate until firm, about 1½ to 2 hours.
  • Stir together pink and white sanding sugars in a shallow dish. Scoop chilled white chocolate mixture into 24 portions using the large side of a melon baller or a small (about 1¼ inches in diameter) cookie scoop. Working with 1 portion at a time and using hands, roll each portion into a ball, and place in sugar mixture, tossing gently to coat fully. Place on a parchment paper-lined baking sheet. Serve immediately, or store in an airtight container in refrigerator for up to 1 week or in freezer for up to 2 months. Let chilled truffles stand at room temperature for 30 minutes before serving. Or (if frozen) thaw truffles in refrigerator overnight.

Tequila Rose is "Strawberry Flavor Cream Liqueur and Tequila". It is pink and creamy and very tasty. You cannot taste the tequila in it when you mix it in a drink. This recipe came from the side of the box the bottle of Tequila Rose came in. I improvised it to suit my taste. You can make it as it is written or add more or less of the ingredients to suit your own taste. The preparation time is approximate. I got the recipe from Tequila Rose website.

2 fluid ounces Tequila Rose strawberry cream liqueur
2 tablespoons chocolate syrup
1 fluid ounce half-and-half
1 cup ice cream

Steps:

  • Put all of the ingredients into a blender(as an option, you can add some crushed ice.)
  • Blend until smooth.
  • Pour into a large glass.
  • Garnish with a fresh strawberry if desired.
  • Sit back, relax and enjoy!

This is a delicious and easy dessert to make, short in ingredients and time. This is also a no-bake dessert, which makes it a summertime favorite! Looks beautiful in a trifle bowl. Great as a birthday or holiday dessert. Depending on how many people you are serving it usually does not last more than 1 day in my house! This can also be easily modified with other fresh fruits, but strawberry is our favorite! Pound cake cake work in place of angel food. Enjoy!

4 cups sliced fresh strawberries
2 tablespoons white sugar
3 cups cold milk
2 (3.4 ounce) packages instant vanilla pudding mix
1 prepared angel food cake
⅔ cup strawberry jam
3 cups frozen whipped topping (such as Cool Whip®), thawed
½ cup blueberries

Steps:

  • Toss strawberries and sugar together in a bowl; refrigerate for 30 minutes.
  • Beat milk and pudding mix together in a bowl with a whisk for about 2 minutes; fold whipped topping into the pudding mixture.
  • Slice angel food cake horizontally into 3 layers. Spread strawberry jam onto cut side of 1 layer putting it together with one of the remaining layers; cut into 2 inch pieces. Spread jam onto the remaining layer and also cut into 2-inch pieces; sandwich pieces together.
  • Layer about half the cake pieces into the bottom of a trifle bowl; top with a layer of about half the strawberries. Spread a layer of the pudding mixture atop the strawberries. Repeat layering. Top with blueberries.
  • Cover bowl with plastic wrap and refrigerate for 4 hours.

1 (5 ounce) package instant vanilla pudding mix
3 cups cold milk
1 (9 inch) angel food cake, cut in cubes
4 bananas, sliced
1 (16 ounce) package frozen strawberries, thawed
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Prepare pudding with milk according to package directions. In a trifle bowl or other glass serving dish, layer half the cake pieces, half the pudding, half the bananas, half the strawberries and half the whipped topping. Repeat layers. Cover and chill in refrigerator 4 hours before serving.

1 (8 ounce) package cream cheese, at room temperature
4 cups powdered sugar
1 teaspoon grated fresh ginger
6 ounces white chocolate, melted and cooled (use dark chocolate, if desired)
20 medium strawberries, cleaned and hulled
1/4 cup crystallized ginger, finely minced
1/2 cup toasted coconut (see note below)
1/2 cup pistachio nut (or other nuts)

Steps:

  • Beat the cream cheese, sugar and grated ginger until smooth. Add the white chocolate and mix well. Chill at least 1 hour or until easy to handle. If necessary, place in freezer, stirring occasionally, for 30 minutes.
  • Using a very small melon baller, scoop out the center of each strawberry halfway down each fruit. Pat berry dry inside and out. Put a small amount crystallized ginger into each strawberry. Shape the cream cheese mixture around each fruit.
  • Coat one end in coconut and the other end in pistachio nuts(or other nuts). Place the truffles in candy cups. Chill until serving time. Enjoy!
  • Note: To toast coconut, heat in a dry skillet over medium heat until it starts to brown. Stir occasionally. Be careful not to burn.
