STRAWBERRIES & CREAM PIE

Steps:
- In a microwave, melt 3/4 cup chocolate chips and 2 teaspoons shortening; stir until smooth. Brush over crust. Refrigerate until firm. , In a small bowl, beat the cream cheese, sugar, sour cream and vanilla until smooth. Fold in whipped topping. Spoon into crust. Refrigerate for 1 hour. , Arrange strawberries over pie. In a microwave, heat jam until melted; brush over the top. Melt remaining chocolate chips and shortening; stir until smooth. Drizzle over pie. Refrigerate until chilled.

- In medium bowl, beat pudding mix, milk and orange peel with wire whisk or electric mixer 1 minute. With rubber spatula, fold in whipped topping. Pour into crust.
- Arrange strawberries on filling. Refrigerate at least 1 hour or until set before serving.

FRESH STRAWBERRY PIE WITH ORANGE LIQUEUR GLAZE
Through trial, error and what I had in the house, I developed this easy glaze to make a yummy fresh strawberry pie -- almost easier than opening a container. Serve with sweetened whipped cream.

Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Bake the pie crust in the preheated oven until puffed and golden-brown, 20 to 25 minutes. Remove to a wire rack and cool completely.
- Puree 1 cup of strawberries in a blender until smooth. Pour pureed strawberries into a saucepan. Stir in the water, sugar, and cornstarch. Bring to a boil over medium heat until thickened, stirring often. Remove from heat and stir in the orange liqueur. Set aside.
- Arrange the remaining 3 cups of strawberries decoratively in the prepared pie crust. Pour the glaze over the berries. Refrigerate until glaze is set, about 4 hours.

This is my husbands favorite pie recipe! His mom made it the first time for me and I've tweaked the recipe some. This is the most perfect summer indulgence! Cook time equals chill time.

Steps:
- In a large bowl, combine the vanilla pudding mix, sour cream, milk, and orange rind.
- Add the whipped topping and beat with a wire whisk for 1 minute or until well blended.
- Spoon half the mixture into the pie crust.
- Press the strawberries, stem-side down, into the mixture, then top with the remaining mixture.
- Freeze the pie for about 1 hour or refrigerate for 3 hours before serving.
- Garnish with additional whipped topping and/or strawberries.

- 1. MAKE SURE YOU HAVE ROOM TEMP CREAM CHEESE PLACE IN LARGE MIXING BOWL POUR IN PKG OF KOOL AID MAKE SURE IT IS MIX REALLY GOOD THEN MIX IN ALL OTHER INGREDIENTS
- 2. ONCE YOU HAVE ALL YOUR INGREDIENTS MIX TOGETHER I USE A HAND MIXTURE TO MAKE SURE CREAM CHEESE IS MIX IN REALLY GOOD. POUR IN GRAHAM CRACKER PIE SHELL AND SMOOTH IN REALLY GOOD. PLACE IN FRIDGE TO SET PIE I USUALLY PLACE MINE IN THE FREEZER FOR ATLEASE 1 HR AND THEN PUT IT IN THE FRIDGE....ALWAYS AND FOREVER YOU WILL ENJOY!
